Recently I discovered my love for blueberries and peanut butter. Really, I love anything with peanut butter, especially chocolate, but the combination of blueberries and peanut butter is taking a new place in my heart.
One of my favorite snacks is a cup of fresh juicy blueberries topped with a spoonful of peanut butter. Sometimes I warm it up so the blueberries burst and the peanut butter melts all over them. Think it sounds weird? Try it. The other thing I like to do is top toast with peanut butter and blueberries. This is so much better than peanut butter and jelly!
Unfortunately, until summer starts, it is hard to find good fresh blueberries that don’t cost a gazillion dollars. To satisfy my cravings, I made a batch of Blueberry Peanut Butter.
This peanut butter is healthy but creamy and delicious with a wonderful blueberry flavor. You could put it on a sandwich but I have to admit I’ve been eating it by the spoonful straight out of the jar.
Making your own peanut butter could not be easier. All you have to do is run the ingredients through a food processor.
Blueberry Peanut Butter
Yield: Makes 1 1/3 cup peanut butter or ~21 tablespoons
- 2 cups honey roasted peanuts
- 2/3 cup dried blueberries (unsweetened)
- 2 tablespoons chia seeds
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- up to 1/2 teaspoon salt
- Combine all ingredients in a food processor for about 5 minutes; scrape the sides every minute or two, until mixture is smooth and creamy
- Taste and add salt if needed; run food processor for another 30 seconds
- Store in a leftover nut butter jar or tupperware container at room temperature for up to a month

Hmm, I just have to see if dried blueberries can be found in my town (forget chia seeds). Looks like a terrific addition to peanut butter though.

I found the dried blueberries at Trader Joe’s. lol peanut butter does make stressful days better!
Ack, the nearest Trader Joe’s is two hours away and I’ve never been!
Perhaps I should just build a dehydrator and make my own :)

I’m not gana lie. I read the title and thought, huh?? But then I put all the ingredients in my mouth, and it worked. I literally put a blueberry in my mouth and peanutbutter. Genius!

Chia seeds? I’ve never cooked with them. Now I’m intrigued. I’ve made plain ol’ peanut butter in the food processor, but never added such yummy ingredients. What a great idea! I love apple slices with peanut butter; this would be even better.

This is a seriously awesome combination! I’ve only made very basic PB at home before but I think it’s time to start experimenting with flavors. The only thing that “might” make this better…is white chocolate added in. :P
I’ve never combined peanut butter and blueberries. I have to admit it sounds a little strange but I’m still willing to give a try sometime! Lately I’ve been combining peanut butter with coconut butter. Love it!
Blueberry peanut butter? How odd. But I like I odd and different, and I’m quite sure I’d love this! I have some dried blueberries but right now they’re mixed in a jar with some dried cherries and cranberries. I’ll have to buy some dried blueberries just so I can make this. I can’t wait! :)
