Keep It Sweet Desserts Weekly Wrap-up 15 PLUS a GIVEAWAY!

This week has been absolutely crazy with trying to prep for vacation.  I had about a million things going on and almost forgot that yesterday (the 9th) was the third birthday for this blog.  Things have changed a LOT in the last three years since I started, but I won’t forget my sister’s words of encouragement in starting a blog when I was looking for some sense of direction.  I say this all the time, but it is true: I never imagined that a baking blog would help me find myself and hone in on my passion for sharing desserts.  Never in my wildest dreams did I think that I’d be running my own business shipping cookies to complete strangers, now valued customers, in every state, even to Hawaii.

Beyond that, I can’t even believe that a year and a half ago I was still working in finance (going insane and having regular emotional breakdowns, mind you).  For more of the story on how I got started read my announcement blog post and the about me page.

I made these muffins a few weeks ago and actually froze a few to bring with us to the shore this past weekend.  My grandfather kept raving about the “best cupcake” he has ever had.  That cupcake was actually this muffin.  The basic recipe is so simple which makes the fact that he loved them even better.

In fact, the recipe came from Lauren’s e-cookbook, Everyday Ingredients Extraordinary Meals.  Her book is full of beautiful photos and delicious recipes.  Many of them are easy meals and simple desserts.  It is family-friendly and reflective of the personality you come to love from her blog.  Recipes like fail-proof pizza dough, birthday cupcakes, and and My Cinnabon Cinnamon Roll (ahem, DYING to try that), give it a level of comfort and hominess.  Other notable recipes include Lemon Cheesecake Crème Brule Bars and Chocolate Cream Pie.  There are family friendly meals as well, but you know me and my sweet tooth.  And good news for all of you!  Lauren is offering to give a copy of her e-book to one of you!  (See end of post for giveaway details).

Perfect Chocolate Chip Muffins and a Giveaway
 
These Chocolate Chip Muffins are easy to whip up and make the perfect sweet treat for weekend breakfasts or holiday brunch.
Author:
Recipe type: Breakfast, Brunch
Makes: 12 muffins
Ingredients
  • ½ cup skim milk
  • ¼ cup canola oil
  • ¼ cup fat free plain greek yogurt
  • 1 egg at room temperature
  • 1 teaspoon vanilla extract
  • 9¼ ounces (2 cups) all-purpose flour
  • 5⅝ ounces (3/4 cup) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ½ cup mini chocolate chips
Instructions
  1. Pre-heat oven to 350 degrees; line a regular sized muffin pan with paper liners or spray with non-stick cooking spray
  2. In a medium bowl, whisk together wet ingredients (milk through vanilla) and set aside
  3. In a large bowl, whisk dry ingredients (flour through baking soda); form a well in center of dry ingredients and pour wet ingredients into the well
  4. Stir just until combined
  5. Fold in chocolate chips
  6. Distribute batter evenly in muffin pan and bake 15-20 minutes or until a toothpick comes out clean from center
  7. Allow to cool for five minutes before carefully removing muffins from pan; best served immediately
  8. Leftovers can be stored in an air-tight container at room temperature for a couple of days or in freezer for a few weeks

This year my blog’s birthday feels like something even more special.  Although my blog posts have been less frequent than I would like, this part of the website is very special to me.  Blogging about my passion is how I figured out my dream…  I still can’t believe that I’m running an online bakery and dessert catering company.  Even more than that, I can barely believe that it has already exceeded my expectations and working like crazy for something I love is one of the most rewarding experiences of my life.  I have a feeling that big things are coming in the next year and am so happy that I get to share that with you!

Summer Fun with Nestle Drumsticks and a Giveaway!

So clearly I like ice cream.  And while I love coming up with different types of ice cream cakes, pies, etc., sometimes it is nice to have someone else do the work for you.  Because on an ideal summer day, I’m not standing by a hot oven.  I’m going for a morning walk, grabbing an iced coffee, sitting by the pool or the beach with a good book and ending the day with a barbeque and ice cream or frozen yogurt.

And while in our area we haven’t had too many beach days yet, we have had a few warm sunny days here there that were perfect for long walks and dinner made on the grill.  Sometimes there is nothing better than a night full of friends, good (low maintenance) food and a big bottle of wine.

As soon as I found out I was being given an opportunity to host a dinner party to try out Nestle’s new Drumstick Pretzel Dipped Cones, we invited our friends Matt and Deena over.  My Matt loves to grill so he made the call on making steak and lobster tails (but really, who am I to object to that?) so that left me on call for some veggies and dessert.  I made a big salad, steamed some corn and called it a day.  The food prep took far less time than hiding all of my baking tools and ingredients.

We might have reached a minor hiccup in the plans when we temporarily locked ourselves out of the apartment with nothing but the proteins to grill, but minor details.

Dinner was delicious!  Matt spent a few minutes seasoning the food ahead of time, but was at the grill for less than 20 minutes.  Good food with more time for friends and relaxing = win.

Dessert obviously revolved around the Nestle ice cream cones.  My friend, Matt, was very excited about this.

But I am a baker/food blogger after all so who am I to just serve pre-made ice cream cones for dessert? Instead I threw together a make-your-own ice cream bar with the cones as one of the options. In addition, we had brownies, hot fudge (recipe below), peanut butter sauce (recipe below), oreo crumbs and jimmies.  The ice cream sundaes were the perfect end to a perfect day, thank you Nestle for this opportunity!

Homemade Peanut Butter Sauce - perfect for an ice cream sundae!

Homemade Peanut Butter Sauce
Serves 4

Ingredients:
2/3 cup natural salted creamy peanut butter
1/4 cup powdered sugar
3 tablespoons almond milk
1 teaspoon vanilla extract

Directions:
In a small saucepan, whisk ingredients together over low heat; continue to whisk until smooth and creamy
Best served immediately

Homemade Hot Fudge
Serves 6-8

Ingredients:
4 tablespoons unsalted butter
3 ounces semi-sweet chocolate, roughly chopped
1/3 cup unsweetened cocoa powder
1/2 cup granulated sugar
1/2 cup almond milk
1 teaspoon vanilla extract

Directions:
In a medium saucepan, whisk ingredients together over low heat; continue to whisk until smooth and creamy
Best served immediately

Just because…

I am so up to my neck in butter and chocolate I can barely see straight

I ate too much leftover Mother’s Day cake today, can you say “too full for dinner?”

I’m starting to get nervous about meeting cast members from this show when I bring desserts my friend ordered for some birthdays (can someone please come dress me tomorrow morning?)

I’m incredibly behind on blog posts even though I actually do have recipes that need sharing

I’m so thankful for the help of my sister and husband last night because without them I wouldn’t have gotten a record number of Keep It Sweet Dessert orders out this morning

I so badly want to hire an assistant but I don’t have time to figure out if I can afford one

I have 5 dozen more cookies to make tonight and I just can’t stand up yet

You are patient enough to get through my crazy babbling lately

Maybe it is because I got to eat a variety of delicious brownies and blondies that were delivered to my apartment.

And maybe it’s because the baked goods came after being tortured in a bathing suit during Puerto Rico withdrawal.

Or maybe it’s because nothing makes you feel better on a cold day of rain and snow in April than a box full of chocolate desserts.

When Lorin at Hot Blondies Bakery contacted me, I was happy to accept a sample to review.  I was anxious that the baked goods wouldn’t be as tasty as they claim  since I am often let down by dry blondies or too-sweet brownies.  Fortunately, this was not the case.

So, our mutually stunning golden locks combined with Laura’s mad marketing skills and Lorin’s blondie baking prowess, led us to bring you Hot Blondies Bakery.”

I received a box of regular-sized blondies and brunettes (brownies) as well as this box of adorable “babes.”  They are the perfect size for tasting if you want to eat a variety.  At least that is how I justified eating half a box several of them as I sampled these babes “for the blog.”

Matt and I both tasted each flavor.  He even tried the peanut butter blondie!  I have to admit, although I enjoyed almost every kind, the classics were my favorite of each.

The Classic Blondie was soft, chewy and moist.  It tasted like the perfect chocolate chip cookie in bar form.  I enjoyed the other flavors also, just not quite as much.

Oatmeal Raisin had a really nice cinnamon flavor.  It wasn’t dry at all but wasn’t as soft and moist as the Classic.  I think the oats gave it a nice crisp edge.

Obviously I enjoyed the Peanut Butter Chocolate Chunk.  The peanut butter flavor was just right- nice and flavorful but not too strong.  There were a few peanut pieces in there and chocolate chunks (though, I would have liked a few more of those).

Butterscotch White Chocolate Chip was Matt’s second favorite blondie.  The texture was perfect like the classic but I am bias against butterscotch and white chocolate.  However, if you like those flavors you would love this.

When we moved onto the Brunettes, Matt had to get up for a glass of milk (in a good way).

Oh my, the Classic Brunette was unbelievable.  It was fudgey but light, almost like a souffle, with a wonderful rich chocolate flavor.  It blew every other blondie and brownie out of the water with its deliciousness.  That brownie could bring world peace.

The S’mores Brownie was good, but after tasting the Classic, it was hard to eat anything else.  I did enjoy the texture from the graham cracker crust and the bit of saltiness that came with it, but as Matt put it, “once you have the Classic, why would you eat anything else?”

I have a confession.  I don’t love Nutella.  I don’t not like it, I just wouldn’t cheat on peanut butter with it.  However, for the Nutella addicts out there, you would love the Nutella Hazelnut Brunette.  It has a strong Nutella flavor with a nice crunch from the hazelnuts.  And hey, if this flavor means others will swoon over it and more Classics for me, I won’t complain.

The last brownie we tasted was the Espresso White Chocolate Chip.  Maybe it’s because we were 7 flavors in (who am I kidding, I have no limit), but this was my least favorite of the bunch.  While it had a nice texture like a corner piece, the flavor wasn’t distinct enough for me.  I actually only knew it was espresso by process of elimination.

Hot Blondies Bakery Blondie and Brownie Fun Tips

Think outside the pan. We often hear the saying “Baking is a science, cooking is an art.” But without a multitude of scientific errors, many important discoveries would have never been made. Therefore, Rule #1 at Hot Blondies Bakery is to never be chained down by a recipe. We like to play with ingredient amounts and switch out add ins to try new flavors. It takes time, patience, trial and error, but you can come up with some really fabulous results.

We are the first to admit, blondies and brownie making is a simple (yet delicious) form of baking. Which is why it can be the most fun. A good blondie recipe can be the basis for a whole variety of tasty and unique bars and desserts. Here are some tips, from the Hot Blondies, on how to take your blondie and brownie baking to the next level.

Hot Blondies 10

Fruity fun. Swap out the chocolate chips in your fave blondie recipe with some dried fruit and some fun flavoring. Try orange zest and dried cranberries or almond extract and dried figs. Top a warm blondie with vanilla ice cream and sauteed bananas for a yummy dessert.

I Want Candy. Get inspired by your favorite candy choices. Love Reece’s Peanut Butter Cups? Chop some up and sprinkle them on top of your unbaked brownies. Or stick a mini cup on each one when they are still warm from the oven. Love Almond Joy? Throw some sweetened shredded coconut and chopped almonds into your batter.

Kid Around. Reminisce about what kinds of flavor combos you loved as a kid and use them as your baking muse. Add some peanut butter into the blondie mix and top with strawberry jelly and chopped peanuts for a PB&J twist. Spread marshmallow fluff onto cooled brownies and sprinkle with Graham crackers to evoke a campfire feel. (Or try our S’mores Brunettes!)

Go Ethnic. Think about what kinds of global cuisines excite your palate and spice up your bars with those seasonings. Add a touch of cayenne and cinnamon to your brownies for a Mexican feel. Try matcha powder or ginger chews for an Asian flare. Jasmine or lavender add a subtle exotic vibe.

Get Festive. Decorating tricks are not just for kids. Holidays and birthdays are the perfect excuse to get your sprinkle on. We love any excuse for food coloring in blondies. Red, white and blue for July 4th. Yellow and pink for Easter. Green for St. Patty’s. The options are endless.

Sundae Fun Day. Ice cream toppings make great blondie and brownie additions. Try spreading some wet nuts on top or mix them in pre-baking. Magic Shell makes a tasty and travel friendly topping. Caramel and butterscotch sauce make a great quick and easy swirl in. Chopped maraschino cherries with some cherry liqueur create a decadent grown up brownie.

Updating Tradition and a Winner

So every year for Yom Kippur, my family breaks the fast with the same general meal:  bagels and fish, kugel, blintz bake lots of desserts… This is one of my favorite meals (which might be somewhat related to the level of hunger I am feeling when we eat), so I am always hesitant to make a change.

For as long as I can remember, my mom has made this blintz bake:

Even when I went to college I made the same recipe for my friends.  I have some great memories of picking at the leftovers and finishing it off with my roommate after everyone had left for the night:-)

The only element that ever changes is type of blintzes we use.  We have used cherry, blueberry, cheese, and combinations of them as well.  I could never decide which was my favorite.  This year, however, my dad came up with a delicious idea that solved that issue!

Blueberries!  [Side note- These were huge blueberries that my mom had frozen this summer.  I highly recommend doing this if you have excess freezer space.] Rather than use blueberry blintzes, he suggested adding blueberries to the custard-like topping.  As a result, we could keep it simple with cheese blintzes.

This recipe, which I adapted from The Har Zion Cookbook, is very easy to follow.  I made several changes to make it a little healthier and increased the recipe to feed more people.  To make our modified Blueberry Blintz Bake, all you will need to do is:

Find a large baking dish (11×13 or bigger)

Line it with blintzes straight out of the freezerblintzes in dish

Pour on your melted butter

Make your filling

Pour in a ton of these

Pour it over your blintzes

Sprinkle on some cinnamon

Serve warm

Blueberry Blintz Bake

Ingredients:

18 frozen cheese blintzes*

6 ounces of melted butter, unsalted (3/4 stick)

1 pint sour cream, reduced fat

3/4 cup granulated sugar

1 cup egg beaters

1 teaspoon vanilla

2-3 cups fresh or frozen blueberries

Cinnamon for topping

*fresh would work as well, just reduce cooking time

Directions:

Preheat oven to 375 degrees

Line large baking dish (13×9 or bigger) with blintzes

Pour melted butter over blintzes

Combine sour cream, sugar, egg beaters and vanilla by whisking or using whisk attachment to mixer

Stir in blueberries

Pour filling over blintzes

Sprinkle cinnamon over blintz bake

Bake for 60-75 minutes or until center has limited movement (it should be similar to a cheesecake where the edges begin to show cracks and the center is slightly firm)

Serve warm

In other events, my amazing husband has been in the kitchen for the last hour baking for me!  I’m a little under the weather today and he stepped in to make something I just didn’t have the energy for.   Check in later this week for his special guest post!
