Chewy No-Bake “Thin Mint” Bars

Chewy No-Bake “Thin Mint” Bars

Sometimes I have a million recipe ideas going through my head at a time and can’t get into the kitchen fast enough.

And sometimes I have baker’s block.

Chewy No-Bake “Thin Mint” Bars

Every cookie or brownie variation will feel overdone and the creative section of my brain goes into freeze mode.

Sometimes I really get stuck and just need a day or two out of the kitchen, and sometimes all I need is a visit down unused ingredients lane.

Chewy No-Bake “Thin Mint” Bars

Half a bag of marshmallows that are living on the edge of stale? Check.  An open package of Oreos that I need to bake with before Matt eats the last sleeve? Got that.   A half-used package of chocolate mint candies that was hidden in the back of the drawer for months? Don’t mind if I do.  Oh yeah, and butter.  I always have butter.

Chewy No-Bake “Thin Mint” Bars

I’m so glad I took advantage of what I had on hand because these bars came together quickly, with minimal dish washing and no oven time.  Sometimes the best baking is no baking at all!  Especially when the end result tastes like a Thin Mint.

Take that Girl Scouts.

You could probably make it work without the butter;-) Let me know if you get to try them!

I know what you mean about baker’s block! This looks like an excellent way to cure it though :)

  17. Kim (Feed Me, Seymour) February 24, 2012 at 8:13 am #

I currently have two cases of Thin Mints on my kitchen table, staring me in the face. They are to be delivered to loyal Girl Scout customers and I can’t have any… so I’m definitely going to make these to quell that minty craving!

    • KeepItSweet February 29, 2012 at 2:11 pm #

      Do it!

  18. Joanne February 24, 2012 at 8:32 am #

baker’s block…oh yeah, I definitely get that sometimes. It’s like I want to bake everything and yet nothing sounds good. It’s really weird.

I’m always up for chocolate and mint, though! Always.

We just don’t get girl scout cookies here in NYC and I haven’t had my thin mint fix since I was a girl scout…MANY years ago! Best to make up for lost time with these babies.

  19. Caroline @ chocolate & carrots February 24, 2012 at 8:54 am #

These look like they beat Girl Scout cookies. Hands. Down. Yum!!!

  20. Sandra February 24, 2012 at 9:45 am #

These rock Lauren, Girl Scouts everywhere are going to revolt!

  21. Elina (Healthy and Sane) February 24, 2012 at 11:09 am #

They look fabulous! I never look into my pantry for baking inspiration. I think it’s pretty fabulous you pulled it together from stuff on hand (especially dying stuff on hand) :)

  22. Kim - Liv Life February 24, 2012 at 1:40 pm #

Oh, Lauren… after 6 years as a Girl Scout Leader I resisted the Thin Mints this year… Not sure I can resist these beauties though!!!

  23. DessertForTwo February 24, 2012 at 2:44 pm #

These look scrumptious! The Mr loves all things mint, so I have to make these! He even eats peanut butter & mint jelly sandwiches…weird, right?

    • KeepItSweet February 29, 2012 at 2:12 pm #

I am so intrigued by that sandwich!

  24. Grace February 24, 2012 at 8:00 pm #

    Hi Lauren

My Matt loves mint and Oreos, gotta try these!

  25. The Wimpy Vegetarian February 24, 2012 at 8:42 pm #

These look GREAT. It takes making lemonade out of lemons to a whole new level. Sending you lots of #chocolatelove!

  26. Vicki @ WITK February 25, 2012 at 7:58 am #

These look so good and your ingredient list is so simple! I’ll have to make these while I wait for those silly girl scouts to deliver my cookies!

  27. Daisy@Nevertoosweet February 25, 2012 at 1:14 pm #

Going over there now to check out the recipe :) YUMMY!

  31. Julia {The Roasted Root} February 27, 2012 at 7:44 pm #

I share the common sentiment – these look delicious….Andes mints and Oreos, my gosh lady, this is creative thinking! I’d probably feel super guilty eating them, but you only live once ;)

    • KeepItSweet February 29, 2012 at 2:14 pm #

Guilt is overrated! Thanks for visiting the blog from Tasty Kitchen:-)

  32. Liz (Little Bitty Bakes) February 29, 2012 at 9:09 pm #

I just found your blog after searching for “Peeps stuffed cookie” — hehe, we must have at least something in common. ;)

This sounds awesome, and I actually have Thin Mints (two boxes) — I wonder if I could use those instead of the Oreos, yum!

    • KeepItSweet March 1, 2012 at 6:20 am #

Haha that is great, those peep-stuffed cookies were fabulous! I bet these would be great with thin mints! You could probably use regular chocolate instead of the creme de menthe pieces.
