Remember when I promised you eHow videos?  Well, I’m going to try to get past my embarrassment and share them, yikes!  You already have the recipe, but I figured you might like the video for how to make these Big, Chewy, Sweet and Salty Peanut Butter Cookies.  I’d love to hear what you think!

      Luckily I was too distracted that day to be too nervous. However, sharing the video made me VERY nervous!

    I don’t have extra large eggs. How many large eggs can I use as a substitute? Thanks

      Hi Laurel- I think you can use 2 large eggs and it should be okay! However, if you double the recipe I’d suggest using 5 large eggs in place of the 4 x-large eggs. Let me know if you make the cookies!

        I made them!!!! So yummy. I ended up buying some x-large eggs. I tried weighing out ingredients but hard to get it exactly at weight you suggest, so I just used the measuring cups. I appreciated your video with the mixer. I just got a KitchenAid and this was the third time I used it. Still getting the hang of it. I used chunky peanut butter and mini semi-sweet chocolate chips. Next time I will use regular semi-sweet chocolate chips. Loved the pretzels in the cookies. A surprise crunch. My husband doesn’t think they will last till the morning!!!! I hope you will do more videos.

          I’m so thrilled to hear that! If you do decide to start weighing your ingredients to bake, I’d suggest investing in an electronic scale. I have one made my OXO that I love and I think was only about $30. Something to think about down the line:-)

            I’ll look into it. My scale will do 5.5 oz, but not 5.58, so that was where I had the problem.

    […] And in the middle of all that, for every minute that I wasn’t glued to the news or hanging around the hospital maternity ward, I was prepping to film videos for eHow.  10 videos.  In one day.  AKA craziness.  When I originally agreed to do this, I didn’t grasp quite how much work it would entail prepping to film, baking on camera, and rushing to clean up during the taping.  In case you are wondering, it is a lot of work.  Initially I was also really nervous.  I’ve never done something like this before.  Well, in all of the excitement of everything else.  Okay, mostly because of the fact that I could NOT wait to finish taping so that I could get to the hospital and meet Hannah, I actually wasn’t nervous at all.  There is another miracle for you!  I think I’m actually more nervous to see how cheesy and awkward I ended up looking.  If I’m not completely embarrassed by the final products, I promise to share them with you once they are done!
