I think my husband/mother/co-workers/sister/friends/Twitter followers/neighbors/strangers are getting sick of me.  To be honest, I’m getting a little sick of me too.

No one wants to constantly hear about stress/anxiety/weight gain/impatience and any other complaints that seem to be incessantly on my mind these days.  If I didn’t have a constant supply of cookies/cupcakes/brownies/truffles/blondies to share I’d probably be completely deserted already.  But I’m pretty sure that the sweets I make can only get me so far and I better start looking at the positive or keeping my mouth shut.

So to make up for driving everyone I know crazy lately, here are some good things you should know:

  • Last night I got a gorgeous cookbook in the mail from this talented lady.  Everything looks good but her recipe for crab cakes is definitely calling my name
  • In addition to that delivery, my doorwoman (is that a term?) presented me with a big box of an upcoming product from here
  • After testing what feels like a million brownie recipes, my husband finally approved of the latest version and in fact said they were “ridiculous”
  • Friday night I have a date with this lady who I haven’t seen in over a month, thank g-d because I don’t think I could have lasted much longer
  • I finally get to meet the sweet veggie dreamgirl today!
  • Sometime soon you will find my recipes on a very.big.website.
  • And lastly, I got something over email that I can NOT wait to share and to be honest, all of this sketchy secret keeping is driving me nuts… I promise to share my news and plans soon!

Spiced Cookie Butter Truffles

Oh, and did I mention truffles?  If you haven’t heard about this speculoos/cookie butter/biscoff spread phenomenon you are five pounds thinner than me missing out.  These truffles may actually melt in your hands a little bit, but sometimes a messy dessert is worth it.

Spiced Cookie Butter Truffles
Yield: Makes ~30 truffles

Ingredients
3 tablespoons unsalted butter, softened at room temperature
1 cup Speculoos Cookie Butter or Biscoff Spread
2/3 cup finely ground gingersnap crumbs (~11 cookies)
4 ounces semi-sweet or dark chocolate finely chopped

Cooking Directions
Beat butter and cookie butter with an electric mixer on high speed until light and creamy
Add cookie crumbs and combine on high speed until thoroughly mixed
Refrigerate mixture for at least two hours
Scoop mixture by the teaspoon and roll each scoop into the ball; keep dough in refrigerator while scooping individual truffles
Once all balls are rolled, place them back in refrigerator or freezer
Melt chocolate; place chocolate in a microwaveable bowl and place in microwave for thirty second increments stirring in-between until chocolate is melted and smooth
Drizzle melted chocolate over chilled balls and freeze until ready to serve

I love that they’re spiced with gingerbread! i must try this cookie butter everyone is talking about. i was late on the train for biscoff and now i’m late for this! haha

  2. Okay, I really need to track down some of this cookie butter. I went to the Trader Joe’s in Chelsea last week and they didn’t have any! Totally conspiring against my making these beauties. :)

  3. Sounds like you have some big things in the works!! I’m excited for you!!! I’m new to that Speculoos spread, but with the TJ’s brand on it I will have to see what I can find as they are on my rounds later today.
    I have a feeling that I really should not make these Truffles as I’m afraid if they are here I will not be able to stop myself from eating the. But I’m going to buy the cookie butter… just in case!!

  4. Oh how I love spekuloos :) I grew up with it in Germany, and I haven’t seen it here. Where did you find it? The truffles look fantastic, I’d devour each and every one!

  6. I don’t have a TJ’s nearby, so I had to settle for the Biscoff spread. Is settle the right word? I don’t know because I’m too busy licking the inside of the jar to think about it any further.
    And I feel you on the stress/anxiety stuff, and all I can say is hang it there, there’s always a window that opens…or is it a door? Again, Biscoff brain.

  10. Oh Lauren I hear ya on everything. This time of year seems to be full of overwhelming things for all. Especially in a city where everyone is obviously already very sick of this horrid weather!

    Also- those truffles look amazing. I can’t believe I’ve never tried that cookie spread. I’m sure I’d be addicted.

  11. Yea this is amazing. I have starred at that jar of Cookie Butter at TJ’s several times, telling myself I wouldn’t buy it, because let’s be honest…. how would I not eat the whole jar in one sitting?! Wait, how did YOU actually get this ingredient into a recipe? Such self control.

    Anyways, I love these and will need to make them soon. Maybe I’ll just buy two jars of Cookie Butter so that if I do, indeed, eat one, I still have another one for these tasty little truffle treats!

    I am just so glad that TJ’s made a chocolate bar filled with cookie butter so I can regulate my cookie butter intake.

    Phew.

    1. I basically hid the jar from myself until I had something to do with it, otherwise there would have been a lot of trouble! I actually was afraid of buying the chocolate bar because I know I will be instantly addicted.

      1. Well, I am telling you know that you have to buy the chocolate bar. Just break off a square and hide the rest until you remember how good that first one was. ;)

  12. You won’t believe this, I went to Trader Joe’s the other day to get this Cookie Butter, and they were all out of it. SO annoying. That was the only reason I went too, but I ended up leaving with other goodies, but it just isn’t the same without cookie butter. These look phenomenal. :-)

  14. We all have times when work is super stressful. I can certainly relate to that right now. Sounds like you have some balance with all the exciting news coming up. I always find a little time with friends helps too. I think you already know the other secret with this recipe. They look marvelous!
