It’s normal to have French toast as a mid-morning snack, right? Oh, that’s just me? Oops.

I’d actually been wanting to make this Gingerbread French Toast for a while now. And luckily, thanks to recipe testing for this recipe, I had an extra gingerbread loaf to play around with. I sliced it, stuck it in the freezer and then took it out the night before I was set to make the French toast. While the rainy dreary day was pretty bad planning for photographs, the final product was reward enough.

The French toast was so, so good that when I took a bite for tasting purposes, I immediately decided that I should eat an entire slice. Never mind the fact that I wasn’t really hungry and had brunch plans. #worthit

And while it’s not surprising that the Gingerbread French Toast was delicious fresh out of the pan, it is even better to note that upon eating the leftovers the next morning my husband said that the french toast was so good it should be on a restaurant menu. Not bad!

So if you are looking for the perfect holiday brunch item, look no further. This GIngerbread French Toast is exactly what you need on your Christmas morning menu. You can make the gingerbread loaf in advance and then just cook the French toast like you would with regular bread right before you want to eat. It’s easy at that point and doesn’t require a lot of time working in the kitchen. Do it!

Gingerbread French Toast
 
Makes: 4 servings
Ingredients
  • 8 slices day-old gingerbread(1/2 inch thick)
  • 220g (4 large) whole eggs
  • 80 milliliters (1/3 cup) milk (I used almond milk but any type would work)
  • 2 milliliters (1/2 teaspoon) vanilla extract
  • ½g (1/4 teaspoon) ground cinnamon
  • 28g(2 tablespoons) unsalted butter for pan
Instructions
  1. Place gingerbread slices in a 9-13 baking dish (or comparable sized dish) and set aside
  2. In a medium bowl, whisk together eggs, milk, vanilla and cinnamon
  3. Pour over gingerbread slices making sure each slice is wet
  4. Flip slices over to make sure both sides are coated; allow to soak while you get pan ready
  5. Melt half of butter in a large skillet over medium heat and tilt pan to coat
  6. When butter is melted  and pan is hot, place slices in pan (do not overlap)
  7. Cook for two minutes (or until lightly browned on one side) and then carefully flip each slice over; cook an additional two minutes on second side
  8. Remove French toast from pan and repeat with remaining slices
  9. Enjoy immediately

Ginger Pecan Candy Crack

Crazy addicting Christmas candy in a very good way. This  sweet and salty “crack” is made with toasted pecans, ginger spiced caramel and dark chocolate.

Last week my sister and fiancé had us over for a fun weeknight Chanukah dinner. Jess and Quoc made a delicious dinner that included perfectly crispy latkes, salmon with dill yogurt sauce and salad with roasted squash. Just ask L, he hijacked most of my salmon and ate his weight in latkes. Chanukah success! I brought a green vegetable along with some cookies (my sister thought these tasted like a chai latte).

There were also “cookies” there, though, that tasted like some sort of ginger toffee caramel hybrid.  I had one bite and then couldn’t stop going back for more. The sweet and salty flavor combination with the added ginger spice was addicting. And to torture treat myself, I made my own interpretation to share with you.

This crunchy, sweet and salty candy treat is currently calling to me from a tupperware inside my fridge. I made a big batch and take a couple of bites worth almost every time I open the door. I just can’t help myself! What I love about this treat is that it differs from the other “crack” recipes out there by having an added spice and a hefty dose of toasted pecans. Oh, and don’t let the term “candy” fool you. There are no candy thermometers used in this recipe and it’s actually pretty straightforward. The ease of making it is either really great or really dangerous, You decide.

Ginger Pecan Candy Crack

Makes: ~5 cups
Ingredients
  • 340g (3 cups) pecans
  • 227 grams (1 cup / 2 sticks) unsalted butter
  • 230 grams (1 cup packed) light brown sugar
  • 2½g (1/2 teaspoon) table salt
  • 1g (1 teaspoon) ground ginger
  • ½g (1/4 teaspoon) ground nutmeg
  • 2 milliliters (1/2 teaspoon) pure vanilla extract
  • 255 grams (1½ cups) semi-sweet chocolate chips
  • flaky sea salt to taste (I used about ¾ teaspoon)
Instructions
  1. Pre-heat oven to 350 degrees
  2. Line a 9x13 baking pan with parchment paper
  3. Top parchment paper with pecans and toast in oven for 8 minutes or until fragrant; set aside
  4. In a large heavy-duty saucepan, melt the butter and brown sugar together, stirring over medium heat until it begins to boil; once it has begun boiling, let it bubble for three more minutes; it will thicken a bit as it cooks
  5. Remove from the heat and add the table salt, ginger, nutmeg and vanilla, and then quickly pour it over the pecans
  6. Bake the for 12-15 minutes or until all of the caramel topping is lightly bubbling (watch carefully at end of cooking to make sure it doesn’t burn burn; if it appears to be browning too much, reduce oven temperature to 325 degrees)
  7. Remove from oven and immediately cover with chocolate chips; let stand five minutes, and then carefully spread them evenly across the caramel and sprinkle with flaky sea salt
  8. Chill in refrigerator for about two hours or until firm; break into pieces by hand
  9. Store it in an air-tight container in refrigerator or cool space for best results
  10. Enjoy within one week

Something very major happened this weekend.

I had an entire day (over six hours straight!) to myself. If you are wondering why this is such a big deal I must tell you, this is the longest period of time I’ve had to do whatever I wanted since before L (almost 14 months old) was born. Seriously, it was blissful. I went to the gym, got a pedicure, painted my finger nails (who has the patience to sit at a nail salon for both?) and got a little work done. In fact, I am really proud of myself for not working the whole time.

After a full year plus of breastfeeding, it’s weird to be able to just be able to be away from L. I got so used to working everything around his feeding schedule that I forgot how to live otherwise. Freedom!

And let’s be honest, I still spent twenty minutes of my me time watching L videos. I couldn’t help myself.

New favorite Christmas dessert! gingerbread with caramelized (!!!) white chocolate gnache

I did put together this post in the final hour of my alone time so that it would be ready to publish and kick off the week. It’s a little Christmas treat that I am excited about because it you can convince yourself that it is brunch food or dessert food. The gingerbread loaf itself is sort of healthy. Some whole wheat flour snuck into the batter and I even replaced some of the butter with applesauce. As a result, it pairs perfectly with the caramelized white chocolate ganache. Together you get a wonderful sweet and spiced bite. It’s not too much sweet for a holiday brunch but it’s indulgent enough to end your Christmas dinner.

We are all now obsessed with this caramelized white chocolate ganache!

The gingerbread loaf is easy to make, it’s a basic quick-bread. The caramelized white chocolate ganache isn’t hard, but it does require a little extra attention. Caramelized white chocolate might just be one of my favorite dessert surprises (and seriously, I dislike white chocolate very much). It’s flavor is so much more complex than you might expect. It’s definitely worth the little bit of time it takes to get the white chocolate just right. Once it’s done caramelizing, you just mix it with some boiled heavy cream and pour it over your loaf! Your family and holiday guests will love this treat.

This Christmas dessert is a lightened up gingerbread loaf topped with an indulgent caramelized white chocolate ganache.

Ingredients
Gingerbread Loaf
  • · 135g (~1 cup) all-purpose flour
  • · 155g (~1 cup) white whole wheat flour
  • · 5g (1 teaspoon) baking soda
  • · 1½g (1½ teaspoons) ginger
  • · 1½g (¾ teaspoon) nutmeg
  • · 2½g (½ teaspoon) salt
  • 57]g (4 tablespoons) unsalted butter, softened at room temperature
  • · 175g (2/3 cup) unsweetened applesauce
  • · 50g (¼ cup) granulated sugar
  • · 30g (2 tablespoons, packed) light brown sugar
  • · 80 milliliters] (1/3 cup) molasses (original unsulphered)
  • · 110g (2 large) whole eggs, at room temperature
  • · 7 milliliters (1 ½) teaspoons vanilla
  • 237 milliliters·(1 cup) buttermilk
Ganache
  • 140g good quality white chocolate, roughly chopped (make sure to use real white chocolate, white chocolate chips will not work as well)
  • 2½g (1/2 teaspoon) sea salt
  • 45 milliliters (3 tablespoons) heavy cream
Instructions
Gingerbread Loaf
  1. Pr-heat oven to 350 degrees; grease a 9x5 inch loaf pan with butter or non-stick cooking spray and set aside (you can also line the pan with parchment paper for easy removal)
  2. In a medium bowl, whisk together flours, baking soda, ginger, nutmeg and salt; set aside
  3. In the large bowl of an electric mixer with paddle attachment, mix together butter, applesauce and sugars on low-medium speed until well combined
  4. Mix in molasses on medium speed until combined; mix in eggs and vanilla
  5. Add half of the dry ingredients and mix on low speed just until combined; slowly add buttermilk while mixer is on low speed; add remaining dry ingredients and mix just until combined; do not overmix
  6. Pour batter into prepared pan and bake for 50-55 minutes or until a knife comes out clean from center, do not overbake; allow to cool for ten minutes before running a knife along the edges and removing from pan
  7. While loaf is cooling, make ganache
  8. Make caramelized white chocolate
Ganache
  1. Pre-heat oven to 250 degrees and place wrack in center of oven
  2. Spread white chocolate evenly over a clean rimmed baking sheet
  3. Put in oven for ten minutes; remove pan and use a rubber spatula to stir and spread white chocolate
  4. Place in oven again and repeat for additional fifteen to twenty (stirring every five to ten minutes) minutes or until white chocolate begins to darken into a light brown
  5. I recommend reducing the increments to five minutes towards the end of caramelizing to prevent burning
  6. When caramelized white chocolate is done, place in a heat-safe bowl and stir in sea salt
  7. In a small sauce pan, place cream over medium-high heat and bring to a rolling boil (do not stir); immediately pour over white chocolate
  8. Allow cream and chocolate to sit for one minute then whisk vigorously until smooth
  9. Drizzle ganache over loaf and serve
  10. Best enjoyed that day
  11. Make ahead tips: Bake gingerbread loaf and wrap well in seran wrap; store at room temperature for one day before making ganache or in freezer up to one month

It’s my birthday week which means that nothing but ice cream will do! I wanted to make one more batch of homemade ice cream before the summer ended (though I have a few other ideas so it might not be my last) and asked on Facebook what it should be. A few of you had some good ideas so I combined a couple of them into one!

Gingersnap Crumble Peach Ice Cream (and you don't need an ice cream maker!)

It actually was the perfect week to make peach ice cream because Matt had bought the biggest white peaches I’ve ever seen at Costco. No joke, these peaches were as big as grapefruits. My mom actually walked into my apartment and asked “what are these?!”

The gingersnap crumble is all sorts of awesome… it’s just brown butter and and gingersnap crumbs. Thank you, Gerry, for the fabulous idea! The peach filling is easy to make, barely any sugar, just the sweetness of perfect late summer peaches to carry it. And then the no churn ice cream base, you know the drill: cream, sweetened condensed milk, vanilla. Oh yeah, and bourbon. Because with peach and ginger it just seemed right!

Ingredients
Crumble:
  • 120g (~1 cup) ground gingersnaps* (16 cookies)
  • 71g (5 tablespoons ) unsalted butter
Peach filling:
  • 360g (~2½ cups) fresh peeled and chopped ripe peaches (~2-3 medium peaches)
  • 16g (~1 tablespoon, packed) light brown sugar
  • 15 millimeters (1 tablespoon) fresh lemon juice (about ½ lemon)
  • 10g (~1 tablespoon) cornstarch
  • 1g (1/2 teaspoon) ground cinnamon
Ice cream:
  • 237 millimeters (2 cups) heavy cream
  • 1 14-ounce can sweetened condensed milk (I used fat free, but any type would work)
  • 30 millimeters (2 tablespoons) bourbon
  • 5 millimeters (1 teaspoon) vanilla extract
Instructions
  1. Make crumble
  2. Melt butter in a heavy-duty pan over medium heat; once melted, stir constantly until browned and then remove from heat; stir in gingersnap crumbs; set aside to cool
  3. Make peach filling
  4. Place peaches, sugar and lemon juice in a medium pot stove with medium heat
  5. Stir occasionally for several minutes until some of the fruit begins to break down and juice begins to form
  6. Turn the heat to high, add cornstarch and stir quickly until sauce reaches desired thickness (1-2 minutes); stir in cinnamon
  7. Place sauce in refrigerator to cool for 30 minutes
  8. Once ready, finish making ice cream
  9. In the large bowl of an electric mixer with whisk attachment, beat cream on high speed for several minutes, just until stiff peaks form
  10. While whipping cream, in a separate large bowl, stir together sweetened condensed milk, vanilla, and bourbon
  11. Once cream is ready, fold it into sweetened condensed milk mixture
  12. Fold in peach filling
  13. Pour half of ice cream into a regular-sized loaf pan and drop one half of crumble over top; top with remaining ice cream and then with remaining crumble; wrap well with seran wrap or tin foil
  14. Freeze for 6 hours or overnight
Notes
*Can easily be adapted to be gluten-free by using gluten-free gingersnaps
Sauce and crumble can be made up to one day before putting ice cream together, refrigerate the filling in an airtight container until ready to use and store the gingersnap crumble in an airtight container at room temperature

Chewy Milk Chocolate Ginger Cookies - great twist on a holiday flavor

I have a bit of a weakness for ginger cookies.  My dad loves gingersnaps, but unless they are super crunchy (ahem, teeth-breakingly so), he will probably tell you they are underbaked.  I, on the other hand, like crunchy, chewy, crispy, really any texture as long as you have a great ginger flavor.

This cookie is a spin on the cookies I made for these ice cream sandwiches over the summer. I made a couple of small changes including enhancing the ginger flavor in order to balance the addition of the sweet milk chocolate.  Again, this is definitely NOT a gingersnap, but a brown-sugar-based cookie full of ginger flavor.  Make them now and maybe double the batch so you can freeze some for Christmas.  They would also make a great addition to any cookie gifts you are putting together.  Just make sure you chill the dough as directed to ensure that the flavor is in full force and the texture is the perfect balance of a chewy center and crispy edge.

Milk Chocolate Chunk Ginger Cookies - I couldn't stop eating them!

Makes: 3 dozen medium-sized cookies
Ingredients
  • 260g (~2 cups) all-purpose flour
  • 7 ½g (1/2 tablespoon) salt
  • 3g (1/2 tablespoon) ground ginger
  • 2 ½g (1/2 teaspoon) baking soda
  • 170g (1 ½ sticks) unsalted butter, softened at room temperature
  • 350g (~1½ cup tightly packed) light brown sugar
  • 5g (1 teaspoon) minced ginger
  • 100g (2 large) whole eggs
  • 15 milliliters / 1 tablespoons vanilla extract
  • 180g (~1¼ cups) milk chocolate, roughly chopped
Instructions
  1. Whisk together flour, salt, ginger and baking soda; set aside
  2. In the large bowl of an electric mixer, beat butter, sugar and minced ginger on medium-high speed until light and well mixed; scrape sides of bowl
  3. Add eggs and vanilla, mix well; scrape sides of bowl
  4. Add flour mixture and mix on low speed just until combined (do not overmix); stir in chocolate
  5. Chill dough for 24-48 hours (the longer chilling time helps the flavor and texture)
  6. When ready to bake, pre-heat oven to 350 degrees
  7. Use a medium cookie dough scoop or tablespoon to make cookie dough balls on a baking sheet lined with parchment paper (about 1½ tablespoons each) about 2 inches apart from one another
  8. Bake 12-14 minutes or until cookies are set on top and very lightly brown around the edges
  9. Allow cookies to cool before serving
  10. Store in a ziplock bag or airtight container for up to one week; freeze up to two months

There’s nothing wrong with enjoying ice cream during the fall and winter months especially when it can be transformed into any flavor you would like, including all your favorite fall flavors. Ginger may not be one that first comes to mind but it is a wonderful flavor to add to others such as pumpkin, which is why I didn’t stop after making the candied ginger ice cream.

Pumpkin and Ginger Ice Cream Sandwich Cookie Cake {Guest Post}

Makes: 8-12 servings
Ingredients
  • Ice Cream
  • 1 cup heavy cream
  • ¼ tsp ground ginger
  • ½ can sweetened condensed milk (about ¾ cup)
  • ¼ cup chopped candied ginger
  • Cookie Cake
  • 1-3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ¼ tsp nutmeg
  • ⅛ tsp allspice
  • ½ cup (1 stick) unsalted butter, room temperature
  • 1 cup light brown sugar, lightly packed
  • ½ cup pumpkin puree
  • 1 egg
  • ½ tsp vanilla extract
  • 4 oz. (1/2 cup) chopped dark chocolate
Instructions
  1. Line a 10-inch (or 9-inch) cake pan or springform pan with plastic wrap and set aside.
  2. In a large, chilled bowl, whip heavy cream to soft peaks. Add the ground ginger and whip to stiff peaks.
  3. Using a rubber spatula, gently fold in the sweetened condensed milk into the whipped cream. Fold in chopped candied ginger.
  4. Pour ice cream into the plastic lined cake pan, cover with more plastic wrap and freeze for 6 hours or overnight.
  5. Preheat oven to 350 degrees. Place parchment paper in the bottom of two 10-inch (or 9-inch) cake pans or springform pans. Grease the sides.
  6. In a medium bowl, whisk together the flour, baking soda, cinnamon, salt, nutmeg, and allspice. Set aside.
  7. In a large bowl, beat butter and sugar together until creamy, about 3-4 minutes. Mix in pumpkin, egg and vanilla extract. Add flour mixture until combined. Fold in chopped chocolate.
  8. Divide and spread the cookie dough out evenly into the pans. Bake for 20-22 minutes or until set.
  9. Remove from oven and let cool for about 15 minutes, then transfer to cooling rack to cool completely.
  10. Once completely cooled, arrange one layer of the cookie cake on a large plate or platter. Remove ice cream from freezer, unwrap, and place on top. Sandwich with the second layer of the cookie cake. Slice and serve immediately. Store any leftovers in the freezer covered in foil or plastic wrap.

Sandwiched around the ice cream is a pumpkin dark chocolate chip cookie cake creating in one giant ice cream cookie sandwich. Slice it up, serve, and devour!

I sure hope you listened to me on Monday and got your lemon ice cream ready!  If so, time to whip up these chewy ginger cookies and prepare for ice cream sandwich heaven.  If not, get to the ice cream stat.  Lucky for you it’s easy to make, you just need to be patient during the freezing time.

Amazing Ginger and Lemon Ice Cream Sandwiches

 

Anyway, I’m pretty obsessed with these sandwiches.  The ginger cookies are chewy, even after freezing, and just so delicious.  If you eat a few while making the ice cream sandwiches, I won’t tell anyone.  Just don’t mistake them for a traditional gingersnap.  These are more like a brown sugar cookie with a nice ginger flavor.  No overpowering ginger to be found.

Ginger and Lemon Ice Cream Sandwiches

Makes: 16 ice cream sandwiches
Ingredients
Instructions
  1. Pair cookies so that they are closely matching in size; turn one cookie from each pair upside down
  2. Place a scoop of ice cream (about ⅓ cup) on top of an upside down cookie; press matching cookie down to form an ice cream sandwich; repeat with a few ice cream sandwiches and then place in in the freezer (in a ziplock bag or tupperware) while making remaining ice cream sandwiches; repeat until finished
  3. Store ice cream sandwiches in a ziplock bag or airtight container in freezer up to one month; keep frozen until serving

Chewy Ginger Cookies

Makes: 32 cookies for 16 ice cream sandwiches
Ingredients
  • 260g (~2 cups) all-purpose flour
  • 7 ½g (1 ½ teaspoons) salt
  • 2g (1 teaspoon) ground ginger
  • 2 ½g (½ teaspoon) baking soda
  • 170g (1 ½ sticks) unsalted butter, softened
  • 350g (~1½ cup packed) light brown sugar
  • 5g (1 teaspoon) minced ginger
  • 100g (2 large) whole eggs
  • 15 milliliters (1 tablespoon) vanilla extract
Instructions
  1. Whisk together flour, salt, ginger and baking soda; set aside
  2. In the large bowl of an electric mixer, beat butter, sugar and minced ginger on medium-high speed until light and well mixed; scrape sides of bowl
  3. Add eggs and vanilla, mix well; scrape sides of bowl
  4. Add flour mixture and mix on low speed just until combined (do not overmix)
  5. Chill dough for 2 – 24 hours
  6. Pre-heat oven to 325 degrees
  7. Use a medium cookie dough scoop or tablespoon to make cookie dough balls on a baking sheet lined with parchment paper (about 1½ tablespoons each) about 2 inches apart from one another
  8. Bake 13-14 minutes or until cookies are set on top and very lightly brown around the edges

We get a little comfortable with the usual. Cookies are easy and I’ve gotten great at them. I know what ingredients make the best dough, what amount of refrigeration time creates the best final product and what flavor combinations will always taste good (chocolate and peanut butter, obviously). I’m not being cocky, I just spend many hours most days making cookies for my business.

Sometimes these ruts are really hard to escape. But sometimes, all it takes is just a little bit of excitement over something new. At the start of Insanity I was excited because I wanted to look like those women in the video (ahem, no matter how many level 3 drills I do, it isn’t happening).

Well, ever since we went to Bi-Rite, I’ve had the brown sugar ice cream on the brain.  That dark, almost burnt brown sugar flavor and the swirls of ginger throughout were such a perfect combination of flavors.  I’ve been wanting to recreate that experience in a different way.

I don’t know how it happened exactly, but the idea of this cupcake just popped into my head last week.  It was one of those moments where as soon as it happened, I had to do something.  Brown sugar cupcakes were in and out of the oven before I really knew what hit me.  What followed was a lightly flavored creamy swiss meringue buttercream and a sweet and salty crunchy topping inspired by one of my favorite bloggers.  The result was almost too good.

Ingredients
  • 1 batch brown sugar cupcakes
  • 1 batch cinnamon ginger swiss meringue buttercream
  • 1 batch ginger cookie pecan brittle
Instructions
  1. Prepare cupcakes as directed below
  2. While cupcakes are cooling, prepare brittle and set aside to cool
  3. Once cupcakes and brittle are cool, make frosting; frost cupcakes with a spatula or piping bag and top with broken brittle pieces
  4. Serve immediately; if you are making cupcakes in advance, do not top with brittle until just before serving

Brown Sugar Cupcakes
 
Ingredients
  • 1½ cups (7 ounces) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon table salt
  • ½ cup (1 stick) unsalted butter, softened at room temperature
  • 1⅛ cup (10.25 ounces) tightly packed light brown sugar
  • 2 extra large eggs at room temperature
  • ½ teaspoon vanilla extract
  • ⅜ cup buttermilk
Instructions
  1. Pre-heat oven to 325 and line regular-sized cupcake tins with cupcake wrappers; set aside
  2. Sift together flour, baking powder and salt into a medium bowl; set aside
  3. In a large mixing bowl, beat together butter and brown sugar on medium-high speed using an electric mixer for several minutes; beat until very light and fluffy
  4. Scrape the sides of the mixing bowl; add eggs, one at a time, beating on medium speed in-between until each egg is combined
  5. Add vanilla and beat on high for one minute
  6. Reduce speed of mixer to low and slowly add one half of flour mixture, do not overmix
  7. Add buttermilk and then remaining flour mixture; turn off mixer before all dry ingredients are combined; remove bowl of mixer and slowly fold batter until dry ingredients are combined; do not overmix
  8. Evenly distribute batter into 17 prepared cupcakes, filling about ⅔ of each cup
  9. Bake cupcakes for 18-22 minutes or until a toothpick comes out clean

I wasn’t thrilled with the appearance of the cupcake by itself, it was completely flat on the top. Luckily, the taste and moist texture more than made up for it and the frosting covered up any lackluster looks I was worried about.
The cupcakes can be made up to one month in advance and frozen. Defrost for a couple of hours at room temperature prior to frosting.

Cinnamon Ginger Buttercream

Ingredients
  • ½ cup egg whites (I used 3 extra-large but pasteurized egg whites work fine)
  • 1 cup granulated sugar
  • 1⅛ cups (2¼ sticks) unsalted butter, softened and cut into 1-inch cubes
  • ½ tablespoon vanilla extract
  • 2 teaspoons ground ginger (if you are using fresh ground ginger, start with less and add more to taste)
  • 1½ teaspoons ground cinnamon
  • <1/8 teaspoon table salt
Instructions
  1. Wipe the bowl of an electric mixer, whisk attachment, whisk, spatula and candy thermometer with a paper towel and vinegar to clean (if any grease is on these items your meringue will not work)
  2. Place egg whites and sugar in mixing bowl over pot of simmering water; water should not be high enough to touch mixing bowl
  3. Whisk mixture slowly but constantly until temperature reaches 160 degrees F, about 5-10 minutes
  4. Remove from stove and attach bowl to electric mixer with whisk attachment
  5. Put mixer on low to medium speed and whisk until meringue is shiny and thick and bowl has cooled down to room temperature; if bowl does not cool and meringue has formed, you can put an ice bath under the mixing bowl while it is mixing
  6. Once ready, replace whisk attachment with paddle attachment and add cubes of butter one at a time mixing on low speed until the mixture is light and creamy; if mixture gets lumpy, keep mixing for several minutes; if it gets runny, place bowl in fridge for 10 minutes before continuing to mix
  7. Stop mixer to scrape sides of bowl and continue to beat on low speed for another minute
  8. Add vanilla, ginger, cinnamon and salt and mix on medium speed until the SMB is light and creamy

You can frost the cupcakes up to one day in advance and keep them chilled until ready to serve so that the buttercream does not melt. Serve at room temperature

Ginger Cookie Pecan Brittle

Ingredients
  • ½ cup granulated sugar
  • ¼ cup light corn syrup
  • ¼ cup lightly chopped raw pecans
  • ¼ cup broken gingersnaps (about 3 cookies)
  • ½ teaspoon table salt
  • ½ teaspoon unsalted butter
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda
Instructions
  1. Line a baking sheet with parchment paper and set aside
  2. In a large microwave-safe bowl, stir together sugar and corn syrup; microwave mixture on high for three minutes
  3. Stir in pecans, gingersnaps and salt; put in microwave for one minute and then stir; microwave for another thirty seconds keeping an eye on the mixture so as not to burn
  4. Stir in butter and vanilla; microwave for 30 seconds; be careful bowl may get very hot
  5. Stir in baking soda and immediately spread brittle onto parchment paper
  6. Allow to cool for 30 minutes; break brittle into small pieces for cupcakes
  7. If not using immediately, store in an airtight container for up to five days

The brittle can be made a couple of days in advance and stored in an airtight container until ready to use.  Top the cupcakes with the brittle right before serving for best results.

It’s just that I’ve had this recipe for weeks and have been holding it in the backlog so that I didn’t completely overload you with cookies.  Meanwhile, almost every person who has eaten one of these has asked me for the recipe.*  Biting into one of the gingersnap sandwich cookies is one of those moments when you stop and say, “oh, so this is what Christmas tastes like.”**  Spicy and crunchy gingersnaps balanced by a light and creamy cream cheese frosting.

Gingersnap Cookie Sandwiches with Lemon Cream Cheese Icing

This is the kind of cookie that you will enjoy so much that a few dozen cookies bites later you’ll have momentarily forgotten your infatuation with chocolate and peanut butter.  Yes, I’m pretty sure that you will forgive me for the delay as soon as you make them.

Gingersnap Cookie Sandwiches with Lemon Cream Cheese Icing
Gingersnap Cookies with Lemon Cream Cheese Filling
Makes 4 dozen cookie sandwiches

Gingersnaps:
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
3 teaspoons ground ginger
1 1/4 teaspoons cinnamon
1/4 tsp ground cloves
1/4 tsp nutmeg
1/4 teaspoon ground white pepper
1 cup (2 sticks) unsalted butter, softened at room temperature
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1/3 cup molasses

Whisk dry ingredients (flour through white pepper) in a medium bowl; set aside
In a large bowl beat butter and sugars with an electric mixer until
light and fluffy
Beat in egg and then molasses on medium speed until well combined
Reduce mixer speed to low and slowly add in the dry ingredients just
until combined
Place prepared dough on a large piece of saran wrap and wrap tightly;
chill dough in refrigerator for 2 hours (up to 24 hours is fine) or
until dough is firm
Pre-heat oven to 350 degrees and line baking sheets with parchment paper
Scoop 2 teaspoons of cookie dough per cookie and roll into balls
Place dough balls on cookie sheets 1-2 inches apart
Bake for 12 minutes or until cooked all the way through
Set cookies aside to cool and prepare filling

Lemon Cream Cheese Filling:
½ of an 8-ounce block of light cream cheese softened at room temperature
4 tablespoons (1/2 stick) unsalted butter, softened at room temperature
1 tablespoon fresh lemon juice (1/2 lemon)
1/8 teaspoon salt
2 cups confectioners’ sugar*
Use the whisk attachment of an electric mixer to beat butter and cream
cheese on high speed until light and creamy
Mix in lemon juice and salt
Add in sugar ½ a cup at a time or until at desired consistency (*2
cups was the perfect amount for me but if you want a thicker texture
you may want to add up to another ½ cup)
Once cookies have cooled and filling is ready, prepare cookie sandwiches
Spread 1/2-1 teaspoon of filling on the bottom of a cookie
Top filling with another cookie and press lightly to stick together
(frosting may ooze out of cookie a little bit, that is ok)
Serve cookies immediately or store in the freezer up to 4 weeks

The original reason for this recipe was to share it with some bloggers at the New York City Annual Holiday Cookie Swap.  I went to the cookie swap with Joanne and got the chance to meet some other lovely local bloggers.  The event was a part of Bloggers with Borders and proceeds went towards Cookies for Kids’ Cancer.   I can’t think of a better reason to bake, eat and share cookies.  There were an unbelievable amount to choose from and I “limited” myself to this package.

Along with pumpkin muffins the other night, I had these cookies going in and out of the oven.  I have to admit, I don’t usually like walnuts in my desserts (keep them away from my fudgey brownies, please), but these Whole Wheat Maple Walnut Spice Cookies just sounded so appealing. Maybe it is the fact that whole wheat flour = healthy, walnuts = healthy, whole wheat flour + walnuts = super healthy cookies!  That logic works, right?

And you know what happens when you make healthy cookies?  You can eat as many as you want guilt-free!  It is a good thing, too, because when you smell these in the oven, you will not be able to resist.  A hint of maple syrup and the warm fall flavors of cinnamon, nutmeg and ginger will wake up your senses.  Warm and chewy right out of the oven, instant comfort.

I’d like to say that you can unwind, grab a book and enjoy a cookie with a warm cup of tea, but who are we kidding?  I’ve never eaten A cookie in my life.  Grab 6 3 and enjoy.

Whole Wheat Maple Walnut Spice Cookies

Yield: Makes 4 dozen cookies

Ingredients

  • 3 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cup brown sugar, tightly packed
  • 1/2 cup (1 stick) unsalted butter softened at room temperature
  • 2 large eggs
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla
  • 1 cup walnut pieces

Cooking Directions

  1. Pre-heat oven to 350 degrees
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg and salt; set aside
  3. Beat butter and sugar in a large bowl with an electric mixer until light and fluffy
  4. Add eggs, maple syrup and vanilla; beat until combined
  5. Stir in walnut pieces
  6. Use a cookie dough scoop or tablespoon to lay cookie dough balls out on a cookie sheet lined with parchment paper 1-2 inches apart
  7. Bake cookies for 8-9 minutes or until color changes slightly and cookies are almost firm
  8. Allow to cool on cooling rack before serving
