This has been one of those weeks so far:
- Our bedroom A/C has been broken since last Monday but won’t be fixed until next Monday, never mind the 100 degree weather
- I thought I figured out the source of my daily stomach pains but was proved wrong, the mystery continues
- As a result of the two items listed above, I’ve barely been sleeping and my stress-relieving gym trips are suffering/barely happening
Okay, is my whining enough already?
On the other hand, I found a delicious and easy no-bake (ie no hot oven) treat to make! These Chewy Chocolate Covered Pretzel Bars are kind of perfect for drowning my summer sorrows. They are chewy and crunchy at the same time with more of that salty and sweet combo that we all seem to know and love. The bars are actually quite addicting if you ask me!

Chewy Chocolate Covered Pretzel Bars
Yield: Serves 24
Ingredients
- 3 tablespoons unsalted butter
- 1 10.5-ounce bag mini marshmallows
- 1 1/4 cup dark chocolate chips or chunks
- 6 cups salted pretzel pieces
Cooking Directions
- Melting butter over low-medium heat in a large pot
- Add the marshmallows and stir until they are completely melted
- Remove pot from heat, and stir in chocolate
- Add pretzels to the mixture and stir
- Once everything is combined, press the ingredients into a 13X9 pan lined with foil and allow to cool
- Once cool, remove bars from the pan; the easiest way to do this is to flip the pan upside down and peel off the foil
- Cut the bars in to large pieces (I made slices in a 6X4 matrix) and serve or store in an air-tight container for up to 3 days

Did you write this post just for me? It is no surprise we are friends! Not only does this snack scream my name (I love all the food in it and doesn’t require baking skills) but yesterday was one of those days for me. I guess I’ll list my problems.
1. I burned my eyes. Twice.
2. I hit my car on my garage door. To accompany the large scratch on the back of my car, I now have a matching large chunk of paint missing on my front bumper.
3. I thought I lost a contact in my eye. Proceeded to irritate my eye when looking for it.
4. Went to the wrong car in the parking lot at work.
Can I come back on vacation and visit you and have more delicious goodies?

I am venting because I think your random stomach pain thing is catching (kidding!)…I am trying to figure out what’s causing mine and it’s so frustrating. Ugh! At the moment I’m convincing myself I’ve suddenly become lactose intolerant…I sure hope that’s not it!

Don’t hate me, but have you considered gluten as the cause of the stomach pains?

I asked the guy at the gym if I could sleep on the mats, he didn’t realize that I was serious:-)
I have considered that gluten could be an issue… I’ve been tracking my eating and stomach pains and kind of don’t think that is it, but the next step is probably for me to just skip gluten for a week (AHH) and see what happens.

Oh sorry you had a rough week. If it makes you feel better we only have AC in the baby’s room, so we haven’t been sleeping very well either.
I was going to say the same thing as Joanne, could it be a gluten intolerance? My Dad suddenly developed that a few years back and had really bad IBS and GID, was losing weight, all that stuff. Finally discovered he has gluten allergy. Never had a problem in his life then suddenly, boom. Hope you feel better.

I’ve definitely considered it. My thought is that it isn’t the case based on my very unscientific testing, but I should do a real test where I don’t eat any gluten for a week or something. Weight loss is definitely not a symptom lol.

No air conditioning. I would probably take refuge at a friends house. I lived in an unairconditioned dorm in my Florida college days, but would not even consider it now. Hope your air is fixed quickly.

I’m sorry that your stomach is hurting :( Have you ever considered that it might possibly be a food allergy? I had stomach pains every day 30 minutes after certain meals and finally took a trip to the doctor and found out that I’m allergic to wheat and egg whites (booooooooo :( ). Since then, I eliminated them from my diet and haven’t had any pain since.

That definitely could be the case! My stomach pains usually start in the 3-5pm range (weird, right?)… I’ve been trying to tweak my lunch to see if that is the cause.

I am gonna vent about the fact that for the past two weeks our electricity has been switching off for hours at a time at least 3 times daily! :/ Which means no real chance to cook but also no AC in this lovely Cypriot heat! FINALLY to add insult to injury I hear that our electricity bills are going to double in price! :( However things could be a hell of a lot worse and apart from that life is sweet! :) Hope your ac gets fixed and your tummy pains stop!

these are delicious! once I removed the marshmallows from heat, and added the chocolate chips… boy they were hard to stir! I’d suggest melting the chocolate ahead of time.
