Ginger Pecan Candy Crack

Crazy addicting Christmas candy in a very good way. This  sweet and salty “crack” is made with toasted pecans, ginger spiced caramel and dark chocolate.

Last week my sister and fiancé had us over for a fun weeknight Chanukah dinner. Jess and Quoc made a delicious dinner that included perfectly crispy latkes, salmon with dill yogurt sauce and salad with roasted squash. Just ask L, he hijacked most of my salmon and ate his weight in latkes. Chanukah success! I brought a green vegetable along with some cookies (my sister thought these tasted like a chai latte).

There were also “cookies” there, though, that tasted like some sort of ginger toffee caramel hybrid.  I had one bite and then couldn’t stop going back for more. The sweet and salty flavor combination with the added ginger spice was addicting. And to torture treat myself, I made my own interpretation to share with you.

This crunchy, sweet and salty candy treat is currently calling to me from a tupperware inside my fridge. I made a big batch and take a couple of bites worth almost every time I open the door. I just can’t help myself! What I love about this treat is that it differs from the other “crack” recipes out there by having an added spice and a hefty dose of toasted pecans. Oh, and don’t let the term “candy” fool you. There are no candy thermometers used in this recipe and it’s actually pretty straightforward. The ease of making it is either really great or really dangerous, You decide.

Ginger Pecan Candy Crack
 
Crazy addicting Christmas candy in a very good way. This sweet and salty “crack” is made with toasted pecans, ginger spiced caramel and dark chocolate.

Makes: ~5 cups
Ingredients
  • 340g (3 cups) pecans
  • 227 grams (1 cup / 2 sticks) unsalted butter
  • 230 grams (1 cup packed) light brown sugar
  • 2½g (1/2 teaspoon) table salt
  • 1g (1 teaspoon) ground ginger
  • ½g (1/4 teaspoon) ground nutmeg
  • 2 milliliters (1/2 teaspoon) pure vanilla extract
  • 255 grams (1½ cups) semi-sweet chocolate chips
  • flaky sea salt to taste (I used about ¾ teaspoon)
Instructions
  1. Pre-heat oven to 350 degrees
  2. Line a 9x13 baking pan with parchment paper
  3. Top parchment paper with pecans and toast in oven for 8 minutes or until fragrant; set aside
  4. In a large heavy-duty saucepan, melt the butter and brown sugar together, stirring over medium heat until it begins to boil; once it has begun boiling, let it bubble for three more minutes; it will thicken a bit as it cooks
  5. Remove from the heat and add the table salt, ginger, nutmeg and vanilla, and then quickly pour it over the pecans
  6. Bake the for 12-15 minutes or until all of the caramel topping is lightly bubbling (watch carefully at end of cooking to make sure it doesn’t burn burn; if it appears to be browning too much, reduce oven temperature to 325 degrees)
  7. Remove from oven and immediately cover with chocolate chips; let stand five minutes, and then carefully spread them evenly across the caramel and sprinkle with flaky sea salt
  8. Chill in refrigerator for about two hours or until firm; break into pieces by hand
  9. Store it in an air-tight container in refrigerator or cool space for best results
  10. Enjoy within one week

It might seem a bit odd to share a pancake recipe the week of Thanksgiving, but I have a few reasons for this.

  1. You probably already have your Thanksgiving menu planned out so giving you an additional recipe for the holiday might just stress you out.
  2. Holiday weekends call for holiday brunch. Scale the recipe up for a crowd or enjoy an intimate treat after the big family get together.
  3. If you are hosting the holiday or travelling, you probably don’t have much time for additional cooking. Enter breakfast for dinner, an easy and delicious solution!

This recipe comes from the new cookbook, Dinner for Two by Julie Wampler. You might know Julie from the blog Table for Two. Her cookbook features 70 dinners recipes for (duh) two. Most recipes can easily be scaled up for a family as well. I’m excited to try some of the savory dishes for Matt, L and me, but for the blog, I wanted to stick with something on the sweet side. And what could be better than indulging in a sweet pancake dinner? It’s such a treat for once and a while. Pair it with some scrambled eggs and a steamed vegetable or side salad and you have a pretty balanced meal.

This name of this recipe may make you think that it’s a lot of work, but in reality, like most of the recipes in Julie’s book, it’s actually pretty simple. If you use two separate skillets, you can basically make the topping and the pancakes at the same time and get dinner (or breakfast) on the table in less than twenty minutes. Just get your banana topping started first and let it cook while you then prepare and cook the pancakes.

A note on the final product: The pancakes and topping are quite delicious. The pancakes themselves aren’t very sweet, so I definitely recommend pairing them with the bourbon banana nut topping. If you aren’t into nuts, just leave them out. Either way, the topping is a great alternative to plain old maple syrup.

Makes: 2-3 servings
Ingredients
Banana Pecan Bourbon Topping:
  • 2 bananas, sliced into rounds
  • ⅓ cup maple syrup
  • 1 tablespoon bourbon whiskey
  • ½ cup roughly chopped pecans
Pancakes:
  • 1½ cups all-purpose flour
  • 1½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon kosher salt
  • 2 tablespoons granulated sugar
  • 1 large egg
  • ¾ cup buttermilk
Instructions
Make the topping:
  1. Place ingredients in a small skillet over medium heat and bring to a skimmer; allow to thicken for ten minutes, stirring occasionally
  2. When the topping is a thick syrupy consistency, remove from heat until ready to use
  3. Make the pancakes:
  4. In a large bowl, whisk together the dry ingredients
  5. Make a well in the center of the mixture and add the egg and buttermilk; whisk batter until no lumps remain; batter will be thick
  6. Spray a large skillet with non-stick cooking spray and place over medium heat
  7. Once skillet is hot, use a ⅓  cup measuring cup to drop batter onto skillet
  8. Cook pancakes on one side for about two minutes or until bubbles start to form then flip and cook additional two minutes; repeat with remaining pancake batter
  9. Serve pancakes immediately with banana pecan bourbon topping

Thanksgiving blondies!! Brown Butter Dark Chocolate and Toasted Pecans

It was very difficult for me to set aside my own personal distaste for nuts in blondies and brownies and throw some crunchy toasted pecans into these blondies. But Thanksgiving is coming and it would be a shame to let it pass by without a dessert that combines my love for blondies with an infamous Thanksgiving dessert.

I actually never cared for pecan pie until I started putting chocolate in it. So, I figured if I put enough chocolate in these blondies, all would be right with the world and they would actually be quite delicious. Mission accomplished!

These blondies start with everyone’s favorite brown butter which adds a warm, nutty flavor to the bars. Then they are loaded with brown sugar (necessary), chopped dark chocolate (also necessary to maximize chocolate enjoyment) and toasted pecans (important for flavor development). They won’t take you too long to make and don’t require any complex baking skills. In fact, you don’t even need a mixer to make these blondies (or any of my blondies for that matter).

Makes: 12 servings
Ingredients
  • 100g (1 cup) pecans, roughly chopped
  • 112g (1/2 cup) unsalted butter
  • 350g (~1½ cups packed) light brown sugar
  • 200g (~1½ cups) all-purpose flour
  • 8g (1 teaspoon) salt
  • 3g (1/2 teaspoon) baking powder
  • 110g (2 large) whole eggs
  • 10 milliliters (2 teaspoons) vanilla extract (bourbon based preferred)
  • 112g (~3/4 cup) good quality dark chocolate, roughly chopped (use the highest percent cocoa you enjoy)
Instructions
  1. Pre-heat oven to 350 degrees; line an 8×8 or 9×9 baking pan with parchment paper
  2. Spread pecans out in baking pan and place in oven for five minutes to toast; do not let burn
  3. Remove from oven and set aside to cool
  4. In a medium-sized saucepan over medium-high heat, brown the butter (stir butter constantly until it turns an amber/light brown color) and remove from heat; stir in sugar until well combined and set aside to cool slightly
  5. In a medium bowl, whisk together flour, salt and baking powder; set aside
  6. In a large bowl, whisk together eggs and vanilla; whisk in butter and sugar mixture
  7. Whisk in flour mixture until almost combined and then fold in any remaining crumbs with a spatula
  8. Fold in chocolate and toasted pecans until evenly distributed throughout batter
  9. Pour into prepared baking pan and bake for 33-37 minutes or until a knife comes out clean
  10. Set aside to cool for an hour before cutting
Notes
Blondies will stay fresh for up to two days if wrapped or packaged in an air-tight container. They also freeze incredibly well, just wrap them tightly in tin foil.
These blondies are somewhat on the cakier side, be very careful not to overbake.

I actually made this cake way back in August and the smells in the kitchen that day immediately brought me to Fall.  I realize that is something people say all the time, but it’s especially apparent when you are baking with the traditional pumpkin spices mid-Summer.  There is something so comforting about the aromas.  Because really, on a cool, crisp day, one where you are running around in your favorite pair of jeans and knee-high boots, what could be better than coming home to a kitchen that smells of cinnamon and a freshly baked Autumn dessert?

For me, the pumpkin cake can truly stand alone.  It’s moist and flavorful and completely fulfilling sans topping.  However, this is a baking blog, and I wanted to bring something different to the table than the traditional pumpkin bundt cake.  So I thought about other fall desserts and what people love to eat and my head went to Thanksgiving.  It might not be my favorite thing in the world but no one can deny that pecan pie is a Thanksgiving crowd pleaser.  So I brought the two together!  The pecan pie glaze is just like a traditional pecan pie filling; sweet and goopy, full of pecan chunks.  Pour it over the pumpkin cake and you add an extra sweetness and crunchy texture to the dessert.  Plus, a the bundt cake dripping with pecan pie glaze will look beautiful set up on a cake stand on your dessert table.

Makes: 16-20 servings
Ingredients
  • 240g (~2¼ cups) cake flour
  • 7 ½g (1 ½ teaspoons) baking soda
  • 5g (1 teaspoon) baking powder
  • 2g (1 teaspoon) ground cinnamon
  • ½g (½ teaspoon) ground cloves
  • 2 ½g (½ teaspoon) salt
  • 170g (12 tablespoons) unsalted butter, softened at room temperature
  • 122g (½ cup) unsweetened applesauce
  • 234g (~1 cup packed) brown sugar
  • 213g (~1 cup) granulated sugar
  • 200g (2 large) whole eggs at room temperature
  • 425gs (~2 cups) canned pumpkin (NOT pumpkin pie filling)
  • 10 milliliters / 2 teaspoons pure vanilla extract
Instructions
  1. Preheat oven to 350 degrees
  2. Grease and flour a 12 or 14 cup bundt pan; set aside
  3. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, cloves and salt; set aside
  4. In the large bowl of an electric mixer, beat butter, applesauce and sugars in large bowl on medium speed until light and fluffy; scrape sides and bottom of bowl with a rubber spatula
  5. Beat in eggs, one at a time, beating on medium speed after each addition; beat in pumpkin and vanilla
  6. Gradually add flour with mixer on low speed just until combined; do not overmix
  7. Pour batter into prepared cake pan and bake 46-50 minutes until a knife inserted into cake comes out clean
  8. Allow to cool for 15 minutes before inverting onto a cooling rack; set aside to cool while preparing pecan pie glaze
Notes

Cake can be made day before serving, just wait to make the glaze until that day. Store leftovers tightly wrapped with seran or in an airtight container up to five days. Cake can also be made and frozen in advance but glaze should be made day of serving in that case as well.

  • 80g (~3/4 cup) chopped pecans
  • 57g (4 tablespoons) unsalted butter, melted
  • 53g (~1/4 cup) granulated sugar
  • 3 tablespoons light corn syrup
Instructions
  1. Pre-heat oven to 300 degrees; line a baking sheet with tin foil and spread the pecans out on pan
  2. Toast pecans in oven for about 7 minutes, being careful not to burn; set aside
  3. In a medium bowl, whisk together remaining ingredients; stir in pecans and pour over pumpkin cake

To start things off, I’ve got what I decided to call a “Fancy” Holiday Chocolate Pecan Pie.  I’m completely enamored with the shape of this pie and the pile of pecans above crust level.  This is the sort of thing that will look gorgeous on your Thanksgiving table.

This chocolate pecan pie is the perfect addition to your fall holiday table!

Recipe type: Dessert
Makes: 8 servings
Ingredients
  • ⅓ recipe of 1 double crusted pie crust (I used this Martha Stewart recipe)
  • 2 eggs at room temperature
  • 2 ounces (~1/4 cup tightly packed) light brown sugar
  • 1⅝ ounces (~1/4 cup) granulated sugar
  • ¼ cup light corn syrup
  • ¼ teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2½ cups pecans
  • ½ cup semi-sweet chocolate chips
Instructions
  1. Prepare pie crust according to recipe directions and chill dough until ready to use
  2. When ready to bake, pre-heat oven to 375 degrees
  3. Roll dough out in a long rectangle (at least 16 inches long and 7 inches wide), dough should be ~1/8 inch thick
  4. Carefully press dough into tart pan, tightly into corners and edges; cut off any crust that hangs over
  5. Whisk together filling (eggs, sugars, corn syrup, vanilla and salt); set aside
  6. Mix pecans and chocolate chips together and pile evenly into pie crust
  7. Drizzle filling over pie being careful not to have any spill over
  8. Place pan in center of oven and bake for ~35 minutes or until filling is set; check occasionally and if pecans on top start to brown, lightly cover with foil for remainder of baking
  9. Notes:
  10. I suggest placing a large piece of foil on rack below pie in oven in case of any drips
  11. *If you do not have a pan this size, you can make the recipe into an 8 or 9-inch pie, just use one half of pie crust recipe, NOT one third and increase filling by fifty percent; increase baking time as needed

Requires 1 13.75 x 4.25 tart pan (this inexpensive pan from Amazon does the job)

We get a little comfortable with the usual. Cookies are easy and I’ve gotten great at them. I know what ingredients make the best dough, what amount of refrigeration time creates the best final product and what flavor combinations will always taste good (chocolate and peanut butter, obviously). I’m not being cocky, I just spend many hours most days making cookies for my business.

Sometimes these ruts are really hard to escape. But sometimes, all it takes is just a little bit of excitement over something new. At the start of Insanity I was excited because I wanted to look like those women in the video (ahem, no matter how many level 3 drills I do, it isn’t happening).

Well, ever since we went to Bi-Rite, I’ve had the brown sugar ice cream on the brain.  That dark, almost burnt brown sugar flavor and the swirls of ginger throughout were such a perfect combination of flavors.  I’ve been wanting to recreate that experience in a different way.

I don’t know how it happened exactly, but the idea of this cupcake just popped into my head last week.  It was one of those moments where as soon as it happened, I had to do something.  Brown sugar cupcakes were in and out of the oven before I really knew what hit me.  What followed was a lightly flavored creamy swiss meringue buttercream and a sweet and salty crunchy topping inspired by one of my favorite bloggers.  The result was almost too good.

Ingredients
  • 1 batch brown sugar cupcakes
  • 1 batch cinnamon ginger swiss meringue buttercream
  • 1 batch ginger cookie pecan brittle
Instructions
  1. Prepare cupcakes as directed below
  2. While cupcakes are cooling, prepare brittle and set aside to cool
  3. Once cupcakes and brittle are cool, make frosting; frost cupcakes with a spatula or piping bag and top with broken brittle pieces
  4. Serve immediately; if you are making cupcakes in advance, do not top with brittle until just before serving

Ingredients
  • 1½ cups (7 ounces) all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon table salt
  • ½ cup (1 stick) unsalted butter, softened at room temperature
  • 1⅛ cup (10.25 ounces) tightly packed light brown sugar
  • 2 extra large eggs at room temperature
  • ½ teaspoon vanilla extract
  • ⅜ cup buttermilk
Instructions
  1. Pre-heat oven to 325 and line regular-sized cupcake tins with cupcake wrappers; set aside
  2. Sift together flour, baking powder and salt into a medium bowl; set aside
  3. In a large mixing bowl, beat together butter and brown sugar on medium-high speed using an electric mixer for several minutes; beat until very light and fluffy
  4. Scrape the sides of the mixing bowl; add eggs, one at a time, beating on medium speed in-between until each egg is combined
  5. Add vanilla and beat on high for one minute
  6. Reduce speed of mixer to low and slowly add one half of flour mixture, do not overmix
  7. Add buttermilk and then remaining flour mixture; turn off mixer before all dry ingredients are combined; remove bowl of mixer and slowly fold batter until dry ingredients are combined; do not overmix
  8. Evenly distribute batter into 17 prepared cupcakes, filling about ⅔ of each cup
  9. Bake cupcakes for 18-22 minutes or until a toothpick comes out clean
Notes

I wasn’t thrilled with the appearance of the cupcake by itself, it was completely flat on the top. Luckily, the taste and moist texture more than made up for it and the frosting covered up any lackluster looks I was worried about.
The cupcakes can be made up to one month in advance and frozen. Defrost for a couple of hours at room temperature prior to frosting.

Ingredients
  • ½ cup egg whites (I used 3 extra-large but pasteurized egg whites work fine)
  • 1 cup granulated sugar
  • 1⅛ cups (2¼ sticks) unsalted butter, softened and cut into 1-inch cubes
  • ½ tablespoon vanilla extract
  • 2 teaspoons ground ginger (if you are using fresh ground ginger, start with less and add more to taste)
  • 1½ teaspoons ground cinnamon
  • <1/8 teaspoon table salt
Instructions
  1. Wipe the bowl of an electric mixer, whisk attachment, whisk, spatula and candy thermometer with a paper towel and vinegar to clean (if any grease is on these items your meringue will not work)
  2. Place egg whites and sugar in mixing bowl over pot of simmering water; water should not be high enough to touch mixing bowl
  3. Whisk mixture slowly but constantly until temperature reaches 160 degrees F, about 5-10 minutes
  4. Remove from stove and attach bowl to electric mixer with whisk attachment
  5. Put mixer on low to medium speed and whisk until meringue is shiny and thick and bowl has cooled down to room temperature; if bowl does not cool and meringue has formed, you can put an ice bath under the mixing bowl while it is mixing
  6. Once ready, replace whisk attachment with paddle attachment and add cubes of butter one at a time mixing on low speed until the mixture is light and creamy; if mixture gets lumpy, keep mixing for several minutes; if it gets runny, place bowl in fridge for 10 minutes before continuing to mix
  7. Stop mixer to scrape sides of bowl and continue to beat on low speed for another minute
  8. Add vanilla, ginger, cinnamon and salt and mix on medium speed until the SMB is light and creamy

You can frost the cupcakes up to one day in advance and keep them chilled until ready to serve so that the buttercream does not melt. Serve at room temperature

Ginger Cookie Pecan Brittle

Ingredients
  • ½ cup granulated sugar
  • ¼ cup light corn syrup
  • ¼ cup lightly chopped raw pecans
  • ¼ cup broken gingersnaps (about 3 cookies)
  • ½ teaspoon table salt
  • ½ teaspoon unsalted butter
  • ½ teaspoon vanilla extract
  • ½ teaspoon baking soda
Instructions
  1. Line a baking sheet with parchment paper and set aside
  2. In a large microwave-safe bowl, stir together sugar and corn syrup; microwave mixture on high for three minutes
  3. Stir in pecans, gingersnaps and salt; put in microwave for one minute and then stir; microwave for another thirty seconds keeping an eye on the mixture so as not to burn
  4. Stir in butter and vanilla; microwave for 30 seconds; be careful bowl may get very hot
  5. Stir in baking soda and immediately spread brittle onto parchment paper
  6. Allow to cool for 30 minutes; break brittle into small pieces for cupcakes
  7. If not using immediately, store in an airtight container for up to five days

The brittle can be made a couple of days in advance and stored in an airtight container until ready to use.  Top the cupcakes with the brittle right before serving for best results.
