Easiest Cookie Ever, and Delicious Too!

When I saw Lauren’s suggestions for Valentine’s Day treats included this cookie, I knew I had to try it!  Lauren has a wonderful blog that makes incredibly delicious and healthy versions of food that everyone loves.  Unfortunately, I didn’t have any chocolate peanut butter on hand, but I did have some of this chocolate almond butter on hand.

Since I wanted to make the cookies immediately, I decided to adapt her recipe for what I had on hand and make Flourless Chocolate Almond Butter Cookies.

Reasons to make these cookies:

1. They are deliciously light and fudgey at the same time.

2.  This is the easiest cookie recipe I have ever made.  3 steps, that is it!

3.  Portion control!  This recipe makes 8 cookies.  If you are nervous about eating the entire batch, you can’t get yourself into too much trouble*.  The cookies are pretty big, too.

*Each cookie comes out to 5 weightwatchers points+, as a result, the entire batch is 40 points+ which is less than the extra weekly points you get.

Step 1:  Mix together almond butter, brown sugar, whisked egg white, baking soda, vanilla extract and salt

Flourless Chocolate Almond Butter Cookies

Adapted from Healthy Food for Living

Yield: 8 cookies

Ingredients

  • 1/2 cup chocolate almond butter
  • 2 tablespoons light brown sugar, packed
  • 1 egg white, whisked
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup semi-sweet chocolate chips

Cooking Directions

  1. Pre-heat oven to 350 degrees
  2. Mix together almond butter, brown sugar, whisked egg white, baking soda, vanilla extract and salt
  3. Stir in chocolate chips
  4. Use a cookie dough scoop or tablespoon to shape 8 cookies on a baking sheet lined with parchment paper
  5. Bake for ~12 min or until tops of cookies are no longer loose

  1. After tasting your DELICIOUS cookie recently, I knew I wanted to make it part of my “must have” cookie recipes! It was moist and fudgy. And to think it was as simple as four ingredients, how can you not get excited??!!!

  3. Wow! Pretty amazing. Although, I have to say I’m not a huge fan of the dark almond spread. It tastes lovely, but it’s not as healthy as the other MaraNatha products, which is kind of a bummer. Although, I really shouldn’t talk since I’ve been eating marshmallow fluff icing all week. Ridic!

  5. Great idea for those cookies! BUT, I read your title as “delicious tool” so I read your post about 4 times, trying to figure out where you hid your “tool” review! Duh. I guess what you can take from that is I’m pretty dedicated to your site!! Haha.

  7. I need to find some dark chocolate almond butter asap! I do like that there is a 8 cookie limit to this b/c my cookie recipes come out to about 24 and I’m not so good with portions!

    I have not tried a flour-less cookie either and this one has peaked my culinary interest!

  8. These look too good to be true! I love that it only makes 8 because when I have 24-36 cookies in my house it makes me feel guilty to throw them away – so where do they go? in ma bellly. not good! haha

  9. Apparently, the type of chocolate almond butter you use makes all the difference. I used Natural Nectar Almond Cocoa Spread from Whole Foods instead of the MaraNantha and it was a huge fail. I couldn’t find MaraNantha at Meijer nor Whole Foods. I was making them for a dinner party and switched to a similar recipe. I love that you include WW points. I am doing Weight Watchers but wasn’t looking for a WW recipe. If I ever find MaraNantha Chocolate Almond Butter, I will try the recipe again!!
