Vanilla Bean Cheesecake Bars

Cheesecake bars are an easier but equally delicious way to enjoy cheesecake.

To be honest, I’ve barely baked over the last few weeks. Last week I made ice cream (recipe coming soon, it was pretty much the best ever) and a simple Passover dessert, but that was it. Between our week in Florida and every day life chasing L around the apartment, it’s tough to get something into the oven. Plus, I think I’ve subconsciously been taking a break to get extra pumped up to bake for my sister’s upcoming shower.

So these cheesecake bars are already from about two months ago now. Matt had requested vanilla bean cheesecake at some point and I used the excuse of having friends over for dinner to indulge him. Instead of making a regular cheesecake, though, I decided to keep things simple and make cheesecake bars. For any of you who are nervous to bake cheesecake for the first time, that is the way to go. It’s so much easier!

The vanilla bean cheesecake bars were a huge hit. The Oreo crust was chocolaty and crisp and the filling was ultra creamy with vanilla beans speckled throughout. We each enjoyed more than our fair share of cheesecake because it really was delicious. I might have also eaten a couple pieces too many out of the leftovers the next day.

Cheesecake bars are an easier but equally delicious way to enjoy cheesecake.

Recipe type: Dessert
Makes: 36 small bars
Ingredients
Crust:
  • 250g (2⅓ cups) Oreo cookie crumbs (about 20 cookies)
  • 57g (4 tablespoons) unsalted butter, melted
  • 27g (2 tablespoons) granulated sugar
Cheesecake Filling:
  • 454g (2 8-ounce packages) light cream cheese softened at room temperature
  • 370g (1¾ cups) granulated sugar
  • 165g (3 large) whole eggs at room temperature
  • 16g (2 tablespoons) all-purpose flour
  • 5 milliliters (1 teaspoon) vanilla extract
  • The inside of 1 vanilla bean (if leaving this out, replace with 1 tablespoon of additional vanilla extract)
  • ½g (1/8 teaspoon) salt
Instructions
  1. Pre-heat oven to 325 degrees
  2. Line a 13x9 pan with parchment paper and spray with nonstick cooking spray, set aside
Make the crust:
  1. In a medium bowl, stir together cookie crumbs, melted butter and sugar
  2. Press crumb mixture into prepared baking pan; spread evenly using fingers to push down crust and set aside
  3. To make your cheesecake filling, beat cream cheese in mixer until light, creamy and lumps are gone (about 5 minutes)
  4. Add sugar and combine on medium-high speed well until light and creamy
  5. Beat in eggs, one at a time, on medium speed
  6. Mix in flour on medium speed
  7. Add vanilla extract, vanilla bean and salt and beat until mixture is thick and creamy
  8. Pour cheesecake batter over crust and bake for 36-40 minutes or until edges begin to separate from foil and middle bounces slightly when touched
  9. Refrigerate for at least 4 hours or overnight
  10. Remove cheesecake from pan and cut into bars
  11. Store in refrigerator and enjoy within five days of baking

Joanne is for sure one of the nicest people I’ve ever met. She’s a also good friend, so thoughtful, super smart, extremely creative, funny and talented in multiple arenas (blogging, running, SCIENCE). We’ve been friends for several years now and I can say for sure that she is going to be an amazing mom. I’m so excited for her to welcome her baby girl (and to come give that baby lots of snuggles!!!).

Since Joanne is the queen of seasonal cooking, we are channeling her love of fresh produce with a SPRING-themed virtual baby shower (scroll down for the full menu!). I thought that these little lemon cheesecake cups would be perfect because they are fresh and bright and light for the occasion. The lemon cheesecake batter is simple to make (I had mine in the oven within twenty minutes of starting) and swirled with your favorite raspberry jam. They are then topped off with a lightly sweetened whipped cream and fresh raspberries. The tartness from the lemon and berries is perfect for balancing the sweetness of the cheesecake. And for those of you who are timid with lemon desserts (as am I), these are lemony but definitely not lip-puckeringly so.

Must make these for Mother's Day!!

Lemon Raspberry Cheesecake Cups

Makes: 14 cheesecakes
Ingredients
Cheesecake:
  • 14 vanilla wafer cookies
  • 454g (2 8-ounce packages) light cream cheese softened at room temperature
  • 370g (1¾ cups) granulated sugar
  • 165g (3 large) whole eggs at room temperature
  • 16g (2 tablespoons) all-purpose flour
  • 5 milliliters (1 teaspoon) vanilla extract
  • 1 tablespoon fresh lemon juice (1/2 lemon)
  • 1 tablespoon lemon zest (1 lemon)
  • ½g (1/8 teaspoon) salt
  • 90g (1/3 cup) raspberry jam, stirred
For the whipped cream
  • 158 milliliters( ⅔ cup) heavy whipping cream, cold
  • 9g (2 teaspoons) granulated sugar
  • 75g (1/2 pint) fresh raspberries, washed and dried
Instructions
For cheesecake:
  1. Pre-heat oven to 325 degrees
  2. Line two regular-sized muffin tin with 14 paper cupcake liners; place a cookie on the bottom of each cup
  3. To make your cheesecake filling, beat cream cheese in mixer until light, creamy and lumps are gone (about 5 minutes)
  4. Add granulated sugar and lemon zest and combine on medium-high speed well until light and creamy
  5. Beat in eggs, one at a time, on medium speed
  6. Mix in flour on medium speed
  7. Add vanilla extract, lemon juice and salt and beat until mixture is thick and creamy
  8. Spoon cheesecake batter into cups; top each with about a teaspoon of raspberry jam
  9. Use a toothpick to carefully swirl the jam into the batter
  10. Bake 25-30 minutes or until edges of cheesecakes are firm and centers are just slightly jiggly
  11. Refrigerate for at least one hour before removing from pan to fill with whipped cream and berries
For the whipped cream:
  1. Beat cream in the large bowl of an electric mixer with whisk attachment on medium-high speed for several minutes or just until foamy; gradually add sugar and continue mixing until stiff peaks form
  2. Spoon whipped cream into cheesecake cups and top with fresh berries
Notes
Cheesecake needs at least one hour of chill time before serving but can be made up to three days in advance if kept refrigerated; fill cheesecake cups with whipped cream and berries when ready to serve

No-Bake Cookie Dough Oreo Cheesecakes

I don’t have a lot of pictures for you today (this dessert was not photogenic, but it was tasty!) and I am having major writer’s block.  I’ll just blame the winter, it seems to be the cause of most problems lately.

I’ll tell you this much, though, these mini cheesecakes are pretty fantastic.  Maybe I would put them in a parfait form next time just to make them a little prettier.  I do have some extra cookie dough in my freezer so that might not be the worst idea…

No-Bake Cookie Dough Oreo Cheesecakes

 

No-Bake Cookie Dough Oreo Cheesecakes

Recipe type: Dessert
Makes: 12 mini cheesecakes
Ingredients
  • ½ batch Chocolate Chip Cookie Dough Balls (see below)
  • 12 Cookie Dough Oreos
  • 454g (2 8-ounce packages) cream cheese (light or regular), at room temperature
  • 177 milliliters (3/4 cup) sweetened condensed milk (fat free is okay)
  • 5 milliliters (1 teaspoon) vanilla extract
Instructions
  1. Line a muffin tin with cupcake liners; place a an Oreo on the bottom of each
  2. Make cheesecake filling; in the large bowl of an electric mixer with a whisk attachment, beat cream cheese for several minutes until smooth and creamy
  3. Add sweetened condensed milk and vanilla; mix until combined
  4. Remove bowl from mixer and use a spatula to fold in cookie dough balls
  5. Use a ladle or large cookie dough scoop to distribute filling over each Oreo
  6. Cover with seran wrap and chill in overnight
Notes
Enjoy within one week
Cheesecakes might be a little messy, just be careful when you unwrap them

 
No-Bake Cookie Dough Oreo Cheesecakes

Ingredients
  • 113g (1/2 cup / 1 stick) unsalted butter, softened
  • 117g (~1/2 cup) light brown sugar, firmly packed
  • 53g (~1/4 cup) granulated sugar
  • 30 milliliters (2 tablespoons) milk
  • 130g (~1 cup) all-purpose flour
  • 1g (1/4 teaspoon) table salt
  • 65g (~1/3 cup) mini semi-sweet chocolate chips
Instructions
  1. Beat butter and sugar until light and fluffy; stir in milk
  2. Gradually stir in flour and salt just until combined
  3. Stir in chocolate chips
  4. Use a teaspoon to scoop dough and roll into balls (1/2 teaspoon to 1 teaspoon in size); Place in an airtight container and chill in freezer until ready for use

I’ve been having fun with pumpkin and cookie butter and white chocolate, but let’s be honest.  Chocolate and peanut butter will always have my heart.  And as I look back over the last few months of blogging, there is just not enough of it.  So in case you had any doubt, let me reassure you that I will always and forever love that combination.

The other thing I realized I haven’t done in a while is cheesecake.  In fact, I think the last cheesecake I made was this Pumpkin Cinnamon Roll Cheesecake.  I guess it was hard to come up with anything close to as good as that one.  But let me tell you, we are in major cheesecake territory here.

These Funky Monkey Cheesecake Bars are pretty much dessert rock stars.  The base is a fudgy brownie just thick enough to get your chocolate fix, but thin enough that it doesn’t overpower the bars.  The cheesecake filling  is a light and creamy, yet rich, combination of banana and peanut butter that will have you craving them well after your last bite.  I thought about adding another layer of caramel and peanuts or chocolate ganache but I actually think that would have been too much.  Sometimes you just shouldn’t mess with a really good thing.

Fudgy brownie topped with a creamy layer of peanut butter banana cheesecake!
Makes: 24 bars
Ingredients
Brownie Layer:
  • 2 ounces unsweetened chocolate, roughly chopped
  • 3 ounces (6 tablespoons / ¾ stick) unsalted butter at room temperature
  • 15 ounces  (~1 cup) granulated sugar
  • 2 large eggs OR 1 x-large egg plus 1 egg yolk, at room temperature
  • ½ teaspoon vanilla extract
  • 2¼ ounces (~1/2 cup) all-purpose flour
  • ¼ teaspoon salt
Cheesecake Layer:
  • 16 ounces cream cheese, softened at room temperature (light or regular)
  • 11¼  ounces (~3/4 cup) granulated sugar
  • 7 ounces (~3/4 cup) mashed banana (~2 medium bananas)
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 large eggs or 1 x-large egg plus 1 egg yolk, at room temperature
Instructions
  1. Pre-heat oven to 350 degrees
  2. Line a 13×9 pan with tin foil and coat with cooking spray; set aside
  3. Melt chocolate and butter in a medium saucepan over low to heat, stirring constantly; remove from heat
  4. Stir in sugar
  5. Whisk in eggs, one at a time, and then vanilla
  6. Whisk in flour and salt just until smooth (do not overmix)
  7. Spread brownie batter evenly in prepared baking pan and set aside to make cheesecake layer
  8. In the large bowl of an electric mixer with the whisk attachment, beat cream cheese on high speed for until it is light and creamy (about 6 minutes)
  9. Mix in sugar on medium-high speed for two minutes; scrape the sides of the bowl with a spatula
  10. Add the banana, peanut butter, vanilla and salt and mix on high speed until smooth and creamy (about 2 minutes), again scrape the sides of the bowl with a spatula
  11. Then, add your eggs, one at a time, mixing at medium speed until smooth and creamy (about 30 seconds)
  12. Bake for 40-50 minutes or until edges begin to come apart from sides of pan and cheesecake is set
  13. Refrigerate a couple of hours until cool and completely set
  14. Cut into squares and serve; store remaining cheesecake in the refrigerator up o three days

Last night was my 10-year high school reunion.  I didn’t really know what to expect, but for some reason I was a little nervous about going.  There was the whole cliché of wanting to look good, which isn’t all that convenient two days after Thanksgiving, but I also wondered if it would be all that interesting given Facebook’s presence in all of our lives.

Luckily, my best friends since forever and I had dinner beforehand which made walking into the event a little less nerve-racking.  Oh, and a jalapeno blackberry margarita didn’t hurt either.

But I have to tell you, I’m not sure what I was so worried about.  It was actually really nice to see most of the people who were at the reunion.  I spoke to a girl who sat next to me in third grade.  She was the nicest person then, at eight years old, and she is just as nice today.  There were a few people who had seen Keep It Sweet Desserts postings on Facebook and ordered cookies, they came up to me and raved about them.  And then there were others who told me that they voted religiously during the Martha Stewart American Made contest.

Frankly, I was overwhelmed by how many people wanted to hear about my business and tell me how wonderful they think it is.  Of course some of these people had been my friends, but there were others who I didn’t even think knew me way back in my awkward teenage years.  So to all of my UD 2012 classmates, you guys are pretty awesome.

Pumpkin Cinnamon Roll Cheesecake

Meanwhile, it has been such a crazy week that at 6am this morning I headed back from Philly to package lots and lots of desserts.  It was hard to be motivated to come back and work after a week of very little sleep, but then I remembered the Thanksgiving leftovers I’d avoided in my effort to look good for the reunion.  Let’s just say that the last of this cheesecake did not stand a chance.

Pumpkin Cinnamon Roll Cheesecake
 
Pumpkin cheesecake meets cinnamon roll!

Makes: 12 servings
Ingredients
Cinnamon Roll Batter
  • 9¼ ounces all-purpose flour (2 cups)
  • 2 teaspoons baking powder
  • ½ teaspoon table salt
  • 5 ounces granulated sugar (2/3 cup)
  • 4 tablespoons (1/2 stick) unsalted butter, softened at room temperature
  • 1 x-large egg, at room temperature
  • ½ cup whole milk at room temperature
  • 1 tablespoon pure vanilla extract
Pumpkin Cheesecake Filling
  • 2 8-ounce packages cream cheese, softened at room temperature (I actually snuck in fat free cream cheese, SHHH don’t tell!)
  • 2⅛ ounces (1/4 cup, packed) light brown sugar
  • 1⅞ ounces (1/4 cup) granulated sugar
  • ½ ounce (1½ tablespoons) all-purpose flour
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon table salt
  • 2 x-large eggs at room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup canned pumpkin (not pumpkin pie filling)
Cinnamon Filling
  • ⅓ cup unsalted butter, melted
  • 8.25 ounces (1 cup, packed) light brown sugar
  • 3 tablespoons ground cinnamon
  • Cream Cheese Icing
  • 3 ounces cream cheese (preferably light or regular here)
  • 4 tablespoons (1/2 stick) unsalted butter, softened at room temperature
  • 1½ cups powdered sugar
  • ½ teaspoon pure vanilla extract
Instructions
  1. Pre-heat oven to 350 degrees; grease a 9 inch spring-form pan (also, wrap with tin foil if your pan tends to leak like mine); set aside
  2. Prepare cinnamon roll batter
  3. Sift flour, baking powder and salt into a medium bowl; set aside
  4. In the large bowl of an electric mixer, beat sugar and butter on high speed for several minutes or until light and fluffy
  5. Add eggs, milk and vanilla and beat on medium speed until combined; scrape sides of bowl and with mixer on low speed, slowly add in dry sifted dry ingredients; mix just until combined
  6. Spread half of this batter onto the bottom of the spring-form pan, this will be the bottom layer; grease your hands to help press batter down
  7. Prepare cheesecake filling
  8. In the large bowl of an electric mixer, using the whisk attachment, beat cream cheese until light and creamy
  9. Add sugars, flour and seasonings and beat on high speed; scrape the sides of the bowl
  10. Add eggs and vanilla, beat on medium speed
  11. Mix in pumpkin until combined
  12. Pour cheesecake batter over cinnamon roll layer
  13. Prepare cinnamon filling
  14. Stir together butter, brown sugar and cinnamon
  15. Drop spoonfuls of cinnamon filling on top of cheesecake layer
  16. Top that with big drops of cinnamon roll batter; use a knife to carefully swirl the batter
  17. Bake cheesecake for 45-55 minutes or until top is firm and lightly browned
  18. Chill cheesecake in fridge for a few hours or overnight
  19. Prepare cream cheese icing
  20. In the large bowl of an electric mixer, beat butter on high speed until light and creamy
  21. Add powdered sugar and vanilla; mix on low for one minute then beat on high speed for several minutes until frosting is light and fluffy
  22. Pipe or spread icing on cheesecake as desired; I iced around the sides of the cheesecake and piped a big swirl on top to play on the “cinnamon roll” theme
  23. Slice, serve and enjoy!

Even though I LOVE my job now and am so proud of how successful Keep It Sweet Desserts seems to be so far, I still look forward to the weekend.  This week I crammed as much work as possible into Monday-Thursday so that I can spend three full days out of the kitchen and (for the most part) away from the computer.  I seriously can not remember the last time I went for that long of a stretch.  Even last weekend when I had some time to relax I still spent some of each day working and baking.  Being a one-woman-shop has made me appreciate my free time on another level.

Weekend plans in Philly include dinners here and here but obviously the food I’m looking forward to most is ICE CREAM at Franklin Fountain.  Although, this should be pretty fun for lunch tomorrow.  Oh, you are wondering what activities we have planned.  Nothing yet.  We will probably spend the time in between meals walking off all those delicious calories.  It’s all about balance, right?

I am a little bit all over the place this week!  Monday’s post never happened and it is a small miracle I’m getting this one up today.  The new website launched Sunday afternoon and I’m already busy fulfilling orders like a mad woman.  It looks like next week I’ll be up to my eyeballs in matzo!  While the first influx of orders seemed overwhelming at first, once I took a step back and got organized with lists and spreadsheets I felt a lot better.  That really has been the key for me working from home this last week and a half… lots of lists and very specific daily schedules.

Some of you commented that you were interested in hearing about the business so I’ll definitely give you some updates on how things are going and how life has changed.  For one thing, I think my blog post regularity might come in waves.  Whenever I have some KISD downtime, I work on the blog… but sometimes there is none.  I’ll do my best to keep the new recipes coming, though!  And be on the lookout for special discounts or giveaways in upcoming posts.

Next week Passover starts and for those of you who don’t know, it means 8 days without bread, or really anything with leavening… plus a whole list of surprising rules like no peanuts or chick peas (depending on your sect).  Let’s just say I follow the holiday to the best of my ability.  My biggest Passover pet-peeve, though, is the recreation of foods that just aren’t meant to be made without flour, especially when it comes to dessert.  Trust me, a kosher-for-Passover chocolate chip cookie is jut not going to be very good.  So as a result, I’ve made some recipes that lend themselves to being Passover friendly without even trying:

I made these cheesecake bars a few weeks ago after going through my collection of recipes that I’d emailed to myself over time.  There was expired cream cheese in my kitchen that I wanted to bake with and was lacking for ideas.

Luckily I found this recipe on Noble Pig a while ago and was smart enough to save it.  I made just a couple of changes based on ingredients I had on hand and was very happy with the outcome.  The layer of moist mocha cake is topped with a creamy coffee flavored cheesecake.  You can even taste a hint of the liquor that is in there.  Plus, I added cinnamon chips which make almost anything more delicious.

Serves 24

Ingredients:
Cake Layer:
1-1/4 cups all-purpose flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa
2 Tablespoons instant espresso powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup buttermilk
4 tablespoons unsalted butter, melted
Cheesecake Layer:
2 8-ounce packages light cream cheese, softened
1/2 cup granulated sugar
2 eggs
1/4 cup coffee liqueur (I used Starbucks)
1/2 cup mini semi-sweet chocolate chips
1/2 cup cinnamon chips

Directions:
Preheat oven to 350 degrees
Line a 9 x 13 baking dish with parchment paper and spray the paper with non-stick cooking spray
Prepare cake layer; whisk together flour, sugar, cocoa, espresso powder, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl; set aside
Combine buttermilk and melted butter in a small bowl; stir into flour mixture just until combined
Spread cake layer evenly into prepared pan; note that the batter may be thick and you may need to press it down with the back of a spatula
Prepare cheesecake layer; beat cream cheese with an electric mixer on high speed until light and creamy; add sugar and mix on medium speed until combined
Add eggs and liqueur; beat for several minutes or until smooth and creamy
Stir in chocolate chips and cinnamon chips
Pour cheesecake layer over cake batter and bake in center of oven for 25-30 minutes or until cheesecake is set
Refrigerate a couple of hours until cool and completely set
Cut into squares and serve; store remaining cheesecake in the refrigerator.

Ever since I saw Lori’s Chocolate Cheesecake Cake, I have been dreaming of making something that could satisfy my desire to lock myself in a room with the cake and a fork.

And while the last thing I need is an entire cake on my hands (oh wait, I do have an entire cake in my freezer… er…), cupcakes just seem so innocent.  Individual portions, easy to share with friends, harder to eat all at once since you have to unwrap each one… you get the drift.

Well, unfortunately, or fortunately, these cupcakes are anything but innocent.  Light chocolate cake, creamy and mousse-like chocolate cheesecake and a hard chocolate glaze, well, you get my drift.

So if you want to find a husband, get laid be the husband of the year, or turn your children into perfect angels, you might want to make a batch of these not-so-innocent cupcakes.
Chocolate Cheesecake Cupcakes
Makes 24 cupcakes

Ingredients:
Cake Layer:
3 ounces semi-sweet chocolate
6 tablespoons unsalted butter
3/4 cups granulated sugar
1 x-large egg
1 teaspoon vanilla extract
1 1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cups water
Cheesecake Layer:
1 8-ounce packages light cream cheese softened at room temperature
3/4 cups granulated sugar
1 x-large egg
1 tablespoons all-purpose flour
1/2 teaspoon vanilla extract
6 ounces semi-sweet chocolate
2 tablespoons unsalted butter
Glaze:
3/4 cup semi-sweet chocolate chips
3 tablespoons unsalted butter
1 tablespoon light corn syrup
1/4 teaspoon vanilla extract

Directions:
Pre-heat oven to 350 and line 24-cupcake tins with foil or paper cupcake liners
Prepare cake layer; microwave choc and butter in a bowl in 30-second increments stirring in-between until butter and chocolate are completely melted
Stir sugar into melted choc mixture until well blended; beat in eggs one at a time with a whisk
Beat in vanilla
Add 1/2 cup of flour, baking soda and salt and mix well
Add remaining flour alternating with water (starting and ending with flour) stirring in-between each addition just until smooth
Pour into prepared tins, ~2 tablespoons of batter per cup, and bake ~5 minutes or until cake layer is set but still wet
Reduce oven temperature to 325 and prepare cheesecake filling; beat cream cheese with an electric mixer until light, creamy and lumps are gone (about 5 minutes)
Add granulated sugar and combine on medium-high speed well until light and creamy
Beat in egg, on medium speed
Stir in flour
Add vanilla extract and salt and beat until mixture is thick and creamy
Melt chocolate chips and remaining 2 tablespoons of butter in the microwave using the same method as above with 30-second increments; mixture will get very thick
Add chocolate to the cheesecake filling and combine thoroughly
Pour chocolate batter over cake layer and bake for 6-8 minutes or until cheesecake is set
Once cupcakes are cool, prepare glaze; combine chocolate chips, butter and corn syrup in a small pot over low-medium heat and stir constantly until mixture is completely melted
Stir in vanilla and remove from heat; pour glaze over pie
Chill cupcakes in fridge for at least 2 hours and until ready to serve; they will keep in the fridge for a few days

This dessert has been haunting me since it came out of the oven.  I took photos yesterday morning and it was all I could do not to devour the entire pan, sliver by sliver.  These cheesecake bars are not for me so unfortunately (or fortunately) I was forced to keep my mouth shut after a quality control taste.

A thin layer of brownie crust topped with creamy salted caramel and a silky cheesecake layer makes these bars impossible to resist.  The salted caramel layer also adds a depth of flavor that forces you to try another bite.  Need another dessert for Thanksgiving or really something delicious just because? Make these.

Salted Caramel & Brownie Cheesecake Bars

Brownie Layer:
2 ounces unsweetened chocolate
6 tablespoons unsalted butter
1 cup granulated sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup all-purpose flour

Cheesecake Layer:
2 8-ounce blocks reduced fat cream cheese, softened at room temperature
1 1/2 cup granulated sugar
3 eggs
2 tablespoons all-purpose flour
1 teaspoon vanilla extract

Caramel Layer:
1 11-ounce bag of caramel bits
1/3 cup milk (any type)
1 teaspoon sea salt

Pre-heat oven to 350 degrees

Line a 13×9 pan with parchment paper; set aside

Melt chocolate and butter in a medium saucepan over low to heat, stirring constantly

Remove from heat

Stir in sugar

Stir in eggs and vanilla

Whisk in flour until smooth

Pour batter into prepared pan and bake for ~8 minutes or until center is glossy and edges start to look cooked

While brownie layer is cooling, prepare cheesecake filling

Reduce oven temperature to 325 degrees

Beat cream cheese with an electric mixer using the whisk attachment; beat on high until cream cheese is smooth and creamy

Beat in sugar

Mix in eggs

Stir in flour

Stir in vanilla and set aside

Place caramel bits and milk in a microwaveable bowl

Heat in microwave 30 seconds at a time, stirring between each, until completely melted and smooth

Pour caramel over brownie layer; sprinkle salt over that

Pour cheesecake batter over brownie and caramel

Bake for 35-40 minutes or until edges begin to come apart from sides of pan and cheesecake is set

A couple of weeks ago, Jennie of In Jennie’s kitchen lost her husband, Mikey suddenly to a heart attack.  While I don’t know her personally, I’ve visited her blog a couple of times and my heart broke for her.  She invited us to celebrate Mikey’s life with his favorite peanut butter pie.

Hearing about such a tragedy only reminded me of how lucky I am for each day I get to enjoy with my loved ones.  Whether it is via email, facebook, phone or in person, I’m thankful for each “touch” I get with them.  Too often I get wrapped up in the busy days, stressful moments and minute problems to appreciate all of the good things.

When I finally got some time in the kitchen this week, I wanted to support Jennie, even if I was little late.  Since she was talking about her husband’s favorite pie, I thought I should make something with love for my husband (who, we all know, dislikes peanut butter).  I know that the combination of chocolate chip cookie and cheesecake is one of his favorite things, so I created a spin on that in pie form.  The chocolate chip cookie crust, creamy cheesecake filling and rich chocolate glaze were all made with love.

Serves 8-10

Ingredients

1 1/2 cups chocolate chip cookie dough

Cheesecake filling:
1 8-ounce package reduced fat cream cheese, softened at room temperature
1/2 cup fat free sweetened condensed milk
1 large egg
1 teaspoon vanilla extract

Chocolate Glaze:
3/4 cup semi-sweet chocolate chips
3 tablespoons unsalted butter
1 tablespoon light corn syrup
1/4 teaspoon vanilla extract

Directions
Pre-heat oven to 325 degrees and spray a 9-inch pie plate with non-stick cooking spray
Press cookie dough into bottom and around sides of prepared pie plate; bake for 10 minutes
While crust is baking, beat cream cheese with whisk attachment of electric mixer for several minutes or until light and creamy
Add sweetened condensed milk, egg and vanilla and beat until well combined
When crust is ready, pour cheesecake mixture into pie crust
Bake 15-20 minutes or until filling is firm; set aside
Combine chocolate chips, butter and corn syrup in a small pot over low-medium heat and stir constantly until mixture is completely melted
Stir in vanilla and remove pot from heat; pour glaze over pie
Refrigerate 4 hours or overnight

It’s Margarita Time

Margarita Cheesecake Bars with a Pretzel and Cookie Crust

This is one of those recipes that I came up with accidentally.  Sometimes I have bakers block and can’t think of anything new or interesting to make.  I was inspired by Victoria’s cookies and wanted to do something with lime and salt.  Then I remembered the cream cheese in my refrigerator and eventually these Margarita Cheesecake Bars were born.Margarita Cheesecake Bars with a Pretzel and Cookie Crust

Thanks to a combination of Vienna fingers and pretzels, they have a wonderfully balanced sweet and salty crust.  Topped with a layer of light but creamy lime cheesecake they become a perfect summer treat.  The lime and the salt reminiscent of a margarita and who doesn’t like that?

Ok, I’ll be honest- I’m not the biggest margarita fan.  I prefer to save my sugar calories for more important things like dessert.  Cheesecake and a Vodka Soda with lime juice for me, please.

Margarita Cheesecake Bars

Yield: Serves 16

Ingredients

  • 3/4 cup Vienna Finger (or vanilla sandwich cookie of choice) crumbs (about 6 cookies)
  • 3/4 cup salted pretzel crumbs (about 1 1/2 cups of small pretzels)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 2 8-ounce blocks light cream cheese, softened
  • 3/4 cup sweetened condensed milk (I used fat free)
  • 2 eggs
  • 1/4 cup fresh lime juice (~2 limes)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Cooking Directions

  1. Pre-heat oven to 350 degrees
  2. Grease a 9×9 baking pan and set aside
  3. In a medium bowl, combine cookies, pretzel crumbs, butter, sugar and salt
  4. Press crust mixture into prepared baking pan and bake for ~7 minutes or until lightly browned; set aside
  5. Using an electric mixer and the whisk attachment, beat cream cheese on high for a few minutes until creamy
  6. Add sweetened condensed milk and beat into cream cheese
  7. Beat in eggs, lime juice and vanilla
  8. Stir in flour
  9. Pour cheesecake mixture over crust and bake for 25 minutes or until firm and edges are separating from pan

Let’s talk about this dessert.

Let’s talk about how many emails my mom and I exchanged regarding the details of this dessert.

Ok, let’s not, because it is a little embarrassing.  Let’s just say I started craving cheesecake around 7am every day over the course of a week or so.  No big deal.

We can’t help ourselves.  What is more fun to talk about than how you are about to gain 10 pounds your next dessert creation?

Cheesecake. Caramel. Brownie. Ganache.  Cashews. This is my life.  Sorry I’m not sorry.

After salivating over seeing this masterpiece on Sprinkle Bakes, I couldn’t stop thinking about it.  So many delicious components in one place, her recipe is genius!

But I do want my pants to fit, and trust me that isn’t easy these days.  So we brainstormed and we emailed and we emailed some more until we found our perfect balance of insane decadence and self-control.  I’m talking self-control with ingredients, not eating.  One step at a time.

What my mom ended up creating was almost perfection.  I may have to recreate it soon because I don’t have step-by-step photos or even a full photo for you.  Ok, or I just want to eat it again.

Inspired by Sprinkle Bakes

Ingredients:

1 batch of brownies baked in an 9-inch cake pan (we used No Pudge)

½ batch of Low Fat Banana Cheesecake without the crust prepared in an 9-inch cake pan

1/3 cup caramel sauce of choice

½ cup chopped cashews or cashew clusters

1 batch Chocolate Ganache & Gananche Frosting

Directions:

Remove cooled cheesecake from pan and freeze for 1-2 hours

When cheesecake is ready, remove cooled prepared brownie from pan and place on a serving plate

Drizzle caramel sauce over brownie and top with chopped cashews

Top that layer with cheesecake and put dessert in freezer

While dessert is freezing, prepare Ganache as directed.

Remove dessert from freezer and top the cheesecake with ganache; ice entire dessert with the Ganache Frosting

Store dessert in refrigerator before serving

Notes:

The Cheesecake Brownie may be easier to slice if frozen

I recommend lining your cake tins with wax paper for easy removal of brownie and cheesecake[/print_this]

When I saw these sitting on my counter the yesterday, I knew something needed to be done.

Since I had plans last night to go to a Passover dinner at my sister’s, I wanted to make something that would be kosher-friendly.  Then I realized cheesecake is almost entirely flour-free.  The only real issue is the typical cookie crust.

My mom made a non-fat banana cheesecake a few years ago that was really delicious.  I remember being so impressed by the creaminess despite using fat-free cream cheese.  This time around, I used light cream cheese for half to prevent the cheesecake from being too dense.

Instead of using graham crackers, I made an almond crust.  So not only is this cheesecake Passover friendly, but it is also gluten-free.

Start by making your crust; grind almonds in a food processor until nuts are in very small pieces with some crumbs

Mix almonds with granulated sugar and then add melted butter

When crust ingredients are combined, press them down in a spring-form pan sprayed with cooking spray and wrapped tightly with tin foil

Bake crust for ~7 minutes or until nuts are lightly browned

While crust is cooling, make cheesecake batter; beat cream cheese at high speed with the mixer whisk attachment for several minutes or until it is light and creamy

Add non-fat greek yogurt and mix well

Mix in the banana, sugar and vanilla at medium-high speed

Then, add your eggs, one at a time, mixing at medium speed

When batter is creamy and all ingredients are combined, pour into prepared pan; place uncooked cheesecake in a roasting pan and fill the pan with water to ~1/3 the height of the cheesecake

Bake in center of oven for about 1 hour and 20 minutes or until top is firm

Chill cheesecake in refrigerator for 12 hours or until set; when ready to serve, carefully use a knife to skim the edge of the cheesecake and separate from the pan

  • 3/4 cup whole almonds (if using unsalted, add a dash of salt to crust ingredients)
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter, melted

Cooking Directions

  1. Pre-heat oven to 350 degrees
  2. Grind almonds in a food processor until nuts are in very small pieces with some fine crumbs
  3. Mix almonds with granulated sugar and salt (if needed); stir in melted butter
  4. When crust ingredients are combined, press them down in a 9-inch spring-form pan sprayed with cooking spray and wrapped tightly with tin foil
  5. Bake crust for ~7 minutes or until nuts are lightly browned

Low Fat Banana Cheesecake

Ingredients

  • 2 8-ounce blocks fat free cream cheese, softened at room temperature
  • 2 8-ounce blocks light cream cheese, softened at room temperature
  • 1 cup fat free greek yogurt, plain
  • 1 1/2 cups sugar
  • 1 1/2 cups mashed ripe bananas (~3 medium)
  • 2 teaspoons vanilla extract
  • 4 large eggs

Cooking Directions

  1. Reduce oven temperature to 325 degrees once crust is finished baking
  2. While crust is cooling, make cheesecake batter; beat cream cheese at high speed with the mixer whisk attachment for several minutes or until it is light and creamy
  3. Add non-fat greek yogurt and mix well
  4. Mix in the banana, sugar and vanilla at medium-high speed
  5. Then, add your eggs, one at a time, mixing at medium speed
  6. When batter is creamy and all ingredients are combined, pour into prepared pan; place uncooked cheesecake in a roasting pan and fill the pan with water to ~1/3 the height of the cheesecake
  7. Bake in center of oven for about 1 hour and 20 minutes or until top is firm
  8. Chill cheesecake in refrigerator for 12 hours or until set; when ready to serve, carefully use a knife to skim the edge of the cheesecake and separate from the pan
  9. Serve topped with mixed berry sauce (recipe coming) or fresh whipped cream

Lemon Blackberry Cheesecake Bars

In case you didn’t know, Julie at Willow Bird Baking is hosting a cheesecake challenge.  This girl has made some unbelievable looking cheesecakes and has a hilarious video with some delicious results.  I don’t know how she came up with so many wonderful flavor combinations but I’m glad she did!

You all know I have mixed feelings about lemon, so I wouldn’t have normally chosen the Lemon Blueberry Cheesecake Squares with Shortbread Crust However, the husband requested it so why not?  Besides, it wouldn’t be much of a challenge if I used the same flavors I usually do.

I forgot to pick up blueberries yesterday, so I went with blackberries instead.  The texture adds a nice component to the creamy cheesecake and they are just a little tart when you bite into them.  It actually works very well with the lemon.

And as for the lemon cheesecake?  I’ll give it to Julie, it is perfectly balanced.  I wasn’t overwhelmed by the flavor but it was extremely refreshing.  This would actually be a perfect dessert for a summer barbeque.

I used Julie’s recipe with the just a few changes:   white whole wheat flour in the crust, light cream cheese rather than regular, I added a teaspoon of vanilla to the batter and obviously blackberries instead of blueberries.

Start by making the crust; place flour and confectioners’ sugar in a food processor

Press crust into a pan lined with parchment paper

Bake until lightly browned

While crust is cooling, beat softened cream cheese on high speed until fluffy

Black and White and Loving Vanilla Bean

My sister’s 23rd birthday is coming up, and she is having a cocktail party* to celebrate.  The color scheme for the evening is black and white so I am helping out by baking desserts with those colors.  The first thing that came to my mind was black and white cheesecake bars.  That is slightly ironic given that Jessica doesn’t like cheesecake.  However, she doesn’t eat gluten either, so most of the desserts are not even for her.

*way for twenty-somethings to get drunk and feel classy

Vanilla Bean and Chocolate Cheesecake Bars

I started by adapting this recipe for Pumpkin Chocolate Cheesecake Bars.  I swapped gingersnap crust with Oreo and got rid of the pumpkin.  But then I thought, how could make it even more special?  Instead of using just a plain cheesecake layer for the “white”, I made it vanilla bean.  Wow, this took the dessert to a whole new level.  I’d never baked with vanilla bean before and I think I might be hooked!  When you take a bite of the Chocolate and Vanilla Bean Cheesecake Bars, you get a sweet creamy layer and then that chocolate crunch from the crust.  The rich chocolate cheesecake layer comes through next, but then when you think you are done, the vanilla bean kicks in.  Layers of flavors are what make desserts stand out.  Make these.

To make the crust, grind up about 17 Oreos in a food processororeos in food processor

Set cookie crumbs aside

Melt butter; add melted butter and sugar to cookie crumbsmixing crust

Press mixture into a 9×13 pan lined with tin foil and cooking spray; spread evenly using fingers to push down crust mixture and set aside

To make your cheesecake filling, beat cream cheese in mixer until light, creamy and lumps are gone (about 5 minutes)

Add granulated sugar and combine on medium-high speed well until light and creamy

Beat in eggs, one at a time, on medium speed

Add your vanilla extract and salt and beat until your mixture is thick and creamy

Now, separate 1/2 of the cheesecake filling and set aside in a separate bowl

Split the vanilla bean open with a sharp knife

Scrape out the awesomeness of the vanilla bean with the back of the knife

Add vanilla bean to the batter and stir

Melt chocolate chips and butter in a small saucepan over low heat or in the microwave; mixture will get very thick

Add chocolate to the filling still in the mixer and combine thoroughly

Pour chocolate batter over crust and bake for 15 minutes

Remove from oven and pour remaining cheesecake filling on top vanilla bean batter

Bake for 33-38 minutes or until edges begin to separate from foil and middle bounces slightly when touched

Refrigerate for at least 4 hours or overnight

Remove cheesecake from pan and cut into small bars

Ingredients

 

  • 1 1/4 cups Oreo cookie crumbs (about 17 cookies); I used reduced fat Oreos
  • 2 tablespoons granulated sugar
  • 6 tablespoons (3/4 stick) unsalted butter, separated
  • 2 8-ounce packages light cream cheese softened at room temperature
  • 1 3/4 cups granulated sugar
  • 3 large eggs
  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 vanilla bean (if leaving this out, replace with 1 tablespoon of additional vanilla extract)
  • 1 pinch of salt
  • 6 ounces semi-sweet chocolate chips

 

Cooking Directions

 

  1. Pre-heat oven to 325 degrees
  2. Line a 13×9 pan with tin foil and spray with cooking spray, set aside
  3. To make the crust, grind up about 17 Oreos in a food processor until fine; set cookie crumbs aside
  4. Melt 4 tablespoons of butter in the microwave and pour over cookie crumbs
  5. Add 2 tablespoons of granulated sugar and mix until well combined

  7. To make your cheesecake filling, beat cream cheese in mixer until light, creamy and lumps are gone (about 5 minutes)

I used light cream cheese because I wanted a final product that wasn’t overly rich, but regular cream cheese would work as well

 

When cutting the bars, I recommend cleaning your knife with a paper towel between slices to keep from contaminating the layers with one another

Peanut Butter Cheesecakes with Pretzel Crust

You already know that my pants don’t fit.  I don’t know about you, but I find it nearly impossible to diet around this time of year.  It is so cold out that the last thing I want to eat is salad.  What really appeals to me are dishes like chili, lasagna, fresh baked cookies… comfort food.  Add on holiday celebrations, office treats, and Christmas candy sales; I am hopeless.  Well, it is fair to say that I won’t lose any weight in the last week or so of December, but I will do anything I can not to gain more weight.  As a result, I am making an effort to lighten up some of the desserts I am making over the next few hours weeks.

Honestly, I don’t do well “giving up” anything. I don’t do well with portion control either.  The first step in trying to combat that is pre-portioning desserts.  The other thing I like to do is take out some of the fat and calories where it won’t be missed.  Previously I’ve made ice cream desserts that taste delicious but are made with lots of low-guilt ingredients.  Well, I decided to make Individual Peanut Butter Cheesecakes using lower fat cream cheese with a few more decadent ingredients to balance them out.

These cheesecakes are made with a crunchy pretzel crust, a creamy peanut butter filling and chocolate chips snuck in as a layer above the crust and throughout batter.  By the way, you’d be so proud of me.  I only ate two of them!  That may or may not be because I gave some to friends and left the rest in my parents fridge.  Sorry, Mom:-)

This recipe is actually very easy and revolves mostly around a food processor.  I figured if I needed to take out the appliance for making a crust, I might as well use it for the cheesecake batter too!

To begin, fill up your food processor with salted pretzels

Run them through until they are mostly fine crumbs

In a small bowl, pour melted butter over the pretzel crumbs

Stir until all of the crumbs are moist

Mixing crust

Press a couple tablespoons of crust ingredients into two muffin tins sprayed with non-stick cooking spray; bake for about 6 minutes

When crust comes out of oven, layer with several milk chocolate and caramel chips

Regular chocolate chips would also work, but I really like the combination of caramel, chocolate and peanut butter; set pan aside

Meanwhile, prepare cheesecake batter; you can shake out the crumbs from the food processor, no need to wash it

Cream 2 blocks of cream cheese in the food processor

Add sugar, flour, vanilla and salt

Combine well

Add your eggs

Measure 1 cup of peanut butter chips

Microwave about 45 seconds and stir; microwave in additional 20 second increments until chips are melted; note this will be very thick

Add peanut butter to cheesecake batter

Process until smooth and creamy

Pour cheesecake batter into a separate bowl and fold in chocolate chips

Use a small ladle or large spoon to put about 1/3 of a cup of batter in muffin tins

Bake cheesecakes for about 15 minutes or until mostly firm

Serve drizzled with chocolate and caramel or sprinkled with pretzel crumbs

Individual Peanut Butter Cheesecakes, lightened up

Makes 24 mini-cheesecakes

Ingredients:

1 1/2 cups finely ground pretzel crumbs

4 tablespoons melted butter

3/4 cup + 2 tablespoons granulated sugar, separated

1 8-ounce block fat free cream cheese, softened

1 8-ounce block reduced fat cream cheese, softened

2 tablespoons all-purpose flour

1 teaspoon vanilla

1/2 teaspoon salt

2 eggs

1 cup peanut butter chips*, melted

1/2 cup milk chocolate and caramel chips

1/2 cup mini semi-sweet chocolate chips

Directions:

Pre-heat oven to 350 degrees

To begin, fill up your food processor with salted pretzels and run them through until finely ground

In a small bowl, pour melted butter over the pretzel crumbs

Add 2 tablespoons sugar and stir until all of the crumbs are moist

Press mixture into two sets of muffin tins sprayed with non-stick cooking spray; bake for 6 minutes

When crust comes out of oven, sprinkle a few milk chocolate and caramel chips into each cup; set aside

Shake crumbs out of food processor and use it to prepare cheesecake batter

Cream 2 blocks of cream cheese in the food processor

Add sugar, flour, vanilla and salt; cream until well combined

Add eggs and mix well

Add melted peanut butter chips to cheesecake batter and process until smooth and creamy

Pour cheesecake batter into a separate bowl; fold in chocolate chips

Use a small ladle or large spoon to put about 1/3 of a cup of batter into each cup

Bake cheesecakes for about 15 minutes or until tops are mostly firm

Notes:

*You can replace these with regular peanut butter (not natural)

The peanut butter flavor isn’t really strong; some people may prefer this but I may try increasing the amount of peanut butter chips next time (using regular peanut butter could also help)

My favorite pumpkin chocolate cheesecake bars of all time!

I may have served eight (yes, 8) varieties of pick-up desserts at my Thanksgiving with Friends, but these Pumpkin Chocolate Cheesecake Bars won me over as the number one pick for the evening.  That wasn’t easy because all of the desserts were decadent and delicious.  Maybe it was the combination of two of my favorite flavors, pumpkin and chocolate.  Maybe it was the surprising spice from the gingersnap cookie crust.  Maybe it was the lovely creamy texture with a perfect thin crispy crust in one bite.  Maybe it was the balance of richness and lightness that allows you to eat not just one, but four two.  Frankly, it doesn’t matter.  These are delicious and if you like the sound of any of that, you must make them.

We have these every year because they are SO good!

I saw Sharon’s recipe on the Curvy Carrot about a month ago and new right away I had to make it myself.  There were a couple of modifications, but the recipe is largely based on hers.  Just like she said, they were easy but a little time consuming.  Definitely worth every minute, though!

  • 275g (2 cups + 2 tablespoons) gingersnap cookie crumbs (about 35 cookies)
  • 85g (6 tablespoon) unsalted butter
Filling:

  • 371g (1¾ cup) granulated sugar
  • 165g (3 large) whole eggs
  • 16g (2 tablespoons) all-purpose flour
  • 240g (1 cup) pumpkin puree (not pumpkin pie filling)
  • 5 milliliters (1 teaspoon) vanilla
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ½ g (1/8 teaspoon) salt
  • 170g (6 ounces) semi-sweet chocolate, roughly chopped
  • 28g (2 tablespoons) unsalted butter
Instructions
  1. Pre-heat oven to 325 degrees
  2. Line a 13×9 pan with tin foil and spray with cooking spray, set aside
Prepare crust:
  1. Stir together gingersnap crumbs and melted butter
  2. Spread evenly into prepared pan using fingers to push down crust mixture and set aside
Prepare filling:
  1. In the large bowl of an electric mixer with whisk attachment, whip cream cheese on medium high speed for several minutes until creamy and lumps are gone
  2. Add granulated sugar and combine on medium-high speed well until light and creamy
  3. Beat in eggs, one at a time, mixing on medium speed in-between; mix in flour on low speed
  4. Add pumpkin, vanilla, cinnamon, ginger, nutmeg, and salt and mix on medium speed until mixture is thick and creamy
  5. Now, separate 380 grams (1¾ cups) of the pumpkin cheesecake filling and set aside in a large bowl
  6. Melt chocolate chips and butter in a small saucepan over low heat; mixture will get very thick
  7. Add chocolate to the pumpkin filling that you set aside and stir thoroughly
  8. Pour chocolate batter over crust and bake for 15 minutes
  9. Remove from oven and pour remaining pumpkin cheesecake filling on top
  10. Bake for 35-45 minutes or until edges begin to separate from foil and middle bounces slightly when touched
  11. Refrigerate for at least 4 hours or overnight
  12. Remove cheesecake from pan and cut into small bars
