Life has been so hectic here, and I suspect I’m not alone. With busy work schedules, back-to-school time and life in general, sometimes cooking or baking for the family can take a back seat. There are so many weeks that I’m scrambling to find a few things in my fridge to throw together so that L, Matt and I are well fed. Keeping those last minute meals interesting without going crazy sometimes seems to be an impossible task.

That’s why I was really excited to receive a copy of Five-Ingredient Recipes, A Cookbook for Busy People in the mail a few weeks ago. Not only are there interesting dinner recipes that most families will enjoy, but there are also fun and super easy dessert recipes as well. I’ve been seriously slacking in the baking department lately so I was thrilled to find a sweet treat recipe that required minimal time and ingredients. Something that I can make with ingredients in my pantry AND get done while L takes his (sometimes way too short) nap is a huge win.

Fast and Easy Five Ingredient Recipes

For some crazy reason I’ve never made fudge before, so when I found the recipe for Peanut Butter Fudge in Phi’s cookbook I couldn’t wait to get “cooking.” And I use that term lightly because All I had to do was microwave, stir and chill. This recipe is beyond easy to make and the result is rich, delicious and kind of addicting. Exactly what you want out of a dessert.

Chocolate Peanut Butter Swirl Fudge
 
Super easy homemade peanut butter and chocolate fudge made with just four ingredients!

Makes: 16-24
Ingredients
  • 130g (1/2 cup) creamy peanut butter (not all-natural)
  • 20g (2 tablespoons) powdered sugar
  • 340g (2 cups) good-quality semi-sweet chocolate chips
  • 114-ounce can sweetened condensed milk
  • Flaky sea salt (optional, my addition)
Instructions
  1. Line an 8 or 9-inch square baking pan with parchment paper, leaving enough overhang for pan removal later; set aside
  2. In a small microwaveable bowl, heat peanut butter for thirty seconds on high heat; stir in powdered sugar; set aside
  3. Place chocolate chips and sweetened condensed milk in a large microwaveable bowl; heat for thirty seconds on high and stir; repeat once or twice until chocolate is completely melted and mixture is smooth (it will get thick quickly); immediately spread in prepared baking pan
  4. Spoon peanut butter mixture over chocolate and use a knife to swirl peanut butter into chocolate; sprinkle lightly with sea salt if desired
  5. Chill pan in freezer for thirty minutes or fridge for one hour; once chilled, remove fudge from pan by using sides of parchment paper to lift it up; place on a cutting board and slice
  6. Serve immediately or store leftovers in fridge for up to a week

Vanilla Bean Cheesecake Bars

Cheesecake bars are an easier but equally delicious way to enjoy cheesecake.

To be honest, I’ve barely baked over the last few weeks. Last week I made ice cream (recipe coming soon, it was pretty much the best ever) and a simple Passover dessert, but that was it. Between our week in Florida and every day life chasing L around the apartment, it’s tough to get something into the oven. Plus, I think I’ve subconsciously been taking a break to get extra pumped up to bake for my sister’s upcoming shower.

So these cheesecake bars are already from about two months ago now. Matt had requested vanilla bean cheesecake at some point and I used the excuse of having friends over for dinner to indulge him. Instead of making a regular cheesecake, though, I decided to keep things simple and make cheesecake bars. For any of you who are nervous to bake cheesecake for the first time, that is the way to go. It’s so much easier!

An incredible dessert recipe!

The vanilla bean cheesecake bars were a huge hit. The Oreo crust was chocolaty and crisp and the filling was ultra creamy with vanilla beans speckled throughout. We each enjoyed more than our fair share of cheesecake because it really was delicious. I might have also eaten a couple pieces too many out of the leftovers the next day.

Makes: 36 small bars
Ingredients
Crust:
  • 250g (2⅓ cups) Oreo cookie crumbs (about 20 cookies)
  • 57g (4 tablespoons) unsalted butter, melted
  • 27g (2 tablespoons) granulated sugar
Cheesecake Filling:
  • 454g (2 8-ounce packages) light cream cheese softened at room temperature
  • 370g (1¾ cups) granulated sugar
  • 165g (3 large) whole eggs at room temperature
  • 16g (2 tablespoons) all-purpose flour
  • 5 milliliters (1 teaspoon) vanilla extract
  • The inside of 1 vanilla bean (if leaving this out, replace with 1 tablespoon of additional vanilla extract)
  • ½g (1/8 teaspoon) salt
Instructions
  1. Pre-heat oven to 325 degrees
  2. Line a 13x9 pan with parchment paper and spray with nonstick cooking spray, set aside
Make the crust:
  1. In a medium bowl, stir together cookie crumbs, melted butter and sugar
  2. Press crumb mixture into prepared baking pan; spread evenly using fingers to push down crust and set aside
  3. To make your cheesecake filling, beat cream cheese in mixer until light, creamy and lumps are gone (about 5 minutes)
  4. Add sugar and combine on medium-high speed well until light and creamy
  5. Beat in eggs, one at a time, on medium speed
  6. Mix in flour on medium speed
  7. Add vanilla extract, vanilla bean and salt and beat until mixture is thick and creamy
  8. Pour cheesecake batter over crust and bake for 36-40 minutes or until edges begin to separate from foil and middle bounces slightly when touched
  9. Refrigerate for at least 4 hours or overnight
  10. Remove cheesecake from pan and cut into bars
  11. Store in refrigerator and enjoy within five days of baking

The Fudgiest Fleur de Sel Brownies

The fudgiest brownies you will ever eat topped with fleur de sel are rich, decadent and completely satisfying.

These brownies are, what I like to call, a piece of ultimate chocolate bliss. They are thick and ultra fudgy, studded with chocolate chips, layered with a naturally crackly top and sprinkled with fleur de sel. They aren’t too sweet but they are chocolatey and rich. The salt sprinkled on top helps cut the sweetness, though, with just the right amount of contrast. Eaten alone, with a cup of dark coffee or warm topped with vanilla ice cream, they are pure brownie perfection.

In fact, I’m having major regrets that I brought them to my brother-in-law’s house for a family event and had to leave before dessert was served. Of course I got to taste them beforehand, but ever since that day I’ve had the biggest brownie craving ever. Luckily, brownies are generally very easy to make and, if I dare, I might just have to whip up a batch soon.

No one can stop raving about these brownies, best brownies ever!

Make them for your next party, new mom friend or to keep in the freezer as a secret stash. I won’t tell!

  • Brownies:
  • 256g unsweetened chocolate, roughly chopped
  • 340g (1½ cups / 3 sticks) unsalted butter
  • 415g (~2 cups) granulated sugar
  • 400g (~1¾ cups, packed) light brown sugar
  • 275g (~5 large) whole eggs, at room temperature
  • 20 milliliters (4 teaspoons) vanilla extract
  • 290g (~2 cups + 2 tablespoons) all-purpose flour
  • 2g (1/2 teaspoon) salt
  • 135g (3/4 cup) semi sweet chocolate chips
  • 135g (3/4 cup) milk chocolate chips
  • 1g (3/4 teaspoon) fleur de sel
Instructions
  1. Pre-heat oven to 350 degrees;
  2. Line a 9x13 baking pan with parchment paper; set aside
  3. In a medium bowl, whisk together flour and salt; set aside
  4. Melt butter and chocolate in large pot over low to medium heat; remove when melted
  5. Stir in sugar until combined; stir in eggs and vanilla until smooth
  6. Whisk in flour mixture just until combined; do not overmix; fold in chocolate chips
  7. Pour batter into prepared baking dish and sprinkle with fleur de sel
  8. Bake 40-45 minutes or until a knife comes out clean from center
  9. Set brownies aside to cool completely before removing from pan and cutting
Notes
Brownies can be baked ahead of time (store well-wrapped in freezer up to two months or at room temperature up to three days); frost day of serving for best results

You might argue that this is no longer a blondie based on its shade, but I beg to differ. That important base of butter and brown sugar is intact. In fact, I used T-Sugars’ Belgium Cassonade Sugar in this recipe and thanks to its ultra soft texture and caramelized flavor, the blondie feel and flavor is not only there, but actually prominent in a very good way. Chewy but crackly, Sweet but flavorful. And while there is cocoa powder in the recipe, the hint of chocolate is like a treat to the palate, not an overbearing forethought.

The blondies have been filled with white chocolate chips which add a nice texture and sweetness to the mix. And that powdered sugar dusting? It’s a special touch for appearance made easy with the Icing Sugar Mill I received in my T-Sugars package. Gourmet finely powdered sugar without the massive mess? Yes!

Wondering what’s so special about T-Sugars? The company specializes in gourmet high-quality sugars and while traditional brown sugar can be used in this recipe, I found that the T-Sugars’ Belgian Cassonade Sugar resulted in a stronger caramel flavor and better chewy texture in this blondie. It wasn’t even a contest.

Ingredients
  • 350 grams (~1½ cups firmly packed) T-Sugars' Cassonade Sugar (gourmet brown sugar)
  • 113 grams (1/2 cup) unsalted butter
  • 130g (1 cup) all-purpose flour
  • 20g (¼ cup) unsweetened cocoa powder
  • 5 grams (1 teaspoon) salt
  • 21/2 grams (1/2 teaspoon) baking powder
  • 110 grams (2 large) whole eggs
  • 5 milliliters (1 teaspoon) vanilla extract
  • 10 milliliters (2 teaspoons) red food coloring
  • 170 grams (1 cup) white chocolate chips
  • T-Sugars' Icing Sugar
Instructions
  1. Pre-heat oven to 350 degrees
  2. Line a 9×9 pan with parchment paper; set aside
  3. In a medium saucepan, heat Cassonade Sugar and butter over medium heat and stir constantly until melted into a thick golden brown mixture; set aside
  4. Whisk flour, cocoa powder, salt and baking powder in a medium bowl; set aside
  5. In a large bowl, whisk eggs vanilla, and red food coloring until combined
  6. Whisk in brown sugar butter mixture
  7. Slowly whisk in flour mixture just until combined
  8. Stir in chips
  9. Pour batter into prepared pan and bake for 30-34 minutes or until top begins to crack and a knife or toothpick comes out clean
  10. Allow to cool; sprinkle with Icing Sugar before serving

I’ve talked in the past about how, as a kid, I never wanted traditional birthday cake. For years my first choice dessert was a Baskin-Robbins’ ice cream pie followed by brownies as a close second. Cookie cake didn’t fall too far behind. My poor buttercream-loving mother is probably hanging her head remembering those days.

I’ve since come around and love birthday cake, but all of those other desserts still hold a special place in my sweets-loving heart.

Of course the brownies I remember were just brownies. Fudgy? Yes. Delicious? Yes? But frosting, definitely not. I really was missing out as a child. This fluffy buttercream isn’t necessary but man oh man does it add something special to the brownies. It’s creamy and light and makes the thick fudgy brownie extra indulgent. Brownies never looked so good for a birthday before!

Brownies:

  • 89 milliliters (6 tablespoon) strong brewed espresso (4 grams (1½ tablespoons) espresso + 89 milliliters (6 tablespoons) water))
  • 10 milliliters (2 teaspoons) vanilla extract
  • 290g (~2 cups + 2 tablespoons) all-purpose flour
  • 2g (1/2 teaspoon) salt
Vanilla Buttercream
  • 280g (19½ tablespoons) unsalted butter, softened at room temperature
  • 300g (1⅞ cups) powdered sugar
  • 33 milliliters (2¼ tablespoons) milk, any type
  • 11 milliliters (2 teaspoons) vanilla extract
  • 1g (1/8) teaspoon salt
Instructions
For the Brownies:
  1. Pre-heat oven to 350 degrees;
  2. Line a 9x13 baking pan with parchment paper; set aside
  3. In a medium bowl, whisk together flour and salt; set aside
  4. Melt butter and chocolate in large pot over low to medium heat; remove when melted
  5. Stir in sugar until combined; stir in eggs, espresso and vanilla until smooth
  6. Whisk in flour mixture just until combined; do not overmix
  7. Pour batter into prepared baking dish and bake 40-45 minutes or until a knife comes out clean
  8. Set brownies aside to cool completely before removing from pan prepare frosting
For the Buttercream:
  1. In the bowl of an electric mixer with a paddle attachment, beat butter on medium speed for eight minutes or until pale and creamy
  2. Add half of powdered sugar, mix on low for 30 seconds
  3. Add remaining powdered sugar, milk, vanilla and salt; mix on low for one minute and then increase speed to medium and beat for six minutes or until very light and fluffy
  4. Use a flat metal spatula to frost the brownies

It was very difficult for me to set aside my own personal distaste for nuts in blondies and brownies and throw some crunchy toasted pecans into these blondies. But Thanksgiving is coming and it would be a shame to let it pass by without a dessert that combines my love for blondies with an infamous Thanksgiving dessert.

Brown Butter Chocolate Pecan Blondies - make them for Thanksgiving!

I actually never cared for pecan pie until I started putting chocolate in it. So, I figured if I put enough chocolate in these blondies, all would be right with the world and they would actually be quite delicious. Mission accomplished!

These blondies start with everyone’s favorite brown butter which adds a warm, nutty flavor to the bars. Then they are loaded with brown sugar (necessary), chopped dark chocolate (also necessary to maximize chocolate enjoyment) and toasted pecans (important for flavor development). They won’t take you too long to make and don’t require any complex baking skills. In fact, you don’t even need a mixer to make these blondies (or any of my blondies for that matter).

Makes: 12 servings
Ingredients
  • 100g (1 cup) pecans, roughly chopped
  • 112g (1/2 cup) unsalted butter
  • 350g (~1½ cups packed) light brown sugar
  • 200g (~1½ cups) all-purpose flour
  • 8g (1 teaspoon) salt
  • 3g (1/2 teaspoon) baking powder
  • 110g (2 large) whole eggs
  • 10 milliliters (2 teaspoons) vanilla extract (bourbon based preferred)
  • 112g (~3/4 cup) good quality dark chocolate, roughly chopped (use the highest percent cocoa you enjoy)
Instructions
  1. Pre-heat oven to 350 degrees; line an 8×8 or 9×9 baking pan with parchment paper
  2. Spread pecans out in baking pan and place in oven for five minutes to toast; do not let burn
  3. Remove from oven and set aside to cool
  4. In a medium-sized saucepan over medium-high heat, brown the butter (stir butter constantly until it turns an amber/light brown color) and remove from heat; stir in sugar until well combined and set aside to cool slightly
  5. In a medium bowl, whisk together flour, salt and baking powder; set aside
  6. In a large bowl, whisk together eggs and vanilla; whisk in butter and sugar mixture
  7. Whisk in flour mixture until almost combined and then fold in any remaining crumbs with a spatula
  8. Fold in chocolate and toasted pecans until evenly distributed throughout batter
  9. Pour into prepared baking pan and bake for 33-37 minutes or until a knife comes out clean
  10. Set aside to cool for an hour before cutting
Notes
Blondies will stay fresh for up to two days if wrapped or packaged in an air-tight container. They also freeze incredibly well, just wrap them tightly in tin foil.
These blondies are somewhat on the cakier side, be very careful not to overbake.

Sometimes you need a dessert that makes you feel good on all levels. When it’s dreary outside or you want to eat your feelings (ahem, me.) there are only certain desserts that will cut it. You need a dessert that just screams comfort. Something decadent, almost familiar, and just plain old delicious.

For me, that’s something that is made with peanut butter and chocolate. Throw in a layer of salted caramel and, well, it just doesn’t get much better than that. These cookie bars are the solution to your bad day. Peanut butter cookie dough (with peanut butter chips!) is layered with melted dark chocolate and rich salted caramel. Then, it’s sealed together with another layer of peanut butter cookie dough. Four perfect layers, one perfect bite-sized treat.

Ingredients
  • 130g (~1 cup) all-purpose flour
  • 12g (1 ½ teaspoons) baking soda
  • 113g (½ cup) unsalted butter, softened at room temperature
  • 258 g (1 cup) creamy peanut butter
  • 160g (~¾ cup) granulated sugar
  • 117g (~1/2 cup) packed light brown sugar
  • 100g (2 large) whole eggs, at room temperature
  • 5 milliliters (1 teaspoon) vanilla extract
  • 180g (~1 cup) peanut butter chips
  • 180g (~1 cup) semi-sweet chocolate chips
  • ⅔ cup salted caramel (preferably homemade)
Instructions
  1. Pre-heat oven to 350 degrees; line a 9x9 inch pan with parchment paper with edges coming up the sides and set aside
  2. In a medium bowl, whisk together flour and baking soda, set aside
  3. Using a mixer, in a large bowl beat peanut butter, butter and sugars on high until light and fluffy
  4. Beat in the eggs and vanilla until combined
  5. Reduce speed to low and stir in flour mixture just until combined
  6. Stir in peanut butter chips
  7. Wrap half of dough with seran wrap and place in refrigerator; press remaining dough into bottom of prepared baking pan and bake for 15 minutes
  8. Remove from oven and immediately sprinkle chocolate chips over top; let sit for ~6 minutes and then carefully spread chocolate chips so that the cookie dough layer is mostly covered
  9. Pour salted caramel over chocolate
  10. Take chilled dough out of fridge and drop tablespoon-sized chunks of dough over top
  11. Place baking pan back in oven for 25 minutes or until top is lightly browned
  12. Allow to cool completely before removing from pan and cutting
Notes
Store covered at room temperature for up to 3 days or freeze wrapped well in tin foil for up to two months

It’s so exciting when one of my friends publishes a cookbook! And in the world of blog friends, it seems to be happening more and more often. Lucky for me, my friend Miriam at Overtime Cook was generous enough to send me a copy of her newly published Something Sweet!

Miriam is a Jewish blogger from NYC that often has holiday-friendly desserts, but her cookbook is really just perfect for anyone with a sweet tooth. Seriously good oatmeal cookie wedges! Perfect for entertaining

The cookbook is full of gorgeous photos and a huge variety of desserts. In addition to these oatmeal cookie wedges, I really want to try Miriam’s fruity pebble cookies and peanut butter and banana chocolate chip bundt cake (duh). It was actually really hard to pick what recipe to try first but alas I settled on something that would be easy and fast to make.

These oatmeal cookie wedges are just that, easy! They are chewy, crunchy and full of flavor (lots of cinnamon plus bursts of chocolate!) but unlike baking cookies, you don’t have to spoon out each individual serving. Instead, you spread the batter into two cake pans and bake that way. So simple!

Oatmeal Cookie Wedges with Cinnamon & Chocolate Chips
 
Chewy oatmeal cookie bars filled with cinnamon and chocolate chips then drizzled with extra chocolate make a delicious and pretty party treat.

Ingredients
  • 237 milliliters (1 cup) oil (I used canola)
  • 212g (1 cup) granulated sugar
  • 234g (1 cup tightly packed) brown sugar
  • 165g (3 whole large) eggs
  • 5g (1 teaspoon) baking soda
  • 5 milliliters (1 teaspoon) vanilla extract
  • 2g (1 teaspoon) ground cinnamon
  • 3g (1/2 teaspoon) salt
  • 30 milliliters (2 tablespoons) milk (I used almond milk)
  • 262g (2 cups) all-purpose flour
  • 120g (1½ cups) old-fashioned oats
  • 90g (3/4 cup) cinnamon chips*
  • 90g (1/2 cup) semi-sweet chocolate chips* (original recipe calls for 1 cup total of add-ins)
  • optional: additional chocolate for drizzling
Instructions
  1. Pre-heat oven to 350 degrees; grease 2 9-inch round baking pans (I recommend lining with parchment paper for easy removal) and set aside
  2. In the large bowl of an electric mixer, beat oil and sugars on medium speed until combined
  3. Add eggs, baking soda, vanilla, cinnamon, salt and milk; beat until smooth
  4. With mixer speed reduced to low, carefully add flour and mix just until combined; add oatmeal and mix just until combined; stir in chips and do not overmix
  5. Divide cookie dough evenly between baking pans
  6. Bake for 30 minutes or until center has just set; do not overbake
  7. Allow to cool completely before removing from pan and slicing
  8. Optional: once cookies have cooled, melt chocolate and drizzle over cookies
  9. Store in an airtight container or ziplock bag; best enjoyed within 4 days of baking kept frozen up to two months

My sister’s engagement party is just a couple of weeks away and I’m so excited! It feels like a big kick off to about a year of celebrations. Of course for her shower and bachelorette party I’ll have to do a ton of planning, but for this event, I didn’t have a lot of responsibilities. In fact, my mom will have about 64 different desserts (or so it seems), and just asked me to make pumpkin blondies. Of course I was happy to oblige.

Lucky for me, these pumpkin blondies are not only delicious, but they are also so easy to make. Only one bowl (okay, really  a pot) is required so there is less cleanup, too! A recipe that allows me to stir by hand, put something in the oven and do a yoga workout during naptime is pretty ideal. I really need to start making one-bowl desserts more often.

  • 700g (~3 cups firmly packed) light brown sugar
  • 170g (3/4 cup) unsalted butter
  • 120g (½ cup) canned pumpkin (NOT pumpkin pie filling)
  • 110 (~2 large) whole eggs at room temperature
  • 10 milliliters (2 teaspoons) vanilla extract
  • 460g (~3 cups + 6 tablespoons) all-purpose flour
  • 5g (1 teaspoon) baking powder
  • 5g salt (1 teaspoon)
  • 3g (1½ teaspoons) ground cinnamon
  • 1g (½ teaspoon) ground nutmeg
  • 90g (3/4 cup) white chocolate chips
  • 90g (3/4 cup) cinnamon chips
Instructions
  1. Pre-heat oven to 350 degrees
  2. Line a 13×9 pan with parchment paper; set aside
  3. In a medium heavy duty saucepan, heat brown sugar, butter and pumpkin over medium heat and stir constantly until melted into a thick golden brown mixture; remove from heat
  4. Whisk in eggs and vanilla until combined
  5. Whisk in flour, salt, baking powder, cinnamon and nutmeg just until combined; stir in chips
  6. Pour batter into prepared pan; Bake for 36-40 minutes or until top begins to crack and a knife or toothpick comes out clean
  7. Allow to cool before removing from pan and slicing; wrap leftovers tightly in seran wrap or tin foil and enjoy within one week; can be frozen for up to one month

I guess I’m on a blondie bender. Is that a thing? After this recipe, I made a monster batch of my famous KISD blondies for a friend, last week I ran into the kitchen to make this new recipe and then I actually doubled it to make it again for a crowd but swapped cherries for the blueberries.

Oh brown butter. I made a brown butter blueberry cookie last summer and loved them so much I just knew this blondie would be good. And if my lack of self-control immediately after taking pictures of the blondies is any indication, the recipe is seriously good. It’s a good thing I brought a few to a friend because otherwise I would have eaten the entire batch that day.

Brown Butter Blueberry Chocolate Chunk Blondies
 
Chewy brown butter blondies bursting with fresh blueberries and dark chocolate chunks.

Ingredients
  • 112 grams / 4 ounces (1/2 cup / 1 stick) unsalted butter
  • 350 grams / 12⅜ ounces (~1½ cups packed) light brown sugar
  • 200 grams / 7 ounces (~1½ cups) all-purpose flour
  • 8 grams (1 teaspoon) salt
  • 3 grams (1/2 teaspoon) baking powder
  • 110 grams / 3⅞ ounces (2 large) whole eggs
  • 5 milliliters (1 teaspoon) vanilla extract
  • 112 grams / 4 ounces (~3/4 cup) dark chocolate chunks
  • 100 grams / 3½ ounces (~3/4 cup) fresh blueberries
Instructions
  1. Pre-heat oven to 350 degrees; line an 8×8 or 9×9 baking dish with parchment paper and set aside
  2. In a medium-sized saucepan over medium heat, brown the butter (stir butter constantly until it turns an amber/light brown color) and remove from heat
  3. Whisk in sugar until well combined and set aside
  4. In a medium bowl, whisk together flour, salt and baking powder; set aside
  5. In a large bowl, whisk together eggs and vanilla; whisk in butter and sugar mixture
  6. Whisk in flour mixture until almost combined and then fold in any remaining crumbs with a spatula
  7. Fold in chocolate and blueberries until evenly distributed throughout batter
  8. Pour into prepared baking pan
  9. Bake for 35-40 minutes or until a knife comes out clean
  10. Set aside to cool before cutting
Notes
Blondies will stay fresh for up to two days if wrapped or packaged in an air-tight container. They also freeze incredibly well, just wrap them tightly in tin foil.

Fudgy Mocha Chip Brownies with Espresso Sea Salt

Kind of like my beloved blondies, it’s been too long since I’ve made brownies. I know it’s summer and time for light fruit desserts or frozen ice cream treats, but all I wanted last week was a rich fudgy chocolaty brownie.

These brownies turned out to be perfect. They are thick and crazy fudgy. If anyone was looking for an end piece, I’m sorry but I pretty much ate all of the edges while cutting them for photos. I just couldn’t help myself and I don’t regret it one bit. And even though I don’t usually choose to put chips in my brownies, for some reason they seemed appropriate here. The dark chocolate mocha brownies are full of semi-sweet chips (you could use milk chocolate if you want to go sweeter) and they help the brownie to have layers of flavor. The mocha flavor is more an essence than overpowering and the espresso salt helps enhance it. If you don’t have espresso salt don’t expect too much coffee to come through.

  • 256g unsweetened chocolate, roughly chopped
  • 340g (1½ cups / 3 sticks) unsalted butter
  • 415g (~2 cups) granulated sugar
  • 400g (~1¾ cups, packed) light brown sugar
  • 275g (~5 large) whole eggs, at room temperature
  • 89 milliliters (6 tablespoon) strong brewed espresso (4 grams (1½ tablespoons) espresso + 89 milliliters (6 tablespoons) water))
  • 10 milliliters (2 teaspoons) vanilla extract
  • 290g (~2 cups + 2 tablespoons) all-purpose flour
  • 2g (1/2 teaspoon) salt
  • 270g (1½ cups) semi-sweet chocolate chips*
  • ½g (1 teaspoon) espresso salt (can substitute flaky sea salt**)
Instructions
  1. Pre-heat oven to 350 degrees;
  2. Line a 9x13 baking pan with parchment paper; set aside
  3. In a medium bowl, whisk together flour and salt; set aside
  4. Melt butter and chocolate in large pot over low to medium heat; remove when melted
  5. Stir in sugar until combined; stir in eggs, espresso and vanilla until smooth
  6. Whisk in flour mixture just until combined; do not overmix; fold in chocolate chips
  7. Pour batter into prepared baking dish and sprinkle with espresso salt
  8. Bake 40-45 minutes or until a knife comes out clean
  9. Set brownies aside to cool completely before slicing and serving
  10. Notes:
  11. *You can use milk chocolate chips instead if you want to enhance the sweetness of the brownies instead of the rich chocolate flavor
  12. **If you don’t have espresso salt don’t expect too much coffee to come through
  13. These brownies are great for making in advance. Just wrap them tightly in foil and store them in the freezer for up to one month. They might also taste good right out of the freezer. Not like I would know.

Until this, I hadn’t made Blondies since L was born.

Which is a shame. Because 1) blondies are really my thing and 2) they are pretty much the easiest way to bake for a crowd. After churning out hundreds and thousands of them for a couple of years, I guess I just needed a little blondies hiatus. Don’t worry, though, because blondies are back!

This recipe, in particular, comes with a punch of cinnamon and that chewy gooey blondie we have all grown to love. Oh yeah and there is oatmeal for extra health chew.

  • 227g (1 cup) unsalted butter
  • 700g (~3 cups packed) light brown sugar
  • 270g (~2 cups) all-purpose flour
  • 120g(1½ cups) Old fashioned oats
  • 10g (2 teaspoons) table salt
  • 5g (1 teaspoon) baking powder
  • 220g (4 large) whole eggs at room temperature
  • 15 milliliters / 1 tablespoon vanilla extract
  • 430g (2¼ cups) cinnamon chips
Instructions
  1. Pre-heat oven to 350 degrees; line a 9x13 baking dish with parchment paper and set aside
  2. In a medium-sized saucepan over medium heat, melt butter and brown sugar, stirring constantly; remove from heat and set aside
  3. In a medium bowl, whisk together flour, oatmeal, salt and baking powder; set aside
  4. In a large bowl, whisk together eggs and vanilla; whisk in butter and sugar mixture
  5. Whisk in flour mixture until almost combined and then fold in any remaining crumbs with a spatula
  6. Fold in cinnamon chips so that they are evenly distributed throughout batter
  7. Pour into prepared baking pan

Sometimes you just need a great brownie.  These peppermint mocha brownies are the perfect holiday brownie for this season’s festivities.  Thick, fudgy, rich and decadent… the peppermint mocha combination is a holiday favorite around here and it is hard to beat in brownie form.  I’m partial to a super fudgy brownie with a crackly top and that is exactly what you get with this treat!

  • 105g (~3/4 cup) peppermint crunch baking chips
Instructions
  1. Pre-heat oven to 350 degrees; Grease a 9×9 brownie pan or baking dish with cookie spray or butter OR line it with parchment paper; set aside
  2. In a small bowl, whisk together flour and salt; set aside
  3. Melt butter and chocolate in large sauce pan over low to medium heat; stir in sugar; stir in eggs, espresso and vanilla until smooth
  4. Whisk in flour mixture just until combined; do not overmix; fold in peppermint baking chips
  5. Pour batter into prepared baking dish and bake 33-36 minutes or until a knife comes out clean
  6. Set brownies aside to cool completely before slicing and serving
  7. Note:  These brownies are great for making in advance of the holidays.  Just wrap them tightly in foil and store them in the freezer for up to one month.

I love any excuse to use this shortbread recipe. It’s seriously buttery, slightly chewy and lightly crispy on the outside. Plus, the basic flavor lends itself to almost any type of filling. I’ve done Meyer Lemon Shorbread Bars, Blueberry Rhubarb Shortbread Bars and even adapted it into an Easy Lemon Shortbread Cookie. I kind of wish I didn’t love it so much because… well, so.much.butter., but I just can’t help myself.

For the holidays I thought it was time to break out the shortbread recipe and layer it with a seasonal fruit filling.   I’ve always loved apples and cranberries together and they work really well here. Both fruits are on the tart side so it isn’t a super sweet filling, but sometimes you actually want a dessert that doesn’t kill you with an overwhelming sensation of “hello, sugar.”

These bars were one of the last desserts I made pre-baby. After eating an entire row of them (whoops, that’s what 39 weeks plus will do to you), I froze the rest to save for the bris or baby visitors. They defrosted wonderfully and now I wish I had more!

Thanksgiving is just a couple of days away but this recipe is easy enough to add in as a last minute treat. Make them tomorrow or Wednesday and they will be perfect for serving on Thursday. Just make sure they are stored in the pan and tightly wrapped with foil or removed and tightly wrapped that way.

  • Dough
  • 530g (~4 cups) all-purpose flour, sifted
  • 454g (2 cups) unsalted butter, softened at room temperature
  • 240g (1 ½ cups) powdered sugar, sifted
  • 200g (~1 cup) granulated sugar, separated
  • 15 milliliters (1 tablespoon) vanilla extract
  • Filling
  • 360g (4 cups) fresh cranberries (frozen will likely work, filling cooking time may differ)
  • 100g (~½ cup) granulated sugar
  • 59 milliliters (2 fluid ounces) water
  • 8g (1 tablespoon) cornstarch
  • 5g (1 teaspoon) minced ginger
  • 2g (1 teaspoon) ground nutmeg
  • 340g (~3 cups / 2 medium) chopped apples (I prefer to use a crisp apple like Granny Smith or Honeycrisp)
Instructions
  1. Pre-heat oven to 325 degrees Fahrenheit
  2. Line a 13x9 baking pan with parchment paper so that some parchment paper hangs over sides and set aside
  3. Beat butter and sugars on high speed until light and fluffy; mix in vanilla until well-combined
  4. Stir in flour just until combined
  5. Press half of the dough into prepared baking pan and bake for about 25 minutes or until edges are golden brown; shape remaining dough into a disk and wrap tightly with seran wrap; chill in refrigerator
  6. While bottom layer is cooking, prepare filling
  7. Combine cranberries, granulated sugar, water, cornstarch, ginger and nutmeg in a heavy duty saucepan over medium heat; stir occasionally and let mixture cook until fruit has formed a thick jam-like consistency (cranberries will be very soft but some still whole), about 8 minutes
  8. Remove from heat and fold in chopped apples
  9. Pour fruit filling over crust; remove remainder of dough from refrigerator and use all of it by dropping large crumbs over fruit layer so that the layer is completely covered
  10. Place back into oven and bake for about 35 minutes or until edges are very lightly golden brown and top feels set / firm
  11. Set aside to cool before cutting into bars and serving

About a year ago, I absolutely fell in love with caramelized white chocolate.  Luscious, creamy, sweet, decadent; so many reasons to love it.  And thanks to that wonderful ingredient, these pumpkin cupcakes are one of my favorite recipes on the blog.  This time around, I’m taking one of my favorite things, a dense and fudgy blondie, and infusing it with those fantastic flavors.  The pumpkin blondies are enhanced with cinnamon and nutmeg but seriously, the caramelized white chocolate swirl is where it’s at.

Ingredients
  • Caramelized white chocolate*:
  • 280g good quality white chocolate
  • 5g (1 teaspoon) sea salt
  • Blondies:
  • 700g (~3 cups firmly packed)
  • light brown sugar
  • 170g (3/4 cup) unsalted butter
  • 120g (½ cup) canned pumpkin (NOT pumpkin pie filling)
  • 460g (~3 cups + 6 tablespoons) all-purpose flour
  • 5g (1 teaspoon) baking powder
  • 5g salt (1 teaspoon)
  • 4g (2 teaspoons) ground cinnamon
  • 1g (½ teaspoon) ground nutmeg
  • 220g (~4 large) whole eggs at room temperature
  • 10 milliliters (2 teaspoons) vanilla extract
Instructions
  1. Prepare the caramelized white chocolate; pre-heat oven to 250 degrees and place wrack in center of oven
  2. Spread white chocolate evenly over a clean rimmed baking sheet
  3. Put in oven for ten minutes; remove pan and use a rubber spatula to stir and spread white chocolate
  4. Place in oven again and repeat for additional twenty to thirty (stirring every five to ten minutes) minutes or until white chocolate begins to darken into a light brown
  5. I recommend reducing the increments to five minutes towards the end of caramelizing to prevent burning
  6. When caramelized white chocolate is done, stir in sea salt; place in a microwave safe bowl and cover with seran wrap until ready to use
  7. Prepare the blondies; pre-heat oven to 350 degrees
  8. Line a 13×9 pan with parchment paper; set aside
  9. In a medium heavy duty saucepan, heat brown sugar, butter and pumpkin over medium heat and stir constantly until melted into a thick golden brown mixture; set aside
  10. Whisk flour, salt, baking powder, cinnamon and nutmeg in a medium bowl; set aside
  11. In a separate large bowl, whisk eggs and vanilla until combined
  12. Whisk brown sugar butter mixture into bowl with eggs and vanilla
  13. Slowly whisk in flour mixture just until combined
  14. Pour batter into prepared pan; drizzle caramelized white chocolate over batter and use the back of a knife to cut through and create a white chocolate swirl
  15. Bake for 38-42 minutes or until top begins to crack and a knife or toothpick comes out clean
  16. Allow to cool before removing from pan and slicing; wrap leftovers tightly in seran wrap or tin foil and enjoy within one week; can be frozen for up to one month

*Caramelized white chocolate can be prepared up to one week ahead of time. If needed, microwave for about fifteen seconds prior to drizzling over blondie batter

Of all the salted caramel recipes I’ve made, these are by far the most dangerous.

The first time I made them, Matt joked about how ugly they were and then we proceeded to devour the pan…. warm with ice cream.

But a few days later, after they had disappeared, I decided that I simply must make them again because it just wouldn’t be fair to you if I didn’t share the recipe.  Let’s not talk about how much of both batches I inhaled.  Sweet and salty recipes just do it for me.

When I decided that January was going to be Salted Caramel Month, I wanted to make some spin on the ever famous Seven Layer Bars / Magic bars / Hello Dolly Bars.  These are quite different from that but conceptually the building blocks are the same.  Oreos instead of graham crackers, salted caramel instead of sweetened condensed milk, chocolate chips and pretzel pieces to replace the other toppings you may be used to (you know how I feel about coconut… just no).  Once you have your caramel, they are super easy to put together… and just as easy to eat!

Makes: 9-12 servings
Ingredients
  • 8 ounces (~2 cups / 20 cookies) finely crushed Oreos
  • 5 tablespoons unsalted butter, melted
  • 8½ ounces (~1¼) cups semi-sweet chocolate chips
  • 2 ounces (~1½ cups) salted pretzel pieces
  • 1 cup salted caramel
Instructions
  1. Pre-heat oven to 350 degrees; spray a 9x9 baking dish with cooking spray and set aside
  2. In a medium bowl, combine Oreo crumbs and melted butter; press mixture down evenly into prepared baking dish
  3. Pour about half of chocolate chips over crust
  4. Combine pretzel pieces and salted caramel, pour mixture over chocolate chip layer
  5. Pour remaining chocolate chips over top of bars
  6. Bake for about 25 minutes or until caramel is bubbling around edges and bars appear set
  7. Allow to cool before slicing
  8. Store leftover bars covered at room temperature up to four days

Last Monday we talked the how-tos on making salted caramel.  Just a few ingredients and no thermometer; the basics really aren’t that hard.  Now that we have that covered, I figured you could use some new recipes for the salted caramel that you won’t want to stop making (and eating).

These sweet and salty rice krispie treats are a fun and easy no-bake treat to make.  They might be the perfect pick-up treat for the Super Bowl in a few weeks.  The salted caramel krispie treat base is slightly gooey so they are best stored in the refrigerator.  The mocha ganache is rich and really makes them something special.  I liked them with and without the ganache topping, though.

Makes: 24 servings
Ingredients
Mocha Ganache
  • 10 ounces dark chocolate (I used 70%), coarsely chopped
  • 4 fluid ounces cup extra-strong brewed coffee (4 fluid ounces hot water + 1 heaping
  • teaspoon + of instant coffee)
  • 5 ounces (10 tablespoons) unsalted butter, softened at room temperature and sliced
Rice Krispie Treats
  • 1½ ounces (3 tablespoons) unsalted butter
  • 1 10-ounce bag mini marshmallows
  • 6 fluid ounces (3/4 cup) salted caramel sauce
  • 7 cups Rice Krispies cereal
  • Flaky sea salt for sprinkling
Instructions
Mocha Ganache
  1. Set up a double boiler; bring water to a simmer in medium pot over
  2. low-medium heat
  3. Place heat-proof bowl of chocolate over the pot
  4. Pour the coffee over chocolate
  5. Continuously stir until chocolate is melted and smooth
  6. Remove bowl from heat and whisk in the butter until creamy
  7. Set ganache aside to cool, stirring occasionally
Rice Krispie Treats
  1. Grease a 9x13 baking dish with butter or non-stick cooking spray; set aside
  2. In a large saucepan over low heat, melt butter
  3. Add marshmallows and stir until completely melted
  4. Remove from heat and stir in caramel sauce until well combined
  5. Stir in Rice Krispies
  6. Use a greased spatula to press mixture down into prepared baking dish
  7. Spread mocha ganache evenly over top of treats and sprinkle with flaky sea salt
  8. Chill in refrigerator for one hour or until set
  9. Cut and serve; leftovers can be stored in an airtight container in refrigerator up to one week

I’ve been having fun with pumpkin and cookie butter and white chocolate, but let’s be honest.  Chocolate and peanut butter will always have my heart.  And as I look back over the last few months of blogging, there is just not enough of it.  So in case you had any doubt, let me reassure you that I will always and forever love that combination.

The other thing I realized I haven’t done in a while is cheesecake.  In fact, I think the last cheesecake I made was this Pumpkin Cinnamon Roll Cheesecake.  I guess it was hard to come up with anything close to as good as that one.  But let me tell you, we are in major cheesecake territory here.

These Funky Monkey Cheesecake Bars are pretty much dessert rock stars.  The base is a fudgy brownie just thick enough to get your chocolate fix, but thin enough that it doesn’t overpower the bars.  The cheesecake filling  is a light and creamy, yet rich, combination of banana and peanut butter that will have you craving them well after your last bite.  I thought about adding another layer of caramel and peanuts or chocolate ganache but I actually think that would have been too much.  Sometimes you just shouldn’t mess with a really good thing.

Fudgy brownie topped with a creamy layer of peanut butter banana cheesecake!
Makes: 24 bars
Ingredients
Brownie Layer:
  • 2 ounces unsweetened chocolate, roughly chopped
  • 3 ounces (6 tablespoons / ¾ stick) unsalted butter at room temperature
  • 15 ounces  (~1 cup) granulated sugar
  • 2 large eggs OR 1 x-large egg plus 1 egg yolk, at room temperature
  • ½ teaspoon vanilla extract
  • 2¼ ounces (~1/2 cup) all-purpose flour
  • ¼ teaspoon salt
Cheesecake Layer:
  • 16 ounces cream cheese, softened at room temperature (light or regular)
  • 11¼  ounces (~3/4 cup) granulated sugar
  • 7 ounces (~3/4 cup) mashed banana (~2 medium bananas)
  • ½ cup creamy peanut butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 2 large eggs or 1 x-large egg plus 1 egg yolk, at room temperature
Instructions
  1. Pre-heat oven to 350 degrees
  2. Line a 13×9 pan with tin foil and coat with cooking spray; set aside
  3. Melt chocolate and butter in a medium saucepan over low to heat, stirring constantly; remove from heat
  4. Stir in sugar
  5. Whisk in eggs, one at a time, and then vanilla
  6. Whisk in flour and salt just until smooth (do not overmix)
  7. Spread brownie batter evenly in prepared baking pan and set aside to make cheesecake layer
  8. In the large bowl of an electric mixer with the whisk attachment, beat cream cheese on high speed for until it is light and creamy (about 6 minutes)
  9. Mix in sugar on medium-high speed for two minutes; scrape the sides of the bowl with a spatula
  10. Add the banana, peanut butter, vanilla and salt and mix on high speed until smooth and creamy (about 2 minutes), again scrape the sides of the bowl with a spatula
  11. Then, add your eggs, one at a time, mixing at medium speed until smooth and creamy (about 30 seconds)
  12. Bake for 40-50 minutes or until edges begin to come apart from sides of pan and cheesecake is set
  13. Refrigerate a couple of hours until cool and completely set
  14. Cut into squares and serve; store remaining cheesecake in the refrigerator up o three days

I don’t know if you remember my Apple Cinnamon Blondies from last year, but they were one of my favorite fall treats.  They were a part of Rachel’s An Apple a Day series.  Well, this year she is hosting again and of course I had to bring my A-game!

So far over there you can find Apple and Salted Caramel Ice Cream (drool), Caramelized Apple & Cheddar Cheese Soft Pretzels (What?!), and Apple Cider Donuts (three ways!) among other things.

I actually baked these Apple Pie Crumble Bars a few weeks ago, before apple season had really even started.  I wanted an apple dessert that I could bake ahead of time for Rosh Hashanah and that would travel well.

These bars were the perfect solution.  They were a little bit of a baking project, but with Matt in the kitchen helping (he made the filling), they really weren’t too complicated.  If he hadn’t helped I probably would have just skipped the peeling of the apples:-)

They were a huge hit for the holiday, though I imagine they would have been an even bigger hit warmed up and smothered with ice cream… next time, next time.

Peanut Butter Banana Cake Bars with Cream Cheese Icing

So these cake bars are another item I made when filming for eHow.  In case you aren’t familiar with what happens when you film any kind of cooking how-to, you actually have to make everything at least twice.  There has to be a final product to show in the short time you have to film, but you also have to make everything while filming.  I sent the film crew home with leftovers, but was still left with a crazy amount of desserts after the fact.

Well, when Matt was helping me clean up, I decided to taste a bite of the version of these cake bars I’d made a few days earlier.  They were still really, really good.  It was at that moment that I told Matt he had to take the plate away immediately.  I knew I was in trouble.

The cake bars are moist and flavorful.  I added the peanut butter chips because without them, the peanut butter flavor in the cake is very subtle.  You actually don’t need the cream cheese icing, but really, you always need cream cheese icing.

Makes: 15 servings
Ingredients
Cake Bars:
  • ¼ cup light sour cream or plain low fat greek yogurt
  • 1 teaspoon baking soda
  • 5⅝ ounces (~1½ cups) cake flour
  • ¼ teaspoon salt
  • 2 ounces (4 tablespoons / ½ stick) unsalted butter at room temperature
  • ⅓ cup creamy peanut butter
  • 9⅜ ounces (~1¼) cups granulated sugar
  • 2 x-large eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 cups mashed very ripe bananas (~2 large bananas)
  • ½ cup peanut butter chips
Icing:
  • 8 ounces light cream cheese
  • 1 ounce (2 tablespoons) unsalted butter at room temperature
  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
Instructions
Cake Bars:
  1. Pre-heat oven to 350 degrees; grease and flour a 9x13 baking dish and set aside
  2. In a small bowl, dissolve baking soda in sour cream and let stand
  3. In a medium bowl, whisk together flour and salt; set aside
  4. In the large bowl of an electric mixer,  beat sugar, butter and peanut butter on medium-high speed for several minutes until light and fluffy
  5. Add eggs and vanilla and mix on medium speed
  6. Stir in bananas and mix on low speed; add flour and mix again on low speed low speed just until combined
  7. Remove bowl from mixer and fold in sour cream; fold in peanut butter chips and do not overmix
  8. Pour batter into prepared pan; bake 27-32 minutes or until a knife comes out clean from the center; set aside and allow to cool
Icing:
  1. Beat cream cheese with an electric mixer for several minutes or until light and creamy. Add butter and beat until well combined
  2. Add powdered sugar and mix on low speed; when sugar is incorporated, add vanilla and beat icing on high speed until mixture is light and fluffy; spread over cooled cake
  3. Cover cake and store at room temperature up to three days

That’s how much time there is until Thanksgiving.  Don’t get me wrong, I’m so excited for the holiday, but boy did things get crazy really fast!  It seems like just yesterday I was in the summer lull and just like that I’m organizing and delegating (SO thankful for family members who like to help!) for Thanksgiving dinner all the while coordinating hundreds of corporate orders to go out over the next 30 or so days.

My current mantra: do anything and everything possible ahead of time. If I had the space, I’d have all of my UPS boxes made and piled for the mass exodus that will be taking place in the form of Fudgy Caramel Pecan Brownies.  I’ve even started chopping the gazillion pounds of chocolate that will be transformed into Peppermint Mocha Cookies, Peanut Butter Cup Stuffed Triple Chocolate Cookies and so on. I actually thought I was so smart to pull out the food processor to help but when it started to smell like fire I decided that chopping would be my arm workout for the day.  If there is one added benefit to being super busy that I didn’t expect, it would be the fact that I don’t actually have to workout because this job can be extremely physically demanding.

Anyway, back to my main point, getting ahead.  I have a gazillion amazing desserts planned for our Thanksgiving dinner (between my mom and I there might be more desserts than people), but I’m definitely trying to get some done in advance and sneak them into my day when I have a few free moments.  That is where these No-Bake Rice Krispie Toffee Fudge Candy Bars come in!  They took almost no time to make (oh, except for that chopped chocolate that you know I love…), and once they are done you can stick them in the freezer until the day you want to eat them.  Not all holiday desserts have to be complicated!

No-Bake Rice Krispie Toffee Fudge Candy Bars

Makes: 24-48 servings depending on desired size (I cut them into small pieces to compliment the rest of the dessert spread!)
Ingredients
  • 6½ ounces milk chocolate, roughly chopped
  • 1½ ounces bittersweet chocolate, roughly chopped
  • 5 tablespoons light corn syrup
  • 7 tablespoons unsalted butter, sliced
  • 5½ cups Rice Krispies
  • ½ cup bittersweet chocolate chips
  • ¼ cup toffee bits
Instructions
  1. Line a 13x9 baking pan with tin foil and set aside
  2. Pour Rice Krispies into a large bowl and set aside
  3. In a medium saucepan, melt together chopped chocolates (not chips), corn syrup and butter, stirring constantly until combined
  4. Remove from heat and pour over Rice Krispies; use a spatula to combine
  5. Add chocolate chips and toffee bits and combine
  6. Spread mixture into lined pan and pack down using the back of the spatula
  7. Cover pan and place in refrigerator to chill for at least four hours
  8. Once chilled, remove foil from pan and slice into squares to serve
  9. Store tightly in a cool place up to two days or wrap and freeze until the day of

I always thought that summer was my favorite season, but this year I can’t wait for the temperature to go down a bit.  Maybe it was the ultra-hot weather this summer that was more conducive to air conditioning than afternoon walks.  I’m not quite sure, but whatever it is I’m ready for fall.

And in the spirit of fall, there are few better ways to get started than with apples.  I have always had a weakness for any dessert loaded with giant chunks of apples and flavored with spicy cinnamon, so these Apple Cinnamon Blondies are absolutely perfect.  They are chewy and delicious on their own, but even better warm with a scoop of ice cream, given that they seem like an apple pie/blondie hybrid.

For someone who isn’t a huge fan of citrus desserts (as you know, I just recently got over my aversion to lemon), I surprisingly fell head over heals for this recipe.  Maybe it is that the lime flavored cookie bars are flavored just enough or maybe it is the creamy cream cheese frosting slathered over top.  Oh, or could it be the tequila in the frosting?  Whatever the reason, these cookie bars are hard to resist.  Head over to Fox for the recipe!

This was one of those weeks where I should be thankful I made it to Friday alive.  400 cookies for a local event, lots of packages, business development when I could fit it in and excitement over all that my friend Rachel has done for me (see here and here).

And somehow, luckily, I was able to fit these beautiful bars into the mix!  Rhubarb is such a wonderful summer fruit for baking but this was actually my first time using it.  For some reason those stalks had intimidated me up until now.  But don’t be afraid, all you have to do is chop them up, cook them down and you are on your way to something delicious.

In this case, the rhubarb filling got a vibrant boost from some fresh blueberries I picked up the other day.  They aren’t quite in season but they looked so good I couldn’t resist.  Besides, the rhubarb filling is lovely, but the color and additional flavor punch from the blueberries is a welcome addition.  All baked into one of my favorite shortbread bar recipes these bars are very hard to resist.

I taste tested an entire edge of the pan and then quickly wrapped the rest of the bars and stuck them in the freezer for an upcoming party.  If I had not done that, I think I would have gotten myself into trouble.  Head over to Fox for the recipe!

I made these cheesecake bars a few weeks ago after going through my collection of recipes that I’d emailed to myself over time.  There was expired cream cheese in my kitchen that I wanted to bake with and was lacking for ideas.

Luckily I found this recipe on Noble Pig a while ago and was smart enough to save it.  I made just a couple of changes based on ingredients I had on hand and was very happy with the outcome.  The layer of moist mocha cake is topped with a creamy coffee flavored cheesecake.  You can even taste a hint of the liquor that is in there.  Plus, I added cinnamon chips which make almost anything more delicious.

Serves 24

Ingredients:
Cake Layer:
1-1/4 cups all-purpose flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa
2 Tablespoons instant espresso powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 cup buttermilk
4 tablespoons unsalted butter, melted
Cheesecake Layer:
2 8-ounce packages light cream cheese, softened
1/2 cup granulated sugar
2 eggs
1/4 cup coffee liqueur (I used Starbucks)
1/2 cup mini semi-sweet chocolate chips
1/2 cup cinnamon chips

Directions:
Preheat oven to 350 degrees
Line a 9 x 13 baking dish with parchment paper and spray the paper with non-stick cooking spray
Prepare cake layer; whisk together flour, sugar, cocoa, espresso powder, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl; set aside
Combine buttermilk and melted butter in a small bowl; stir into flour mixture just until combined
Spread cake layer evenly into prepared pan; note that the batter may be thick and you may need to press it down with the back of a spatula
Prepare cheesecake layer; beat cream cheese with an electric mixer on high speed until light and creamy; add sugar and mix on medium speed until combined
Add eggs and liqueur; beat for several minutes or until smooth and creamy
Stir in chocolate chips and cinnamon chips
Pour cheesecake layer over cake batter and bake in center of oven for 25-30 minutes or until cheesecake is set
Refrigerate a couple of hours until cool and completely set
Cut into squares and serve; store remaining cheesecake in the refrigerator.

By now you have probably seen a fair share of meyer lemon recipes.  It’s like meyer lemons are the new salted caramel lemon*.

Since I’m so picky when it comes to lemon desserts, I have to get really excited about an idea or recipe before trying it.  Well, it just so happens that a few months ago, I had an amazing lemon bar with a buttery crumb topping that I’ve wanted to replicate ever since.  It was moist and rich with the perfect balance of crumb topping to tangy lemon filling that just melted in your mouth.  Instead of playing with a regular crumb topping recipe, though, I thought I’d test out my favorite shortbread bar and swap out the filling for a meyer lemon layer instead.

The result- exactly as I had hoped.  If you like the flavor of meyer lemons and enjoy perfect buttery shortbread, you will love these.

Let’s be real, it is still a lemon.

Meyer Lemon Shortbread Bars

Meyer Lemon Shortbread Bars
Serves 12

Shortbread Ingredients:
2 cups all-purpose flour
1/2 pound (2 sticks) unsalted butter, softened
3/4 cups powdered sugar, sifted
1/2  cups granulated sugar
1/2 tablespoon vanilla extract
Filling Ingredients:
2 extra-large eggs at room temperature
3/4 cups granulated sugar
1/2 tablespoon grated meyer lemon zest (1 to 2 lemons)
1/3 cup freshly squeezed meyer lemon juice (~ 1 lemon)
1/3 cup all-purpose flour

Directions:
Pre-heat oven to 325
Grease a 9-inch square baking dish with non-stick cooking spray and set aside
Sift flour; set aside
Beat butter and sugars on high speed until light and fluffy; mix in vanilla until will combined
Stir in flour just until combined
Press half of the dough in to prepared dish and bake for about 15 minutes or until edges are golden brown; shape remaining dough into a disk and wrap tightly with seran wrap; chill in refrigerator
When bottom layer is done, set aside to cool and prepare filling
Whisk together eggs, sugar, lemon zest, lemon juice and flour; pour over crust
Bake crust and filling for 20-25 minutes or until filling is starting to set
Remove from oven and top with remaining dough but crumbling dough into pieces and distributing evenly over filling
Bake the bars for 20-25 minutes or until top of crumbs is golden brown
Store bars in refrigerator but are best brought to room temperature before serving

Yup, it pretty much does. But then again, so do fresh baked cookies, the combination of melted butter and chocolate, and homemade caramel.

Matt referred to our apartment as a fudgery recently, and although I don’t actually make fudge, the meaning behind his comment was true.  We live in an endless supply of  baked goods.  I’m convinced that whoever rents our apartment after us will wonder why their home smells like chocolate.  Maybe they should pay extra for that.

But I digress.  This weekend was full of a baking marathon unlike any I’ve had in a while.  I’m trying to get a little ahead of schedule on desserts for the blog, but now I have a dozen recipes that I want to share with you IMMEDIATELY.

Guess I now have something else to keep my mouth shut about.

But in the spectrum of those desserts, the one that was iced with a frosting that smelled like heaven seemed the most pressing to share.  These brown sugar-based blondies are dense and chewy, filled with one of my favorite candies for baking and topped with a frosting that might put you in a butter-loving coma.  You’re welcome.

Serves 12

Blondies:
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, softened at room temperature
3/4 cup packed light brown sugar
1 egg
1 teaspoon vanilla extract
3/4 cup milk chocolate toffee bits or finely chopped heath bars

Frosting:
1/2 cup (1 stick) unsalted butter,  browned and chilled for an hour*
1 cup powdered sugar
1/4 cup milk

To Make the Blondies:
Pre-heat oven to 350 degrees
Grease a 9-inch baking dish with non-stick cooking spray or butter and set aside
In a medium bowl, whisk together the flour, baking powder and salt; set aside
With an electric mixer, beat together the butter and sugar on high speed until light and fluffy
Beat in the egg and vanilla until well combined
Stir in the flour mixture just until combined
Stir in the candy pieces
Bread batter into prepared baking dish and bake for ~20 minutes or until a knife comes out clean from the center; do not over-bake
Set aside to cool and prepare frosting

To Make the Frosting:
When brown butter is chilled, beat it with an electric mixer on high speed until light and creamy
Slowly add the remaining ingredients alternating 1/3 of sugar, 1/2 of milk, 1/3 of sugar, remaining 1/2 of milk and remaining 1/3 of sugar
Turn up the speed and mix until the frosting is light and creamy
Spread over cooled blondies
Store blondies in refrigerator but bring to room temperature before serving

Notes:
*To brown the butter, heat it in a heavy saucepan over medium heat, stirring constantly; when butter turns to an amber/light brown color, remove from heat immediately.  You should be able to smell the deeper more caramel flavor of the butter

This dessert has been haunting me since it came out of the oven.  I took photos yesterday morning and it was all I could do not to devour the entire pan, sliver by sliver.  These cheesecake bars are not for me so unfortunately (or fortunately) I was forced to keep my mouth shut after a quality control taste.

A thin layer of brownie crust topped with creamy salted caramel and a silky cheesecake layer makes these bars impossible to resist.  The salted caramel layer also adds a depth of flavor that forces you to try another bite.  Need another dessert for Thanksgiving or really something delicious just because? Make these.

Salted Caramel & Brownie Cheesecake Bars

Brownie Layer:
2 ounces unsweetened chocolate
6 tablespoons unsalted butter
1 cup granulated sugar
2 eggs
1/2 teaspoon vanilla
1/2 cup all-purpose flour

Cheesecake Layer:
2 8-ounce blocks reduced fat cream cheese, softened at room temperature
1 1/2 cup granulated sugar
3 eggs
2 tablespoons all-purpose flour
1 teaspoon vanilla extract

Caramel Layer:
1 11-ounce bag of caramel bits
1/3 cup milk (any type)
1 teaspoon sea salt

Pre-heat oven to 350 degrees

Line a 13×9 pan with parchment paper; set aside

Melt chocolate and butter in a medium saucepan over low to heat, stirring constantly

Remove from heat

Stir in sugar

Stir in eggs and vanilla

Whisk in flour until smooth

Pour batter into prepared pan and bake for ~8 minutes or until center is glossy and edges start to look cooked

While brownie layer is cooling, prepare cheesecake filling

Reduce oven temperature to 325 degrees

Beat cream cheese with an electric mixer using the whisk attachment; beat on high until cream cheese is smooth and creamy

Beat in sugar

Mix in eggs

Stir in flour

Stir in vanilla and set aside

Place caramel bits and milk in a microwaveable bowl

Heat in microwave 30 seconds at a time, stirring between each, until completely melted and smooth

Pour caramel over brownie layer; sprinkle salt over that

Pour cheesecake batter over brownie and caramel

Bake for 35-40 minutes or until edges begin to come apart from sides of pan and cheesecake is set

Hi Keep it Sweet readers! I’m Rachel! I blog about all things food over at The Avid Appetite and all things life over at The Peach & The Pit. I am so excited to be guest posting here today. Lauren was one of my first real ‘blog’ friends and I am so happy that we found each other! She keeps my stomach rumbling with her amazing and super creative dessert recipes and I always look forward to her posts each week.

When I first thought about guesting over here on Keep it Sweet, I knew that I would have to come up with a delicious and decadent dessert recipe that would be worthy of standing next to Lauren’s delectable creations. And since I know she loves chocolate, that obviously had to be a key ingredient.

I have long had a love affair with appley things. For as long as I can remember, anything with apples was instantly my favorite dessert. Pies, tarts, coffee cakes, crumbles, you name it. When I started thinking about a recipe to share with you, I knew that combining my love of apple, cinnamon and caramel with Lauren’s love of chocolate would surely be a winner. Right?

Right?!

Well let me tell you about them and perhaps you’ll agree. Ooey gooey apple and caramel scattered atop a layer of semisweet chocolate, then sandwiched between crumbly oat goodness and topped with even more sticky caramel sauce is what these bars are all about. And if that’s wrong, I don’t want to be right. You won’t either; trust me on this one.

*bar base adapted from Betty Crocker Cooky Book’s Date Bars
3/4 C shortening, such as Crisco
1 C brown sugar
1 3/4 C all-purpose flour
1/2 tsp baking soda
1 tsp salt
1 1/2 C old fashioned oats
1 C semisweet chocolate chips
2 tart baking apples (such as Granny Smith), peeled, cored and diced
1 Tbsp granulated sugar
½ tsp ground cinnamon
1 ½ C caramel topping or sauce (such as 1 jar Smucker’s caramel flavored ice cream topping)
Preheat oven to 400 degrees. Line a 13×9″ pan with foil (one strip lengthwise, one strip widthwise), letting the foil hang over the edges. Grease well. Mix the shortening and sugar together in a bowl. I used my stand mixer, but a hand mixer (or even by hand) would work too.
In a mixing bowl, mix together the flour, baking soda and salt. Beat into the shortening & sugar mixture. Stir in the oats. Press 2/3 of the mixture into the greased, foil-lined pan.
Next, peel, core and chop the apples. Mix with the sugar and cinnamon and set aside.
Then, melt the chocolate (I do it via microwave) and carefully spread over the oat dough. It won’t be perfect, and that’s ok! Pour the apples evenly over the chocolate. Drizzle 1 cup of the caramel sauce all over the apples. Gooeyness!
Sprinkle the remaining oat mixture over top and drizzle the remaining caramel sauce over that.
Bake for 25-30 minutes. Let cool and set. To cut up, remove from pan by using the foil as handles. Peel away and cut into bars. Gooey, decadent, stretchy pants-inducing bars.[/print_this]

So when I saw her Chocolate Toffee Bars I immediately added them to my must make list.  I put a bit more emphasis on the peanut butter in the recipe and was thrilled with how they came out.

The only problem was, they are too good.  I’m not kidding.  I couldn’t keep myself from eating these as soon as they came out of the oven.  The only thing that saved me was knowing I had to donate some to a LCC Foundation raffle.

Peanut Butter & Chocolate Toffee Bars

Thick and Chewy Peanut Butter, Chocolate and Toffee Bars
Makes 24 bars

Peanut Butter Toffee Crust
Ingredients:
5 tablespoons unsalted butter, melted
1 1/2 cup Nutter Butter crumbs (~10 cookies)
1/2 cup toffee bits

Directions:
Pre-heat oven to 350 degrees and grease a 13X9 pan with butter or cooking spray; set aside
Combine melted butter, cookie crumbs and toffee bits
Press crust mixture into pan; crust will be very thin
Bake for about 10 minutes or until crust is a nice medium shade of gold

Chocolate Peanut Butter Filling

Ingredients:
1 1/2 cup peanut butter chips
1 cup semi-sweet chocolate chips
1 14-ounce can sweetened condensed milk (any fat content will do)
1 tablespoon unsalted butter

Directions:
While crust is baking, combine chocolate and peanut butter chips, sweetened condensed milk and butter in a medium saucepan over low heat
Stir ingredients together until melted and remove from heat
Pour evenly over prepared crust; set aside

Cookie Topping

Ingredients:
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 sticks (1 cup) unsalted butter, softened at room temperature
1/2 cup granulated sugar
1 cup light brown sugar, packed
2 large eggs
1 teaspoon vanilla
1 cup toffee bits
3/4 cup semi-sweet chocolate chips

Directions:
Whisk together flour, baking soda and salt; set aside
With an electric mixer, beat together butter and sugars at high speed
Mix in eggs and vanilla until well combined
Reduce speed to low and stir in flour mixture
Stir in toffee bits and chocolate chips
Once combined, drop dough by large spoonfuls over the filling
Bake for 25-30 minutes or until topping is lightly browned
Allow to cool before serving

My busy schedule these days has been keeping me from as much time in the kitchen as I would like.  There are so many recipes that I’ve been dying to try, but they keep getting put on the back-burner.  Luckily, I found a really easy but tasty dessert to make this past weekend.

These bars actually are derived from the back of my gluten-free oatmeal package.  They are on the bag as cookies, but baking them in bar form just seemed so much easier at the time.  I’m glad I did because they baked up to be the perfect chewy, gooey bars!  You would never know that there is no butter or flour in these babies!

Gooey Peanut Butter Oatmeal Chocolate Chunk Bars (Gluten-Free)

Yield: Serves 24

Ingredients

  • 3 cups gluten-free rolled oats (oatmeal is naturally gluten-free but may be processed with other gluten foods; check the package if serving anyone who has a gluten allergy)
  • 1 teaspoon baking soda
  • 1 cup smooth natural salted peanut butter
  • 1/4 cup unsweetened applesauce
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 1/2 cup egg whites
  • 1 teaspoon vanilla
  • 1 cup dark chocolate chunks

Cooking Directions

  1. Pre-heat oven to 350 degrees and spray a 9×13 pan with cooking spray
  2. Whisk together oatmeal and baking soda; set aside
  3. Beat peanut butter on high speed until light and creamy
  4. Beat in applesauce
  5. Add sugars and beat until light and fluffy
  6. Add egg whites and vanilla; beat on medium speed until combined
  7. Stir in oatmeal mixture
  8. Stir in chocolate
  9. Pour batter into prepared pan
  10. Bake for 25-30 minutes or until knife comes out clean
  11. Allow to cool before slicing
  12. Store at room temperature in a covered container up to 2 days or freeze up to 1 month

It’s Margarita Time

Margarita Cheesecake Bars with a Pretzel and Cookie Crust

This is one of those recipes that I came up with accidentally.  Sometimes I have bakers block and can’t think of anything new or interesting to make.  I was inspired by Victoria’s cookies and wanted to do something with lime and salt.  Then I remembered the cream cheese in my refrigerator and eventually these Margarita Cheesecake Bars were born.Margarita Cheesecake Bars with a Pretzel and Cookie Crust

Thanks to a combination of Vienna fingers and pretzels, they have a wonderfully balanced sweet and salty crust.  Topped with a layer of light but creamy lime cheesecake they become a perfect summer treat.  The lime and the salt reminiscent of a margarita and who doesn’t like that?

Ok, I’ll be honest- I’m not the biggest margarita fan.  I prefer to save my sugar calories for more important things like dessert.  Cheesecake and a Vodka Soda with lime juice for me, please.

Margarita Cheesecake Bars

Yield: Serves 16

Ingredients

  • 3/4 cup Vienna Finger (or vanilla sandwich cookie of choice) crumbs (about 6 cookies)
  • 3/4 cup salted pretzel crumbs (about 1 1/2 cups of small pretzels)
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 4 tablespoons (1/2 stick) unsalted butter, melted
  • 2 8-ounce blocks light cream cheese, softened
  • 3/4 cup sweetened condensed milk (I used fat free)
  • 2 eggs
  • 1/4 cup fresh lime juice (~2 limes)
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour

Cooking Directions

  1. Pre-heat oven to 350 degrees
  2. Grease a 9×9 baking pan and set aside
  3. In a medium bowl, combine cookies, pretzel crumbs, butter, sugar and salt
  4. Press crust mixture into prepared baking pan and bake for ~7 minutes or until lightly browned; set aside
  5. Using an electric mixer and the whisk attachment, beat cream cheese on high for a few minutes until creamy
  6. Add sweetened condensed milk and beat into cream cheese
  7. Beat in eggs, lime juice and vanilla
  8. Stir in flour
  9. Pour cheesecake mixture over crust and bake for 25 minutes or until firm and edges are separating from pan

I love peanut butter.  I love peanut butter with chocolate, I love peanut butter and jelly, I love peanut butter by the spoonful.  You already know this, but I just had to get it off my chest.

I expressed my love of blueberries and peanut butter before, and then I combined chocolate and blueberries.  And of course there were all the times I put together peanut butter and chocolate.  It was only a matter of time before the three collided.

Over the weekend I put three of my favorite flavors into one and made Blueberry Chocolate Chunk Peanut Butter Bars.  These aren’t the prettiest bars I’ve ever made, but oh boy are they delicious!  This was one of those times where I could have eaten the whole batch out of the oven!  They smelled amazing and the melted dark chocolate, juicy blueberries and flavorful peanut butter cookie base had an amazing balance.  It was a good thing I had a birthday barbecue to bring these to because otherwise my waistline would have been in big trouble!

Blueberry Chocolate Chunk Peanut Butter Bars

Note: The dough may be very crumbly. Press it down tightly into pan before baking to prevent the bars from being too crumbly once they are done.

Yield: Makes 24 bars

Ingredients

  • 1 cup + 2 tablespoons all-purpose flour
  • 2 1/4 teaspoons baking soda
  • 1 1/2 cups salted natural creamy peanut butter
  • 3/4 cup granulated sugar
  • 3/4 cup packed light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chunks
  • 1 1/2 cup blueberries

Cooking Directions

  1. Pre-heat the oven to 350 degrees
  2. In a medium bowl, whisk together flour and baking soda, set aside
  3. Using a mixer, in a large bowl beat peanut butter and sugars on high until light and fluffy
  4. Beat in the eggs and vanilla until combined
  5. Reduce speed to low and stir in flour mixture just until combined
  6. Stir in blueberries and chocolate chunks
  7. Press dough into a 13×9 baking pan lined with ungreased parchment paper
  8. Bake for 20 or until firm and a knife comes out clean

Can you believe it is May now?!  Memorial Day is only a few weeks away and summer is so close I can taste it!  This winter was pretty brutal in the Northeast and I am just now feeling like myself again.  The cold and the snow tends to put me in complete hermit mode.  Good for my baking blog, not so good for my real life.  Now I am ready for longer days, dates with friends, flip-flops and spending all of my money on frozen yogurt.  I’m also ready to plan my summer calendar and travel schedule.

Living in New York, I’ve found that we spend most of our summer weekends out of the city and as a result away from my kitchen.  This is pretty normal for Manhattanites.  Come to the city for the 4th of July and you should be able to get almost any dinner reservation you could imagine.  You also will sweat your way from place to place and especially waiting for a subway.  While I’m a homebody at heart, I have a definite preference for the beach or a pool during those days.

All of this means that most of my cooking and baking from May through the end of August takes place at night after work.  On a good day, I’ll be home by 7.  Given that I am 8626 years old and get into bed before 10pm, that means only three real hours of kitchen time.  I’ve gotten pretty good at coming up with quick dinners for these nights (when in doubt, make eggs), but baking in that time span as well can be a bit more challenging.  Baking is like therapy for me, not something I like to rush.  This means planning ahead, making desserts that aren’t overly complicated, and making desserts that don’t require an insane amount of oven time (air conditioning isn’t NYC’s best quality).  Think cookies, brownies, and ice cream desserts.

These Sweet and Salty White Chocolate Blondies are the perfect dessert for baking under a time constraint. They are pretty easy to make and take only 30 minutes to bake.  Plus, they are easy to wrap up and bring to a summer barbeque or gathering.  The texture has a wonderful chew to it and there is a lovely sweetness and caramel-like flavor from the white chocolate melted in the batter.  Some chocolate chips and pretzel pieces add crunch and my favorite salty sweet taste combo.

Start by melting butter and some of your white chocolate chips over low-medium heat

Stir occasionally; Don’t worry if your butter and chocolate separate, you can fold them together to combine

Once completely melted, set white chocolate mixture aside

Whisk together flour, baking powder and salt; set aside

In a large bowl, beat together sugars, eggs and vanilla until well-combined

  • 6 ounces white chocolate (any form, to melt)
  • 1/2 cup (1 stick) unsalted butter
  • 1 1/4 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup salted pretzel pieces
  • 1/2 cup milk chocolate chips
  • 1/4 cup white chocolate chips (for mix-in)

Cooking Directions

  1. Pre-heat oven to 350 degrees
  2. Line a 9×13 pan with wax paper and grease; set aside
  3. Melting butter and white chocolate over low-medium heat
  4. Stir occasionally; don’t worry if your butter and chocolate separate, you can fold them together to combine
  5. Once completely melted, set white chocolate mixture aside
  6. Whisk together flour, baking powder and salt; set aside

Lemon Blackberry Cheesecake Bars

In case you didn’t know, Julie at Willow Bird Baking is hosting a cheesecake challenge.  This girl has made some unbelievable looking cheesecakes and has a hilarious video with some delicious results.  I don’t know how she came up with so many wonderful flavor combinations but I’m glad she did!

You all know I have mixed feelings about lemon, so I wouldn’t have normally chosen the Lemon Blueberry Cheesecake Squares with Shortbread Crust However, the husband requested it so why not?  Besides, it wouldn’t be much of a challenge if I used the same flavors I usually do.

I forgot to pick up blueberries yesterday, so I went with blackberries instead.  The texture adds a nice component to the creamy cheesecake and they are just a little tart when you bite into them.  It actually works very well with the lemon.

And as for the lemon cheesecake?  I’ll give it to Julie, it is perfectly balanced.  I wasn’t overwhelmed by the flavor but it was extremely refreshing.  This would actually be a perfect dessert for a summer barbeque.

I used Julie’s recipe with the just a few changes:   white whole wheat flour in the crust, light cream cheese rather than regular, I added a teaspoon of vanilla to the batter and obviously blackberries instead of blueberries.

Start by making the crust; place flour and confectioners’ sugar in a food processor

Black and White and Loving Vanilla Bean

My sister’s 23rd birthday is coming up, and she is having a cocktail party* to celebrate.  The color scheme for the evening is black and white so I am helping out by baking desserts with those colors.  The first thing that came to my mind was black and white cheesecake bars.  That is slightly ironic given that Jessica doesn’t like cheesecake.  However, she doesn’t eat gluten either, so most of the desserts are not even for her.

Vanilla Bean and Chocolate Cheesecake Bars

I started by adapting this recipe for Pumpkin Chocolate Cheesecake Bars.  I swapped gingersnap crust with Oreo and got rid of the pumpkin.  But then I thought, how could make it even more special?  Instead of using just a plain cheesecake layer for the “white”, I made it vanilla bean.  Wow, this took the dessert to a whole new level.  I’d never baked with vanilla bean before and I think I might be hooked!  When you take a bite of the Chocolate and Vanilla Bean Cheesecake Bars, you get a sweet creamy layer and then that chocolate crunch from the crust.  The rich chocolate cheesecake layer comes through next, but then when you think you are done, the vanilla bean kicks in.  Layers of flavors are what make desserts stand out.  Make these.

To make the crust, grind up about 17 Oreos in a food processororeos in food processor

To make your cheesecake filling, beat cream cheese in mixer until light, creamy and lumps are gone (about 5 minutes)

Add your vanilla extract and salt and beat until your mixture is thick and creamy

Now, separate 1/2 of the cheesecake filling and set aside in a separate bowl

Melt chocolate chips and butter in a small saucepan over low heat or in the microwave; mixture will get very thick

Bake for 33-38 minutes or until edges begin to separate from foil and middle bounces slightly when touched

  • 2 tablespoons all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 vanilla bean (if leaving this out, replace with 1 tablespoon of additional vanilla extract)
  • 1 pinch of salt
  • 6 ounces semi-sweet chocolate chips

 

Cooking Directions

 

  1. Pre-heat oven to 325 degrees
  2. Line a 13×9 pan with tin foil and spray with cooking spray, set aside
  3. To make the crust, grind up about 17 Oreos in a food processor until fine; set cookie crumbs aside
  4. Melt 4 tablespoons of butter in the microwave and pour over cookie crumbs
  5. Add 2 tablespoons of granulated sugar and mix until well combined

Pumpkin Chocolate Cheesecake Bars

I may have served eight (yes, 8) varieties of pick-up desserts at my Thanksgiving with Friends, but these Pumpkin Chocolate Cheesecake Bars won me over as the number one pick for the evening.  That wasn’t easy because all of the desserts were decadent and delicious.  Maybe it was the combination of two of my favorite flavors, pumpkin and chocolate.  Maybe it was the surprising spice from the gingersnap cookie crust.  Maybe it was the lovely creamy texture with a perfect thin crispy crust in one bite.  Maybe it was the balance of richness and lightness that allows you to eat not just one, but four two.  Frankly, it doesn’t matter.  These are delicious and if you like the sound of any of that, you must make them.

We have these every year because they are SO good!

I saw Sharon’s recipe on the Curvy Carrot about a month ago and new right away I had to make it myself.  There were a couple of modifications, but the recipe is largely based on hers.  Just like she said, they were easy but a little time consuming.  Definitely worth every minute, though!

Crispy gingersnap crust, rich chocolate cheesecake layer and a light pumpkin cheesecake filling, i.e. a delicious dessert just in time for Thanksgiving.

Crust:
  • 275g (2 cups + 2 tablespoons) gingersnap cookie crumbs (about 35 cookies)
  • 85g (6 tablespoon) unsalted butter
Filling:
  • 454g (2 8-ounce packages) light cream cheese softened at room temperature
  • 371g (1¾ cup) granulated sugar
  • 165g (3 large) whole eggs
  • 16g (2 tablespoons) all-purpose flour
  • 240g (1 cup) pumpkin puree (not pumpkin pie filling)
  • 5 milliliters (1 teaspoon) vanilla
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ½ g (1/8 teaspoon) salt
  • 170g (6 ounces) semi-sweet chocolate, roughly chopped
  • 28g (2 tablespoons) unsalted butter
Instructions
  1. Pre-heat oven to 325 degrees
  2. Line a 13×9 pan with tin foil and spray with cooking spray, set aside
Prepare crust:
  1. Stir together gingersnap crumbs and melted butter
  2. Spread evenly into prepared pan using fingers to push down crust mixture and set aside
Prepare filling:
  1. In the large bowl of an electric mixer with whisk attachment, whip cream cheese on medium high speed for several minutes until creamy and lumps are gone
  2. Add granulated sugar and combine on medium-high speed well until light and creamy
  3. Beat in eggs, one at a time, mixing on medium speed in-between; mix in flour on low speed
  4. Add pumpkin, vanilla, cinnamon, ginger, nutmeg, and salt and mix on medium speed until mixture is thick and creamy
  5. Now, separate 380 grams (1¾ cups) of the pumpkin cheesecake filling and set aside in a large bowl
  6. Melt chocolate chips and butter in a small saucepan over low heat; mixture will get very thick
  7. Add chocolate to the pumpkin filling that you set aside and stir thoroughly
  8. Pour chocolate batter over crust and bake for 15 minutes
  9. Remove from oven and pour remaining pumpkin cheesecake filling on top
  10. Bake for 35-45 minutes or until edges begin to separate from foil and middle bounces slightly when touched
  11. Refrigerate for at least 4 hours or overnight
  12. Remove cheesecake from pan and cut into small bars

Showing Almond Butter Some Love

Bars are such an easy thing to make and serve. Rather than dropping dozens of cookies onto several baking sheets and switching pans in and out of the oven, you can spread the batter into one large pan and bake it in one batch. Once they are done and cool, you just slice and serve. Pieces can be as big or small as you want.

Since I have a ton of baking to do over the next month or so, I have found a few recipes that are less time consuming to mix in with the more complicated desserts. Besides, as it turns out, sometimes the easiest desserts are the most popular! I am really excited about the recipes I will be making over the next several weeks, and I think you will enjoy them as well. This recipe is a good start to the holiday baking season but can be used year round. I was excited when I found it because it uses almond butter as a main ingredient. I haven’t baked with almond butter before, I am more of a die-hard peanut butter lover, but I do enjoy it for variety. This Food &Wine cookbook actually has a ton of great recipes and this recipe for Chocolate Chunk Almond Butter Bars is one of the more simple that I found.

For a change, I didn’t make any tweaks, and I don’t think it needs any. These crispy and chewy bars would be terrific with a glass of milk, but I’ll be serving them among a selection of many other desserts.

Oreo Cream Cheese Brownies!

When I saw this recipe on Annie’s Blog, I knew I had to make it for Matt’s birthday.  It combines Oreos and cream cheese, 2 of his favorite dessert elements.  Plus, these are the perfect pick-up dessert for a day of guys watching football and eating chips and wings.  Oreo Cream Cheese Brownies it was.

I made very few changes to the original recipe, and they turned out really delicious.  There was only 1 brownie left on the plate by the time the guys left our apartment.  Next time I will definitely double the recipe as suggested.

I chopped my Oreos in a food processor leaving big chunks for a nice surprise when you bite into a brownie.  I used extra Oreos because, well, why not?

  • 227g (1 cup) unsalted butter, softened at room temperature
  • 318g (1½ cups) granulated sugar
  • 197g (1½ cups all-purpose flour)
  • 105g (1¼ cups) unsweetened dark cocoa powder
  • 3g ½ teaspoon salt
  • 220g (4 large) whole eggs at room temperature
  • 118 milliliters (1/2 cup) whole milk
  • 375g (5 cups) chopped Oreos (~32 cookies)
  • 454g (2 8-ounce packages) light or regular cream cheese at room temperature
  • 160g (1 cup) powdered sugar
  • 15 milliliters (1 tablespoon) pure vanilla extract
Instructions
  1. Preheat oven to 350 degrees. Line a 9x13 pan with foil and spray with non-stick cooking spray.
  2. In a medium-sized saucepan, melt butter and sugar over medium level heat, whisking frequently until boiling. Allow to boil for 1 minute and remove from heat. Set aside.
  3. Combine remaining dry ingredients in large mixing bowl.
  4. Once butter and sugar mixture has cooled slightly, whisk in eggs and milk.
  5. Add wet ingredients to dry and combine.
  6. Stir in Oreo pieces.
  7. Spread brownie batter into pan.
  8. Using an electric mixer, use the whisk attachment to beat the cream cheese until fluffy.
  9. Beat in the confectioners’ sugar and vanilla until well combined.
  10. Drop cream cheese mixture onto brownie batter.
  11. With a knife, draw lines back and forth through mixture to swirl.
  12. Bake for 30-35 minutes, or until firm. Do not overbake.
  13. Allow to cool and chill brownies in refrigerator for one hour before slicing
  14. Store in refrigerator up to three days or freezer up to one month

I used light cream cheese which worked out nicely. However, regular cream cheese would make for a richer brownie.
Although you can stick a knife in to assess if the brownies are done, you will still see some batter when you pull it out. Since the cream cheese mixture stays moist, it is a little more tricky than usual. I suggest moving the pan from side to side to see if they are firm.
